This Chicken Souvlaki is packed full of flavor, loaded on pita bread and smothered in delicious, tangy tzatziki sauce! It will easily become your go-to meal!

Chicken Souvlaki Pitas with Tzatziki Sauce

Cut your chicken into hearty chunks for the skewers. Combine with the marinade ingredients. Let it marinate for at least 4 hours. While the chicken is marinating, soak your skewers for at least an hour to prevent burning. Place 5-6 pieces of chicken on each skewer. 

Preheat your oven to 450 degrees. Foil your baking sheet. Place your chicken on the baking sheet and bake for 20 minutes, flipping halfway through.&nbsp;

For the Chicken Souvlaki

Spread tzatziki sauce on the pita bread. Add your greens, onions, feta cheese, and chicken. Add salt and pepper to taste as well as fresh dill or an additional squeeze of lemon!Enjoy!

Grilled Chicken Souvlaki with Dairy-Free Tzatziki

raw cashews (soaked 4-6 hours (or overnight))

Chop each chicken breast into approx 1.5 inch chunks and place in a bowl. Add all remaining chicken souvlaki ingredients and stir together. Place the bowl in the refrigerator and marinate for at least 30 minutes.

To make the tzatziki sauce, drain and rinse the cashews and place in a high-powered blender. Add the water and lemon juice and blend on high for 2-3 minutes, or until creamy. Add the remaining tzatziki ingredients to the blender and pulse a few times, just until combined. Store in a sealed container in the refrigerator (Note: the tzatziki sauce can be stored for 3-4 days in the refrigerator).

Heat the grill on medium-high.

Place the marinated chicken pieces on skewers (approx 8-9 pieces per skewer makes 6 skewers) and cook on the grill for 3-4 minutes each side.

Once marinade is ready, I either slice chicken into bite-size pieces or pound chicken tenders into flat strips to make (little fancy) skewers. Either ways, for good flavor, it is important to marinate chicken for at-least 30 minutes. This is what brings out the flavor of oregano and garlic. Also, marinade tenderizes chicken and kabobs come out moist and juicy. (yum!)When ready to grill, I skew chicken onto skewers, and throw on pre-heated grill until chicken is fully cooked from all sides and kabobs have nice char.. exactly like you get in Greek restaurants!&nbsp;That's it! Souvlaki Chicken is really THAT easy recipe. Just make sure to keep an eye on chicken when start to char, don't let oregano burn out. Chicken Souvlaki 

1.5 lbs Chicken, 3-4 boneless breast or 12-14 chicken tenders

tbsp Oregano, fresh leaves,

tbsp Garlic, about 4-5 garlic cloves, fresh minced

tbsp Olive Oil

Cup Lemon, juice,

tsp Cumin Powder

tbsp Parsley, fresh leaves, chopped

tsp Chili Flakes

Salt

Black Pepper, freshly cracked

Oil Spray

Pita Bread

Prepare Souvlaki Marinade

To make the Souvlaki Marinate, in a wide bowl (with a lid) or in seal-able bag, add all ingredients except chicken in the ingredient list above. Mix well and set aside.

Marinate Chicken

Slice chicken breast into small 1-2 inch pieces. Add to the marinade and coat into the marinade. Cover with lid (or close the bag), refrigerate until ready to use. Marinating for 20-30 minutes tenderize the meat and makes it very flavorful. You can marinate it up-to overnight.

Make Chicken Skewers and Grill

For grilling, preheat grill. Skew pieces of marinated chicken souvlaki into the skewers. I **skewed about 4-5 long tenders per skewer. Grill on preheated grill until chicken is fully cooked from all sides. 

Grill Pita and Serve Chicken Souvlaki

If serving grilled pita on side, spray oil on grill pita bread until nice grill marks appear on both sides (30 sec to 1 minute each side). Serve on side with Chicken Souvlaki! Serve and enjoy!

Easy Greek Chicken Souvlaki Recipe

Cut the chicken breast into one inch cubes and set aside.&nbsp;

In a large bowl, mix olive oil, lemon juice, salt, dried oregano and minced garlic. Add the chicken cubes to the marinade and mix well.&nbsp;

Cover with a plastic wrap and marinate in the fridge for at least one hour or overnight.&nbsp;

Once ready to cook, heat a grill pan over medium high heat.&nbsp;

Thread the chicken pieces on wooden skewers. Do not crowd the skewers.&nbsp;

Place the skewers in the pan and grill them for 5 minutes on each side until fully cooked. Make sure not to move the skewers too much.&nbsp;

Greek Chicken Souvlaki

chicken breasts (22 ounces total (alternatively 3 smaller ones))

Start by making the marinade. In a small bowl whisk together olive oil, juice of 1 lemon, oregano, minced garlic clove, salt, and pepper. Set aside.

Place the chicken breasts on a cutting board and cut them into 1 ½ inch pieces. Place them in a large bowl. Pour the marinade over the chicken and mix well. Cover the bowl with plastic wrap, place it in the fridge and let it sit for 2 hours. You can also let it marinate overnight.

Soak 6 wooden skewers in water for 30 to 40 minutes.

When ready, thread the chicken pieces onto the wooden skewers. You should have about 4 pieces of chicken on each skewer.

You can cook the souvlaki on a cast iron pan, grill pan, or directly on the grill. If you are using a pan, make sure that the wooden skewers fit your pan. If they are larger you can cut them to make them fit.

If using a pan, heat 1 tablespoon of olive oil and place the assembled souvlaki in the pan. Cook the souvlaki over medium heat for 4 minutes on each side until fully cooked and browned.

Serve the chicken souvlaki with Greek salad and tzatziki sauce.
