In a food processor, blend the peanut butter, coconut milk, spring onions, garlic, ginger, chilies, curry powder, cumin, turmeric, salt, soy sauce, and lime juice into a smooth paste; this should make about 2 cups. Reserve half of the marinade and pour the other half over the chicken thighs. Mix and chill for 2 hours or overnight.

Preheat the oven to 425˚F (220˚C). Line a baking tray with parchment paper.

Skewer the marinated chicken onto bamboo skewers, then arrange the skewers so their ends rest on the edges of the baking tray, allowing the chicken to be suspended. Bake the chicken skewers for 15-20 minutes, until slightly dark brown on the edges and cooked through.

With no oil in the pan, toast the chopped peanuts on low to medium heat, stirring constantly until the peanuts turn golden brown, 2-3 minutes. Add in the reserved marinade and the coconut milk. Stir and cook until thick and very aromatic, 5-10 minutes.

Serve the chicken skewers with the sauce on the side.

Keto Chicken Satay with Peanut Dipping Sauce

lb chicken thighs (boneless skinless)

Salt and Pepper

fish sauce

garlic powder

oil (avocado, olive, coconut)

peanut butter (unsweetened)

water

garlic

cayenne pepper

lemon juice (fresh)

cilantro (finely chopped)

Slice the chicken thighs into long strips about an inch thick so they resemble tenders, season with salt and pepper.

Place chicken in a large bowl or zip top bag.

Add the marinade ingredients to the bowl or bag, except the oil.

Stir the chicken to coat it evenly, then set aside to let marinate.

Prepare the peanut sauce in a bowl, combine and mix all the sauce ingredients until smooth.

Thread the chicken onto wood or metal skewers.

Heat up a grill pan or cast iron skillet over medium high heat and add the oil, and spread it around the pan.

When the oil is hot, add the chicken skewers and cook for 4-5 minutes on each side, until cooked through.

Place the cooked skewers on a platter with peanut sauce, garnish with cilantro, and enjoy!

Better than takeout, easy to make tender chicken satay skewers with coconut marinade and homemade peanut dipping sauce is savoury, sweet, tangy, and nutty.

Chicken Satay Skewers with Peanut Sauce

lbs. chicken breasts, boneless and skinless cut into 1-inch cubes

yellow curry powder

brown sugar

garlic, minced

ginger, freshly grated

vegetable oil

hoisin sauce (or dark soy sauce)

red curry paste (optional)

lime juice

honey (or white sugar)

peanuts, chopped

lime wedges

peanuts,

teaspoon fresh parsley, chopped

Marinate the chicken

Place cubed chicken into a zip-loc bag. Add in all the marinade ingredients (coconut milk, soy sauce, fish sauce, yellow curry powder, brown sugar, minced garlic, ginger and vegetable oil). Stir well to combine. Press the air out of the bag and seal tightly. Press the marinade around the cubed chicken to coat. Place in the refrigerator and marinate for at least 1 hour or overnight.

Make the peanut sauce

Combine all the ingredients (hoisin sauce, peanut butter, red curry paste (optional), lime juice, honey and water). Stir well with a spoon to mix until the mixture is smooth and uniform. Sprinkle chopped roasted peanuts on top.

Grill the chicken satay skewers

Thread the chicken onto skewers (about 4 to 5 pieces per skewer). Gently dab with paper towel to remove excess marinade off the chicken. Heat a grill pan over medium high heat for 4-5 minutes and lightly brush the grill with some vegetable oil. You should notice the oil shimmer and sizzle when it's hot and ready. Grill the chicken skewers for 8-10 minutes on each side or until the internal temperature reaches 165 F and grill marks are clearly visible. Do not overlap the skewers at any time but you can turn the skewers occasionally to achieve even cooking and grill marks on both sides.

Serve

. Serve the skewers on a plate with peanut sauce and lime wedges. Sprinkle roasted peanuts and chopped parsley on top.

Skillet Chicken Satay is the answer to your weeknight dinner woes. Fragrant, complex, moist, and completely delicious this dish is unlike anything you&#x27;ve ever tried.

Skillet Chicken Satay

coriander

tsp cumin (ground)

tsp turmeric (ground)

garlic (minced)

tbsp ginger (fresh, minced)

tbsp lemon zest (from 1 lemon)

lemon juice

lime

tbsp fish sauce

tbsp sriracha sauce

Create the marinade: Combine all the marinade ingredients together and whisk well, in a large bowl. Add the chicken and toss well. Cover with plastic wrap and refrigerate for 30 minutes to overnight.

Cook the chicken: Heat the oil in a skillet over medium-high heat. Add the chicken and cook until golden brown, and cooked through. Should take about 10 minutes.

Finish the dish: Garnish with lime wedges and cilantro.

