Healthy vegan chocolate chip coconut flour muffins, that are oil-free and gluten-free! These are a great dessert or make-ahead breakfast that's easy and flavourful.

Vegan Chocolate Chip Coconut Flour Muffins

coconut flour

tsp baking powder

plant based milk

peanut butter

maple syrup

vegan chocolate chips (or chunks)

Preheat the oven to 180 degrees C/350 F.

In a small mixing bowl, whisk together the coconut flour and baking powder.

Then, add the plant based milk, flax egg, peanut butter and maple syrup. Mix together well.

Fold in the chocolate chips/chocolate chunks and divide evenly throughout the muffin tray.

Bake in the preheated oven for 30-35 minutes and allow to cool for at least 15 minutes before serving.

Coconut Flour Blueberry Muffins

Preheat the oven to 350F. Line a muffin pan with paper liners.

In a large bowl, whisk together the eggs, coconut oil/butter, applesauce, honey, vanilla and cider vinegar.

Add the coconut flour, baking soda, and salt and mix to thoroughly combine. Stir in the blueberries. Scoop the batter into the prepared muffin pan, filling each one 2/3 the way up. Sprinkle each muffin with a bit of sugar/chopped pecans, if using.

Bake for 17-20 minutes, until a toothpick inserted into the center of a muffin comes out clean.

Allow to cool 5 minutes in a pan. Transfer to a wire rack and cool completely. Enjoy!

/ 80 ml coconut or almond milk (unsweetened)

Preheat your oven to 180 Celsius/356 Fahrenheit.

Sift coconut flour into a bowl.

Add all ingredients except for the blueberries and blend well.

Stir in the blueberries, keeping a few back for decorating.

Line a muffin pan with paper cups and half-fill each cup with the dough.

Place the remaining blueberries on top of the muffins.

Bake at 180 Celsius for circa 25 minutes or until golden brown on top.

Keto Zucchini Muffins Recipe

zucchini (about 1 medium zucchini (196 grams))

coconut flour ((71 grams))

Set the shredded zucchini in a sieve in the sink and sprinkle lightly with salt. Let drain one hour, then squeeze as much liquid from the zucchini as possible.

Preheat the oven to 350ºF and line a muffin tin with 12 parchment or silicone liners.

In a large bowl, whisk together the coconut flour, sweetener, protein powder, baking powder, spices, and salt.

Stir in the zucchini, eggs, butter, and 3 tablespoons of the water. Add additional water if the batter is overly thick. It should be easily scoopable but not pourable.

Stir in the nuts, if using. Divide the batter among the prepared muffin cups and bake about 25 minutes, until the tops are lightly browned and firm to the touch.

Remove and let cool in the pan.&nbsp;

Wow!  Perfect for breakfast or evening snack.

These are so good. I was excited to see I had all the ingredients on hand.  They are spot on with the classic taste of traditional zucchini bread/muffins.  Another winner!

I used carob chips in them, and they were delicious! I should have reduced the sweetener in them when I did that, though.  These are a great breakfast since they have nuts and zucchini texture in them.

Just made these……oh my!!!!!!!!   Question….how to store them?   I used silicone muffin cups…..

These just came out of my oven and they are so good! I am so impressed. This is my first time using only coconut flour for a recipe and I love it. I am trying to slightly reduce my almost flour usage and this really fit the bill. The seasonings are really lovely. I followed the recipe exact (with pecans).
