DIY Chocolate Chip Clif Bars

Medjool dates

water

coconut nectar

tbsp molasses

tsp vanilla extract

brown rice crisp cereal

oats

flour

oat bran

tbsps flax seed meal

vegan mini chocolate chips

Blend all the wet ingredients until smooth.

In a large mixing bowl, combine all the dry ingredients.

Shape the dough into a long log that is about 3 inches wide and about 1/2 inch high.

Using a knife or a pastry cutter, divide the log into 8 bars (see video if you are confused).

Transfer to a baking sheet lined with parchment paper.

Cool. Keep in an airtight container in the fridge.

They were okay. Not as crunchy though. I am gonna put chopped nuts in next time.

I work outdoors and live off of a stipend. These make a great cheaper alternative to Clif for quick energy and protein.

I made these today.  I always try to follow the recipe as written the first time and make any changes the next time.  I did not have coconut syrup so I used brown rice syrup and the only molasses I had was black-strap.  The black-strap flavor came through too much in my opinion and I'll cut it back next time.  I also used the peanut butter powder in place of the protein powder.  My kids didn't even know they were supposed to be peanut butter flavored.  I'll kick that up some next time too.  Over all I'll keep tinkering with this as I think it's good and in the future may even get better.  Thanks

DIY Chocolate Chip Clif Bars // soy-free, nut-free, hclf vegan

These peanut butter chocolate chip homemade Clif bars are the perfect to-go snack. Get this easy, no-bake recipe now!

Peanut Butter Chocolate Chip Clif Bar

(5 oz/142 g) pitted Medjool dates

(5 oz/142 g) salted peanut butter

(5 ounces 142 grams) agave or honey

(1½ oz/42 g) crisp rice cereal

(3 oz/85 g) quick-cooking oats

(1¼ oz/35 g) peanuts, chopped

flax seeds

cinnamon

(1½ oz/43 g) finely chopped semisweet chocolate

Line an 8-inch (20-cm) square baking dish with parchment paper. Set aside.

In the bowl of a food processor, add the dates, peanut butter, and agave or honey and process into a paste.

Heat this mixture in a saucepan over low heat, or in the microwave for about 1 minute, until warm and loosened.

Transfer to a medium bowl and add the crisp rice, oats, peanuts, flax seeds, cinnamon, and chocolate chips. Stir or knead together until evenly combined.

Press evenly and firmly into the prepared pan, then cover and refrigerate until firm, about 1 hour.

Cut into 9 bars and store in an airtight container in the fridge between sheets of parchment paper for up to 10 days.