Creamy Natural Peanut Butter

light Coconut Milk, (stirred)

limes, (juiced and zested)

garlic, (minced)

teaspoon, OR to taste, crushed red pepper

wooden skewers, soaked in water

green onions, (for garnish (optional))

peanuts, (for garnish (optional))

Cucumber Salad, (for serving (optional))

In a large mixing bowl, combine peanut butter, coconut milk, fish sauce, lime juice, lime zest, garlic, minced ginger, cumin, curry, and crushed red pepper; whisk to combine.

Remove half of the marinade and reserve.

Add the chicken tenders to the large bowl (or in a ziploc bag together with the marinade) and toss to coat.

Set in the fridge for 30 minutes, or up to 3 ours to marinate.

Preheat grill to medium-high heat.

Thread the chicken tenders onto the skewers.

Brush grill grates with oil and place chicken skewers on the grill.

Cook for 5 minutes on each side, or until chicken is charred and cooked through.

Remove from grill and garnish with sliced green onions and peanuts.

Serve with the reserved satay sauce and a cucumber salad.

Oven-roasted chicken satay

coriander, leaves picked, stems chopped

1½ tbsp Thai red curry paste

60 milliliters light soy sauce

ginger

free-range skin-on chicken thighs

lemongrass (pale core only), bruised

kaffir lime leaves

peanuts

red chilli, deseeded, finely sliced

rice and bok choy

Put the coriander stems, peanut butter, curry paste, lime juice, soy sauce, sugar, ginger and coconut milk in a food processor and whizz until smooth. Put the chicken in a glass or ceramic bowl, coat in the marinade, cover and chill for at least 30 minutes.

Heat the oven to 180°C/160°C fan/gas 4. Put the chicken in a roasting tin, skin-side down, reserving the marinade. Roast the chicken for  20 minutes, then turn skin-side up. Pour over the reserved marinade, tuck the lemongrass and lime leaves around the chicken and roast for a further 30 minutes until the chicken is golden and tender.

Scatter with the peanuts, chilli and coriander leaves. Serve with steamed rice and bok choy.

Thai Chicken Satay air fryer recipe is SO GOOD and Paleo, Keto, Whole30. The chicken is drenched in satay marinade, you’ll be astonished how delicious it is!

Thai Chicken Satay Recipe (Paleo, Keto, Whole30)

1.5-2 lbs chicken thighs

0.5 tsp white pepper

cumin powder

tbsp dairy-free coffee creamer (or melted coconut cream)

tsp fish sauce

tbsp coconut aminos (or 1 tbsp low sodium/gluten-free tamari)

tsp grated ginger

tbsp hot sauce (I use Frank’s original hot sauce)

Avocado oil cooking spray (for the air fryer basket)

Marinate

In a large mixing bowl, marinate the chicken thighs with ingredients from turmeric to hot sauce. Gently mix well and cover the bowl. Store in the fridge for at least 30 minutes or up to 1 day before cooking.

If Air Fry

To air fry, lightly spray the fryer basket with avocado oil. Slightly drip off the marinade and place the chicken thighs into the basket in one layer with some space between each piece. Please do not over crowd the basket. I cook mine in two batches.

Cook time

Air fry at 370F (188C) for 15 minutes on the first side and 8-10 minutes the second side or until the chicken is cooked through. Please note that cook time varies, depending on the type of air fryer.

If Pan Fry

To pan fry (stovetop), add 1 tbsp avocado oil to a well-heated skillet. Pan fry 6 minutes the first side and 5-6 minutes the second side over medium heat or until the chicken is cooked through.

To Serve

Serve hot or at room temperature. The chicken is very tender and flavorful and you don’t need a dipping sauce however if you like to kick the flavor over the top, try my Paleo Thai “Peanut” sauce.  Serve it over a big bowl of salad greens or Keto garlic fried rice!

Asian fish sauce

red curry paste

cilantro

tsp kosher salt

black pepper (to taste)

-1/4 pounds thin sliced boneless (skinless chicken cutlets)

Bamboo skewers (soaked in cold water)

lime wedges (for garnish)

tbsp chopped cilantro (for garnish)

peanuts (for garnish (optional))

chicken broth

soy sauce (Tamari for gluten-free)

tsp honey

tsp Sriracha chili sauce

tsp ginger

In a bowl, mix the marinade ingredients except the chicken. Slice the chicken into long, thin strips, about 3 inches long by 1 inch wide, and add to marinade. Turn chicken to coat, cover and refrigerate at least 4 hours or longer.

Meanwhile, prepare the peanut sauce. Combine all the ingredients in a small saucepan and whisk well. Bring to a boil, reduce heat and cook until smooth, stirring constantly, about 5 minutes. Set aside to cool to room temperature.

Prepare grill to high heat and thread marinated chicken onto soaked bamboo skewers. Place on grill and cook 2 to 3 minutes per side, or until cooked through. Serve with lime wedges and peanut sauce and garnish with cilantro and peanuts.
