Aged Eggnog

Separate the eggs and store the whites for another application.

Beat the yolks with the sugar and nutmeg in a large mixing bowl until the mixture lightens in color and falls off the whisk in a solid ribbon.

Combine dairy, booze, and salt in a second bowl or pitcher and then slowly beat into the egg mixture.

Move to a large glass jar (or a couple of smaller ones) and store in the fridge for a minimum of 2 weeks. A month would be better, and 2 better still. In fact, there’s nothing that says you couldn’t age it a year, but I’ve just never been able to wait that long. And yes, you can also drink it right away.

Serve in mugs or cups topped with a little extra nutmeg grated on top.

This margarita recipe is three parts tequila, two parts good triple sec, and one part lime juice. On the rocks and with salt, of course.

Half-gallon (64 ounces) all natural apple cider

unsalted

dark brown sugar, packed

cinnamon

cloves

Rum (or apple brandy)

Cinnamon sticks (optional)

Bring the apple cider to a simmer over medium heat in a large pot, then turn the heat down to low. Stir in the butter, brown sugar, cinnamon, nutmeg, cloves and salt. Continue stirring until the butter is melted and the sugar is dissolved. 

Ladle the buttered cider into mugs. Top each drink off with a shot of rum and garnish with a cinnamon stick, if desired. Serve hot.

These Old Fashioned Cocktails Have A Fall Twist

This traditional English tipple has been around for hundreds of years. It&#039;s no wonder both Benjamin Franklin and Charles Dickens were milk punch fans: Perfectly clear and nicely tinted by ruby port, the punch is not only smooth, it&#039;s actually velvety on the tongue.Why? Because we clarify the milk, meaning that we filter out the curds and accompanying astringent tasting compounds, leaving just silky smooth whey. And since it&#039;s only about 10 percent alcohol-by-volume, I say, drink on! Safely, of course. Note: Any overproof rum will work in the dram, meaning any rum over 50% ABV. But navy-strength rum, typically bottled at 57% ABV, is my favorite. Just remember: the higher the ABV of the rum, the higher the ABV of your resulting dram. I know it seems like you’re using a lot of containers, but the punch needs to strain into a container large enough to securely hold the sieve and such a vessel would be too wide to serve from ... except for maybe a punch bowl, which is tough to get into the fridge.This recipe first appeared in Season 1 of Good Eats: The Return.

Clarified Milk Punch

Earl Grey tea bags

fluid ounces aged dark rum (not spiced)

fluid ounces Allspice Dram

Heat 2 1/4 cups of water to 208°F. If you have an electric kettle with a temperature setting, great. If not, bring the water to a boil in a saucepan, kill the heat and count to 20. Pour the water over the teabags into a quart vessel and steep 3 minutes before removing the bags. (Do not wring out or squeeze the bags.)

Add the sugar to the hot tea and stir to dissolve. Then add the port, rum, Allspice Dram, and lemon juice. Cool to room temperature, about 20 minutes.

Pour the milk into a glass pitcher and then follow with the tea mixture. (Yes, it will curdle.) Park on counter for 1 hour. Do not shake, stir or molest in any way. Just let the magic happen. Oh, and make sure the tea goes into the milk, not the other way around.

Line a large, fine-mesh sieve with a commercial-sized coffee filter (we like those made for 1.5-gallon machines) and strain the mixture into a wide, 4-quart container. Once completely filtered, typically about 1 hour, transfer to a quart jar or pitcher and chill to serve. (See note.)

Store tightly sealed in the refrigerator for up to 2 months.

¼ pineapple, peeled

Cut the fruit and carrot into pieces, if necessary, and process them through a juicer.

On a cold night, a cup of warm mulled wine is soul warming.&nbsp; Bold red wine is simmered and infused with citrus and warm spices, this is a perfect blend of spice &amp; wine.

Easy Mulled Wine | Gluhwein Recipe

½ medium orange

water

Sugar

Cinnamon Stick

Cloves

Star Anise

ml red wine

1½ oz Rum

Peel a medium size orange and save the peels. Pierce the cloves into one or more of the orange peels and set aside. Extract the juice from the orange and keep aside. Optionally, you can strain it to avoid any citrus fibers in the drink.

Turn the instant pot on Saute mode on HIGH. Add sugar and water in the Instant Pot. Bring water to a boil. Stir once to dissolve the sugar.

