These cinnamon roll baked oats are vegan, gluten free and so easy to make. Perfect for meal prep, and tastes just like a cinnamon roll! Made with simple and wholesome ingredients you probably have on hand!

Cinnamon Roll Baked Oatmeal

cinnamon

tsp baking powder

tsp baking soda

tsp salt

apple sauce

non-dairy milk

tsp vanilla extract

maple syrup

almond butter

coconut oil

Preheat oven to 350 degrees Fahrenheit. 

add oats to bowl

Add the oats, cinnamon, and baking powder, baking soda and salt to a bowl and mix well. 

add wet ingredients

Add in all remaining ingredients and stir together. 

add to pan

Add to a 9 inch baking dish (I used a pie plate which worked well, just make sure it is at least 2 inches deep, the oats will rise a bit as they bake) and add to the oven. 

bake

Bake for 30-35 minutes, or until a toothpick comes out mostly clean and the edges are golden brown. if you want the center to be a bit more gooey like a regular cinnamon roll, just bake for closer to 28-30 minutes.

It will continue to set as it cools, so if you&#39;re making it ahead of time and plan to reheat, best to undercook just a bit.

make glaze

While the oats are baking, prepare the cinnamon sugar glaze by adding the coconut oil and almond butter to a small bowl.

Microwave for about 15 seconds, then stir to combine. Add the maple syrup and cinnamon and mix well.

let cool and serve

Let the oats cool slightly,, then top with cinnamon sugar and glaze. Enjoy!

These healthy cinnamon roll overnight oats are so easy to make! With yogurt and almond milk, they&#39;re vegan, gluten-free, and great for both kids and adults. With a beautiful cinnamon-sugar swirl, each bite tastes like cinnamon buns! Prepare them ahead of time and enjoy the oats throughout the week for breakfast, lunch, or dessert.

Cinnamon Roll Overnight Oats

½ cup rolled oats

chia seeds

coconut sugar (or brown sugar)

salt

dairy-free vanilla yogurt (*see notes)

almond milk

vanilla extract

Stir dry ingredients.

Add the oats, chia seeds, sugar, cinnamon, and salt to a large mixing bowl. Stir all the dry ingredients together until evenly combined.

Stir in wet ingredients.

Add the yogurt, almond milk, and vanilla to the bowl. Mix thoroughly until fully combined. The mixture will seem thin now, but don&#39;t worry.

Chill the oats in the fridge.

Cover the bowl tightly with plastic wrap and store in the fridge for at least 4 hours, or overnight for best results. The oats will thicken as they chill. If the oats are too thick after chilling, stir in an extra splash of milk.

Transfer to jars and add extra sugar.

Once chilled, transfer the oats to individual serving jars, adding extra sugar and cinnamon between layers of oats if desired. This gives the oats the beautiful cinnamon swirl in the jars.

Enjoy the overnight oats.

Enjoy the oats immediately and store leftovers in the fridge for 4-6 days. They can be enjoyed cold or warm.

You won&#039;t believe how delicious this Cinnamon Roll Bake is. It&#039;s healthy, packed with cinnamon and topped with a simple icing.

Cinnamon Roll Oatmeal Bake

Preheat oven to 350 degrees F and spray a 9 x 13 inch baking pan with nonstick spray.

In a large bowl whisk together the eggs, milk, melted butter, maple syrup, brown sugar and vanilla extract until combined. Stir in the oats, baking powder and cinnamon until all of the ingredients are combined.

Let the oatmeal batter sit for 10 minutes to absorb all of the ingredients. Spread the oatmeal batter evenly into the greased baking pan and bake for 20-25 minutes or until the top looks golden brown.

While the oatmeal is baking you can make the icing. Simply whisk together the powdered sugar and milk in a small bowl until icing has formed. If the icing seems too thick, add more milk. If it&#39;s too thin, add more powdered sugar.

Once the oatmeal is baked let cool for 10 minutes and slice into squares. Drizzle with icing and serve immediately. It is best when served fresh and warm, enjoy!

I think someone messed with the recipe. It’s way too dry with the current amount of wet to dry ingredients. I doubled the milk and butter only and it turned out better.

Hi Rachel, oh no! I'm sorry the oatmeal didn't turn out how it was supposed to. I'm thinking it didn't cook long enough especially if you had to eat it with a spoon. You should be able to cut it with a knife. I would cook it for a little longer next time until the center is set.

These were SO delicious! My whole family loved it even though I don’t think it came out right and I can’t figure out why. We always make Amish baked oatmeal and it’s fluffy like a cake. This recipe didn’t expand at all for me.. I used old fashioned oats and didn’t skip any ingredients. Definitely 2 Teaspoons of baking powder, I double checked. It was so flat there wasn’t a way to cut it up and serve so we just ate it with a spoon off the pan. How can I make it rise next time? Not sure why that happened. Thanks!

Delicious! Easy and quick- one of our family’s all time favorite for breakfast. We have a lot of allergies and a type 1 diabetic so I make it dairy/egg/gluten free: swap the eggs out for 1/2 cup applesauce, decrease to 1 tablespoon real maple syrup (to lessen amount of carbs per slice), and use almond milk. I usually do a heaping tablespoon of cinnamon and add in 1-2 scoops of chocolate Orgain protein powder (usually have to increase the almond milk to thin out the batter). Bakes up nicely by 27 min in oven. I also use almond milk in the icing with a tsp of vanilla. Thank you for this recipe- it perfect to adjust/add/make as-is!

Hi Ashley, I've never tried this oatmeal in a muffin tin but I'm sure it would totally work! I would use a standard cupcake/muffin pan size. Be sure to reduce the baking time a few minutes and generously grease the pan before adding the oatmeal batter. I hope you love this recipe!
