Vegetarian smashed chickpea avocado salad sandwich. No mayo necessary thanks to the creamy, ripe avocado. Cranberries and lemon give it a nice sweet tang! You’ll love how easy this is to throw together for lunch

Smashed Chickpea Avocado Salad Sandwich with Cranberries + Lemon

avocado

lemon juice

cranberries

salt & pepper, to taste

Toppings: Arugula, red onion, or spinach

In a medium bowl, smash chickpeas with a fork. Add in avocado and use fork to smash again until avocado is smooth, yet still contains a few chunky pieces.&nbsp;

Stir in lemon juice and cranberries. Season with salt and pepper to taste. Place in refrigerator until ready to serve (best within 1-2 days).

When ready to serve, toast bread then spread 1/2 chickpea avocado salad over 1 slice. Top with arugula, red onion or spinach, if desired. Add other toasted slice on top, then cut in half and enjoy!

Chickpea Salad Recipe

(15-ounce) cans chickpeas, drained and rinsed (3 cups cooked chickpeas)

english cucumber, diced (about 2 cups chopped)

cherry tomatoes

red onion

fresh dill, chopped small (or parsley)

avocado,

lemon juice (from 1-2 lemons)

olive oil

maple syrup

black pepper

In a large bowl, add the drained and rinsed chickpeas, cucumber, cherry tomatoes, red onion, fresh dill and avocado.

Make the dressing: In a small bowl, whisk together the dressing ingredients to combine.

Pour the dressing over the salad, and stir to mix. Refrigerate until ready to serve.

Will keep for 3-4 days in the refrigerator. Enjoy!

Add the black beans, chickpeas, tomato, onion and cilantro; mix well.

The avocado (Persea americana) is a tree that is native to South Central Mexico, classified as a member of the flowering plant family Lauraceae. Avocado (also alligator pear) also refers to the tree's fruit, which is botanically a large berry containing a single seed.

In a small bowl, whisk together the dressing ingredients.

Add chickpeas, avocado, jalapenos and shallot to a large bowl. Pour dressing over this mixture and toss gently to combine.

Top with cotija cheese and cilantro and serve.

Serve cold on its own or with grilled chicken breast, grilled salmon, or pick one of 5 easy chicken marinades and cook chicken.

this recipe is suuuuuch a slay. i made it for lunch and dinner meal prep and never got sick of it! adding feta was a great tip too :)

although NOTHING beats a good bowl of guac, alternatives are pretty good!

I think this was the best recipe I found for a chickpea salad! I added quinoa, and added red wine vinegar to the dressing, and the proportions of chickpeas to tomatoes and cucumber and onion are perfect.

Thank you for reminding us that salads can be quick and delish and adjusted for taste. I used zucchini in place of the cucumber. I added a handful of fresh basil and a pinch of garlic powder and lime juice instead of lemon in the dressing. Served with baked chicken it made a delicious complete meal.