Reduce the Saute setting to LOW on the Instant Pot. Add orange juice, orange peels, cinnamon, star anise, and the orange peels with cloves in it. Simmer for 2 minutes

Add red wine and let it steam, not boil. Takes between 4-6 minutes, depending on the size of the pot.&nbsp;

Hit Cancel and Turn on 'Keep warm' mode. This will keep the Mulled wine at a nice warm temperature for the evening.&nbsp; &nbsp; Add the rum or grand marnier just before serving.

Just follow the same instructions with a saucepan.&nbsp; &nbsp;Keep the heat on low to make sure that once the wine is added, it does not boil.&nbsp;&nbsp;

In the bowl of a stand mixer, beat together the egg yolks and 1/3 cup sugar until the yolks lighten in color and the sugar is completely dissolved. Add the milk, cream, bourbon, rum, and nutmeg and stir to combine. Move mixture to a medium mixing bowl and set aside.

Place the egg whites in the bowl of the stand mixer and beat to soft peaks. With the mixer still running, gradually add the remaining 1 tablespoon of sugar and beat until stiff peaks form. Gently fold the egg whites into the mixture. Chill and serve.

Mix water, sugar, and fresh thyme in a medium saucepan. Stir until the sugar dissolves and then bring to a boil. Remove pan from heat and let the syrup stand for 20 minutes. Remove the thyme sprigs from the syrup, then chill for an additional 30 minutes.

Time Infused Simple Syrup

Place 2.5 cups of raspberries in a bowl with 1/4 quarter cup of simple syrup. Mash&nbsp;your raspberries into a pulp with a muddler or the handle of a wooden spoon. Then, strain the mush through a fine-mesh sieve directly into the pitcher. Press the raspberries with a spatula to help get the juice out. Discard the raspberry pulp.

Add your ice cubes to the pitcher. Then add the club soda, gin, lime juice, and 12 sprigs of time. Serve cold with remaining raspberries.

Mine is a tantalizing potion I simply call &quot;nog.&quot; Do NOT call it &quot;eggnog,&quot; because everybody knows that eggnog is gross and nasty. Nog, on the other hand, is sublime. Actually, I like to make two versions of nog. One is raw and aged and possibly dangerous, while this one is new, improved, and perfectly safe thanks to a quick, custard-like cooking method. Cooked Nog

In a medium bowl, briskly whisk the egg yolks until they’re smooth and have lightened a bit in color, about 1 minute. Gradually whisk in the sugar, then continue to whisk until the mixture is thick and considerably lightened in color, about 2 minutes. Stash next to the cooktop.

Heat the half and half, nutmeg, and grains of paradise in a medium saucepan over medium-high heat until it begins to steam and registers around 165°F, about 7 minutes. Remove from the heat and, while whisking the egg mixture constantly, gradually ladle in about one-quarter of the hot dairy mixture.

Whisk the hot egg mixture into the remaining dairy mixture in the saucepan, set over medium heat, and cook, stirring frequently, until the mixture reaches 175 to 180°F, about 3 minutes. Meanwhile, place a second medium bowl inside a large bowl filled with ice. Set a fine-mesh sieve over the bowl.

Remove the saucepan from the heat, then pour the custard through the sieve into the bowl. Stir in the bourbon, rum, sherry, and vanilla. Continue to stir frequently until the mixture has cooled to at least room temperature, about 15 minutes. Consume immediately or transfer the bowl of nog to the fridge to chill completely. Add a little extra nutmeg over the top before serving if you so choose.

Just 3 ingredients and a glass full of ice is needed for this spicy refreshing Dark and Stormy cocktail!

oz (120 milliliters) spiced rum

Ginger Beer &amp; Lime

Add the ginger beer, lime juice and a slice of lime to each glass.

Very carefully and slowly pour the spiced rum on top - so it stays in a separate layer. You can do this over the back of a spoon for a more defined separate layer.

Garnish &amp; Serve

Add a straw and a slice of lime to the top of the glass then serve!

Fill a medium saucepan with 1 inch of water and bring to a simmer over high heat. Reduce to low. Meanwhile, in a large bowl, whisk the egg yolks with the salt, sugar, and cinnamon until sugar is dissolved and mixture falls from whisk in creamy pale yellow ribbons, about 4 minutes. Whisking continuously, pour in liquor.

Place bowl over simmering water and cook, whisking continuously, until mixture is thick enough to form a coat on the back of a spoon, about 8 minutes total. (If using thermometer, mixture should reach at least 130°F).

Remove from heat and whisk in vanilla. Pour into a sealable glass container and refrigerate for a minimum of 6 hours before serving. Store in the refrigerator for up to 1 month.
