Satay Beef Noodle Soup

L / 41 US cup chicken and pork stock

jars BBQ satay sauce

jars sate chili sauce

coconut cream

Thai basil

Start by preparing the chicken and pork stock. This will be the base of the broth.

When the bones are soft, turn the heat on high and add all the sauces and seasoning. Let it simmer for 20 minutes.

Chinese Fish Soup (魚頭爐)

bass groper fish head ((we ask the fish monger

kg (1 lb) fish ((we use bass groper))

mustard greens

kg (1 lb) taro ((we buy it from the local Asian grocery))

fried tofu

ginger

spring onion heads

potato starch

tbsp sugar ((or

Prepare the fish by giving it a wash and using a knife to lightly scrape off any excess scales. If you ask your fish monger, they will happily do most of the scraping for you. 

Cut the fish into chunks and lightly coat them in potato starch. 

Fry the coated fish pieces in oil over a medium heat until they are golden.

Cut the taro into chunks or thick slices and fry in oil over a medium heat until golden. 

Wash the pickled mustard greens then chop them into smaller pieces. If you’d prefer a crunch then keep the pieces larger. 

Lightly oil a wok and pan fry the pickled mustard greens for 3 minutes then put it in a pot.

Heat up a pan with oil and add the ginger and spring onions until fragrant. Toss the fried fish in.

Pour the the fish, ginger, spring onions into the pot with the pickled mustard greens. Add water and season with salt, sugar and chicken powder.

Let the broth simmer for 30 minutes. You can add the taro and fried tofu in during this stage for a thicker broth as the taro melts into the soup or you can leave it until just before serving to add it in.

To enjoy this dish, have it as is or with rice noodles!

Egg Drop Soup

vegetable oil

green onions, (plus more for garnish)

chicken

cornstarch

garlic powder

ginger powder

eggs, (lightly beaten)

½ teaspoon salt, (or

black pepper, (to taste)

red pepper flakes, (for garnish)

Heat 1 tablespoon vegetable oil in a soup pot or saucepan set over medium-high heat.

Add chopped onions to the hot oil and cook for 1 minute, stirring frequently.

Add 4 cups chicken broth to the pot and stir.

In a mixing bowl combine remaining 1 cup chicken broth and 1 tablespoon cornstarch; whisk until well incorporated. If you prefer a thicker soup, add 1 more tablespoon cornstarch.

Add cornstarch slurry to the soup; whisk well and until incorporated.

Whisk in garlic powder and ginger.

Increase heat to high and bring to a steady simmer. Stir occasionally. 

Reduce heat to low; place a wire mesh sieve over the soup pot.

Slowly strain beaten eggs through the sieve and into the pan. Cook for 1 minute.

Remove from heat.

Stir in salt and pepper.

Taste for salt and seasonings, and adjust accordingly.

Garnish with chopped green onions and red pepper flakes.

Serve.

Easy 10-Minute Wonton Soup

chicken stock

water, divided

soy sauce (or regular soy sauce)

fresh cilantro, chopped

green onions, sliced

In a small saucepan, bring chicken stock and 1 cup of water to a boil over medium-high heat. Add wontons and salt. When the wontons float to the top, add a cup of cold water.

Once wontons float to the top again, add soy sauce and sesame oil.

Scoop wontons out into a bowl and top up with soup base. Garnish with cilantro and green onions. Enjoy!

James Martin's Asian soup combines a fragrant broth with fish, seafood and light noodles, topped with strong herbs

Hot & sour fish soup

200 grams/7 ounces skinless salmon fillet

Put the coriander seeds and galangal or ginger in a saucepan. Pour in the stock, bring to the boil, then simmer gently for 5 mins. Leave to stand for 10 mins.

Meanwhile, cook the noodles following pack instructions. Drain and keep warm. Return stock to the boil. Add the fish sauce, chillies and garlic, reduce the heat and simmer for 2 mins. Add the prawns and salmon, return to a simmer and cook gently for about 5 mins until both are firm and cooked. Add the spring onions, herbs and lime juice, to taste.

Divide the noodles between soup bowls. Using a slotted spoon, lift out the prawns and fish, and place on the noodles. Season the hot stock, pour into the bowls and serve with Spring rolls on the side.

This Instant Pot Chinese Chicken Noodle Soup has all the comfort of a classic chicken soup but with an Asian flare! Complete with healing ginger, garlic and a splash of soy sauce, this recipe is sure to renew any heartache, bellyache or cold.

Instant Pot Chinese Chicken Noodle Soup

Chicken

Onion (Washed and NOT peeled)

Carrots,

Celery Stalks, Washed

Salt (to taste)

Water

ginger,

garlic cloves,

green onions, thinly sliced (reserve 1 for soup add-ins)

tbsp Shaoxing Wine

tsp sesame oil

Cantonese Noodles

Place chicken, onions, carrots and celery into your Instant Pot with a big pinch of salt.

Seal the Instant Pot and set it to &#8220;Manual&#8221; for 75 minutes.

In the meantime, add sesame seed oil, wine, soy sauce, ginger, garlic, onions and scallions into a pot and allow to sweat for 10 minutes.  No need to sautee to develop the color, just cook it long enough for the aromatics to develop and the flavors to fill up the room.  

Prepare the noodles according to package instructions.

Once the Instant Pot timer is done, release the pressure of the pot.  

Remove the meat and vegetables from the broth with a spider or a slotted spoon.

Add in the ginger and garlic mixture into the soup and taste for seasoning.  Adjust for seasoning.

Shred the chicken with your hands or gloves.  If using chicken wings serve them in the soup or take off the meat off the bones.

Assemble the soup with the noodles, broth and chicken. Feel free to toss the veggies from the soup into bowls as well.

Cantonese Borscht Soup (羅宋湯)

lb spare ribs

lb green cabbage

0.5 chili peppers

Prepare vegetables

Cut the green cabbage into bite-sized pieces.

Parboil spare ribs

Add the spare ribs to a wok or pot full of clean, cold water. Turn the heat to high and bring it to a boil.

Stir-fry ingredients

Dry your wok if needed, then set the heat to low. Add corn oil to the wok. Add the ginger and garlic. Stir-fry these aromatics on low heat until they're fragrant, which should take 15-20 seconds.

Cook soup in pot

To the soup pot full of stir-fried ingredients, add chicken broth. Then turn the heat on to high. Add water, then give it a good stir.
