These bars are a super easy treat recipe, that’s semi-homemade yet full of love.

Gooey Butterscotch Nut Bars

sugar

instant butterscotch pudding mix (3.4 ounces package)

butter (softened)

(14 ounces caramels)

evaporated milk

macadamia nuts

cashews

tsp vanilla extract

butterscotch chips

Preheat oven to 350 degrees F.

In a large bowl, combine the sugar cookie mix, pudding mix, butter and egg until a dough forms. Press into an ungreased 9”x13” baking pan. Bake for 20 to 25 minutes or until set.

Meanwhile, in a large saucepan, combine the caramels and milk over medium-low heat, stirring often until melted and smooth. Remove the pan from the heat and stir in the nuts and vanilla extract.

Pour the caramel mixture over the top of the crust. Sprinkle with the butterscotch chips and let cool completely. Cut into bars. Store in an airtight container. Enjoy!

Gluten Free Sugar Cookie Mix 

(112 grams) blanched fine almond flour

baking powder

cinnamon

c Sparkling cane sugar

Optional add-ins (chocolate chips, candy pieces, peppermint chips)

glass jar

Optional gift tag

neutral oil (naturally refined avocado or coconut oil)

maple syrup (adjust as needed)

Combine all of the ingredients, and whisk thoroughly.

Store this mix in the freezer for up to 12 months.

To make the gluten free flour mix

Add the cane sugar, spices, and any other add-ins.

To make the gluten free sugar cookie mix in a jar

Place the oat flour, almond flour, baking powder, cinnamon, oil, and maple syrup in a mixing bowl.

Beat with a hand mixer or in a stand mixer for 1 minute.

Roll the batter into a ball, and cover it in plastic wrap. Let it sit in the fridge for 30 minutes.

While the batter chills, line or grease a baking sheet, and preheat the oven to 350 degrees Fahrenheit.

Once the batter has chilled, use a cookie dough scoop or spoon to shape the dough into 1-inch balls. *See notes for sugar cookie cut-out recipe.

Roll the cookie dough balls in sparkling cane sugar, and place them on the prepared baking sheet 1-2 inches apart. Use a cookie stamp to create a fun design or leave as is.

Remove them from the oven, and let them cool completely.

Baked cookies will stay fresh at room temperature for 3-4 days.

In a large bowl, whisk together flour, baking soda, salt, and sugars until well blended. Stir in chocolate chips. Store in an airtight container.

For the Chocolate Chip Cookie Mix:

Adjust oven rack to center position. Preheat oven to 325°F. Line cookie sheets with parchment paper (or spray with nonstick cooking spray).

Fluff/stir cookie mix to aerate and redistribute the chocolate chips. Measure 4 scant cups of Chocolate Chip Cookie Mix into a bowl, using a knife to level each cup. By hand or with an electric mixer, blend in cooled melted butter, whole egg, egg yolk, and vanilla. Mix until combined.

Use a tablespoon or small cookie scoop to measure out cookie dough and roll it into a ball. Place ball on prepared cookie sheet and flatten slightly. Repeat, spacing cookies two inches apart.

Bake for 9 to 11 minutes or until edges of cookies are starting to turn golden brown and centers are puffy yet set. Remove from oven and allow cookies to cool completely on cookie sheets.

Using a funnel, put the flour into the jar. Shake just a bit or tap it on the counter gently to allow it to settle.

Next, put in the baking powder, baking soda, and salt. Shake just a bit.

Put in the M&amp;Ms (or optional chocolate chips, dried cranberries or nuts – just make sure you use no more than 1 cup of these extra goodies for each jar, otherwise, the cookies will be too soft and won’t cook well).
