Cranberry Jello Salad is a sweet-tart, dessert salad loaded with crushed pineapple, chopped pecans, cranberries and a tangy cream cheese topping!  It's perfect to serve for Thanksgiving dinner, Christmas dinner, or any night of the year!

Cranberry Jello Salad

(3 oz.) pkgs. cherry Jell-O (or raspberry

water

(20 oz.) can crushed pineapple (do not drain the juice)

cranberry sauce

pecans, divided

cranberry or apple juice

(8 oz.) pkg. cream cheese, softened

sugar

sour cream

Add both packets of Jell-O to the boiling...

Add both packets of Jell-O to the boiling water in a large bowl, stirring until completely dissolved.

Stir in the crushed pineapple (juice and all)...

Stir in the crushed pineapple (juice and all) and whole cranberry sauce, using the back of the stirring spoon to break up any chunks of cranberry sauce a bit against the side of the bowl.  

Add in 3/4 cup of the chopped pecans...

Add in 3/4 cup of the chopped pecans and the cranberry or apple juice and stir to combine, then carefully pour into a 9x13-inch glass dish or jello mold and refrigerate until set, about 2 hours.

In a medium bowl, beat the cream cheese...

In a medium bowl, beat the cream cheese on high speed with an electric mixer until smooth.

Add the powdered sugar and sour cream and...

Add the powdered sugar and sour cream and mix well until completely combined, then spread over the top of the set Jell-O.

Sprinkle with remaining 1/4 cup of chopped pecans,...

Sprinkle with remaining 1/4 cup of chopped pecans, then serve.

Cranberry Jello Salad is the best combination of tart, tangy, and sweet! It&#39;s similar to cranberry sauce but a little sweeter from the jello with undertones of orange and pineapple. Add it to your holiday spread and watch it disappear!

Add 2 (3-ounce) packages cranberry flavored gelatin and 1 ½ cups boiling water to a large bowl and mix until the jello is completely dissolved.

Stir in the 1 (14-ounce) can cranberry sauce, whole berry, 1 (20-ounce) can crushed pineapple, not drained, and 2 tablespoons orange zest and 1 tablespoon lemon zest.

Pour the jello mixture into a large serving bowl, cover, and chill in the refrigerator for at least 4 hours before serving.

Make this festive cranberry pretzel salad for the holidays! The salty pretzel crust is the perfect balance to the sweet and creamy layers. Cranberry sauce gives it a pop of tartness and makes it holiday-ready!

Cranberry Pretzel Salad

½ cups pretzels, (crushed)

brown sugar

butter, (melted)

(14-ounce) can whole berry cranberry sauce

cream cheese

(8-ounce) container whipped topping, (thawed)

Preheat the oven to 350 degrees Fahrenheit. Combine 2 ½ cups pretzels, 3 tablespoons brown sugar, and melted ¾ cups butter, in a mixing bowl.

Press the mixture into a lightly greased 13 x 9 x 2-inch baking dish. Bake for 8 minutes, remove it from the oven, and let it cool completely.

While the crust is baking, make 1 (6-ounce)  box instant raspberry gelatin,  according to the package directions, stirring in 1 (14-ounce)  can whole berry cranberry sauce. Let the jello sit at room temperature for an hour or so until it has cooled.

Meanwhile, beat 1 (8-ounce)  package cream cheese and 1 cup granulated sugar together with a hand mixer in a large bowl until creamy.

Fold in 1 (8-ounce)   container whipped topping, until fully combined.

Once the jello has cooled, carefully pour it over the chilled cream cheese layer. Carefully move around the pieces of cranberry as desired to distribute them evenly.

refrigerate

Refrigerate for 4 hours or overnight before serving. Top with a dollop of whipped topping and a cranberry for garnish, if desired!

I remember having this as a kid growing up.  It was always available during summer picnics or 4th of July family gatherings.  So glad to see that someone is keeping this simple family recipe alive!
