Cauliflower cream of chicken soup

2L (8 cups) Massel Chicken Style Liquid Stock

1kg cauliflower (about 1 medium head, trimmed), cut into florets

(250 milliliters) pure (thin) cream

chicken breasts (we used Woolworths Macro)

Micro coriander, to serve

coriander

jalapeno, finely chopped

cauliflower florets, finely chopped

tbs toasted cashews, finely chopped

This Cream of Mushroom Chicken is an easy meal that is full of savory, delicious goodness. Creamy, rich, and flavorful, it only takes 30 min!

Cream of Mushroom Chicken

chicken

olive oil

unsalted butter

garlic

baby Bella mushrooms (sliced)

tbsp all-purpose flour

thyme

onion powder

salt

pepper

chicken broth

heavy cream

Season 1 pound of chicken tenders with salt & pepper (both sides).

Now place 2 Tbsp olive oil and 2 Tbsp butter into a large pan and bring the heat to medium high. Cook the chicken tenders until browned and fully cooked through. Then remove and set aside.

In the same pan, add 1 minced garlic clove and 8 ounces sliced baby Bella mushrooms. Stir for a few minutes minutes on medium heat until the mushrooms become tender.

Now add tbsp all-purpose flour, 1/2 teaspoon thyme, 1/2 teaspoon onion powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Stir for about one minute until there are no more patches of dry flour visible.

Bring the heat to medium-high and slowly pour in 1/2 cup chicken broth while mixing to prevent any clumps of flour to form.

Bring the sauce to a simmer and pour in 1 cup of heavy cream. Let it come to a simmer once again and add the cooked chicken back in. Serve it hot over butter pasta or mashed potatoes.

Homemade Cream of Chicken Soup

butter

unbleached, all-purpose flour

chicken stock

milk

tsp salt

garlic powder

paprika

tsp black pepper

In a large saucepan, melt the butter. Whisk in the flour and cook, stirring until bubbly and fragrant. Whisk in the stock and milk slowly. Add the salt, garlic powder, onion powder, paprika, and black pepper. Simmer until thickened. Stir in the minced chicken.

Use in recipes calling for cream of chicken soup.

To freeze, chill the soup completely before storing in 2-cup portions in the freezer.Thaw and whisk to recombine before using.

Instant Pot Cream of Chicken Soup

celery (chopped)

carrots (diced)

Tbsp all-purpose flour

dry white wine (or sherry)

chicken broth (plus up to 1/4 cup more for deglazing)

mushrooms (sliced or quartered)

scallions (parsley and crumbled bacon)

Select the Saute function.

Add butter to the inner pot and allow it to melt for a few seconds.

Add leeks, celery, carrots, and garlic.

Saute till vegetables have softened, about 3 to 5 minutes.

Add thyme, pepper, salt, nutmeg and saute for 30 seconds, stirring constantly.

Stir in flour and cook for 30 seconds to 1 minute.

At any point, if you find the Instant Pot is getting too hot, press 'Cancel' and allow to cool down and then resume cooking.

Press Cancel and add wine or sherry to deglaze the pot. Stir to remove brown bits from the bottom of the Instant Pot.  If not completely deglazed, add a tablespoon or two of broth.

Stir in remaining broth and mushrooms.

Close the lid and pressure cook on High Pressure for 1 minute.

Do a 10-minute Natural Release of Pressure (NPR).  If you&#039;re in a rush, a quick release (QR) would also be fine.  [Read More: The Different Pressure Release Methods]

Stir in chicken and cream.

Select Saute and allow the ingredients to simmer for a few minutes.

Garnish each serving with scallions, parsley and/or crumbled bacon.

In a medium sauce pan, melt butter over medium heat.

Add flour to the pan, and whisk together to making a roux (about 2 minutes) it should turn lightly brown.

Add the chicken broth and milk, and whisk together till lumps are gone.

Stir in garlic powder, onion powder, celery seed, pepper, Mrs. Dash Table Blend, Herb Ox chicken bouillon sodium free

Bring to a simmer and continue cooking and slow stir until mixture thickens, about 2 to 3 minutes.

Remove from heat and use as base for another recipe, a soup, or store after cooled.
