This chocolate baked oatmeal with peanut butter feels decadent, but it's loaded with healthy ingredients and so easy to whip up!

Chocolate Baked Oatmeal

rolled oats*

milk (I use unsweetened almond milk)

cocoa powder

maple syrup,

baking powder

sea salt

Tablespoon ground flaxseed*

banana, mashed (about ½ cup)

Tablespoon melted coconut oil

Tablespoons peanut butter + more for drizzling

vanilla extract

cooking spray

Spray an 8&#215;8 square baking dish with cooking spray.

In a large bowl, mix together the oats, almond milk, cocoa powder, maple syrup, baking powder, sea salt, flaxseed, mashed banana, coconut oil, peanut butter and vanilla. Stir together, then add 1/8 cup of the chopped chocolate. 

Carefully pour oatmeal mixture into the prepared baking dish.

Bake for 25-30 minutes, or until the oatmeal has set. Remove from the oven and let cool for a few minutes. Portion and serve with a drizzle of peanut butter on top.

For storage

store in the refrigerator in an airtight container for 4-6 days.

To reheat

 To reheat the whole baked oatmeal, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set toaster oven to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.

Made this deliciousness this morning. Chocolate for breakfast was a hit all around with my family. I halved the recipe and had to bake it about 25 mins.

Vegan Brownie Batter Baked Oatmeal

flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)

banana (from 2-3 ripe bananas)

cacao powder

nut butter*

maple syrup

cinnamon

salt

non-dairy milk

Preheat your oven to 375 degrees.

Grease a 9-inch cake pan and set aside.

In a small bowl, whisk together 1 tablespoon...

In a small bowl, whisk together 1 tablespoon ground flaxseed with 3 tablespoons water. Set aside to thicken. This will be your "egg."

In a mixing bowl, mash your bananas.

To the bananas, add in the cocoa powder,...

To the bananas, add in the cocoa powder, nut butter, maple syrup, vanilla, baking powder, cinnamon and salt. Whisk everything together until a uniform batter forms.

Next whisk in the non-dairy milk until smooth.

Add in the 3 cups of old-fashioned rolled...

Large Ripe Bananas

Large Eggs

Cups Milk

Maple Syrup

Vanilla Extract

Cups Old Fashioned Oats

Cup Unsweetened Cocoa Powder

Baking Powder

Salt

Cinnamon

OPTIONAL: 1/3 Cup Creamy Peanut Butter

Preheat oven to 350 degrees.  Grease a 9x9 inch baking dish and set aside.

In a large bowl, mash the bananas with a fork until mostly smooth.  Then, whisk in the eggs, milk, syrup, and vanilla extract until well combined.

In a second large bowl whisk together the oats, cocoa powder, baking powder, salt, and cinnamon.

Add the wet ingredients to the dry mixture and stir together with a spatula until combined.

Pour into prepared baking dish and bake for 25-35 minutes, until set.

Allow the oatmeal to cool for 15 minutes before serving.

OPTIONAL TOPPING:  Melt the peanut butter in a small bowl in the microwave for 30 seconds to 1 minute.  Drizzle over oatmeal as desired.

This oatmeal is sweet and cake-like, but uses wholesome ingredients that are nutritious and filling. It&#39;s high in fiber and protein making it perfect for breakfast or even dessert to help keep you feeling full and satiated.

Preheat oven to 350 degrees Fahrenheit.

Put the rolled oats into the blender and blend until it turns into a powder-like flour.

Add all other ingredients into the blender except for the salt and chocolate chips.

Blend until smooth.

Spray two 4 ounce ramekins with oil. Pour halfway with batter in each ramekin and add some chocolate chips. Cover with more batter and top with more chocolate chips.

Sprinkle a pinch of sea salt over the top.

Bake for about 20 minutes, or until a toothpick comes out clean when inserted in the middle.

Let cool and enjoy!

You can watch the video in the post for visual instructions.First, preheat the oven to 350F/175C and grease a 6x9-inch (15x23cm) or similar-sized baking pan with a little oil.

Then, mash the bananas directly in the baking pan using a fork (or potato masher).

Add the remaining baked oatmeal ingredients and mix into a batter.

Transfer the baking dish to the oven and bake for about 25 minutes. The exact time will depend on the size pan you use (i.e., the thickness of the oatmeal).To check if the baked chocolate oatmeal has set, insert a toothpick into the center. It should come out clean.

Then, remove the pan from the oven and allow it to cool for at least 10 minutes.

Meanwhile, prepare the chocolate cream by combining all the ingredients in a medium bowl and whisking until smooth and creamy.

Pour the chocolate cream mixture over the baked oatmeal and (optionally) transfer the pan to the fridge until the layer firms up slightly – then enjoy!
