Learn how to make cream cheese at home with these easy instructions. All you need is three ingredients to make this rich cream cheese.

Homemade Cream Cheese

milk (I prefer whole milk)

lemon juice

salt, optional

In a heavy-bottomed saucepan, heat 4 cups of milk on medium-high heat. Stir milk constantly until it starts to simmer and then boil for a bit.

Reduce the heat to medium. Add the lemon juice 1 tablespoon at a time with a minute in-between. Continue cooking and you will see it curdling. 

Stir constantly till the mixture has separated completely, this should take just a few minutes. There will be a green liquid on the bottom and thick curdles on top. Remove from the heat. This all happens real quick. I am talking only a couple of minutes.

Place a strainer with a cheesecloth over a large bowl. Pour the curd mixture into the sieve. Let it strain and get rid of the whey, then let the curds cool for about 15 minutes.

Transfer the curds to a food processor or blender and mix until they are now a totally smooth and creamy creation. It will take around 3 to 4 minutes. Keep going if your cream cheese is grainy.

Add salt, mix, and taste. Add more if you want more flavor. Now is when you can add herbs too, like garlic or any other flavors you like.

Store this cream cheese in the fridge. Use it within 7 days, but if stored properly it will probably keep for up to 2 weeks.

Place softened butter into cake mixer and beat until white for 5 minutes, then add sugar and continue to beat.

Add vanilla and eggs one at a time. Sift in flour and add milk and beat quickly, but surely (10 beats is ideal). Do not over-mix.

Place into cupcake cases and bake for about 25 mins - or when spongy to touch - and pale golden brown.

Cover with passionfruit icing, then split and fill with freshly whipped cream, or leave as is.

For the icing, beat all ingredients together, thinning to the right consistency with passionfruit syrup.

Using a hand mixer on high speed, mix together the cream cheese and salsa until smooth and creamy.

Mix the chicken in at low speed until well blended.

Make sure the cream cheese is softened at room temperature to prevent the pie from being lumpy.

In a large bowl, place cream cheese, condensed milk, lemon juice, and vanilla. Mix until creamy and smooth.

Spread the cream cheese mixture into the pie crust, cover it with plastic wrap, and refrigerate for several hours.

Top the chilled pie with the chilled canned pie filling and return it to the refrigerator until completely chilled. Serve cold.

150 g Smoked fish, bones removed (Main)

g Cream cheese

½ Lemons, zest and juice

Tbsp Dill, chopped,

Place the fish, cream cheese, lemon and dill into a food processor. Whizz until well combined but still a little chunky.

Season with salt and pepper. Serve on Huntley & Palmers Wholegrain Rice Crackers with a dill sprig, baby gherkin and a squeeze of lemon.

Gluten-free reduced sugar mini Hummingbird cakes

Eggs,

300 ml Vegetable oil

Bananas, ripe, peeled and mashed (Main)

tsp Pure vanilla extract

tsp Ground cinnamon

280 g Spelt flour, or gluten-free flour mix (Main)

tsp Baking soda

Salt

pineapple

70 g Hazelnuts, toasted, skinned

Walnuts,

golden sugar

g Cream cheese, cold

Preheat the oven to 170C. Grease mini muffin tins.

Put the sugar, eggs, oil, banana, vanilla and cinnamon in a mixer with a paddle attachment (or you can use a hand mixer) and beat until all the ingredients are well incorporated. Don't worry if the mixture looks slightly split.

Slowly add the flour, baking soda and salt and continue to beat until everything is well mixed.

By hand, carefully stir in the crushed pineapple and chopped hazelnuts and walnuts (or use one kind of nut) until evenly mixed.

Using a teaspoon, fill each greased (silicon tins are great for these) mini muffin hole till three quarters full and bake for 20 minutes.

Cool in the tin for 5 minutes, then gently tip out on to a wire cooling rack.

When cool, fill a piping bag (fit with a #20 round tip, or cut a 1cm hole at the tip of your bag) with frosting and pipe a round blob onto each mini cake and top with a whole hazelnut, half a walnut or a piece of Sweet As freeze-dried pineapple.

Beat the icing sugar and butter together on medium speed until the mixture comes together and starts to clump.

Add the cream cheese and beat until it is completely incorporated. Turn the mixer speed up and continue beating until the frosting is light and fluffy. Take care not to overbeat, as it can quickly become runny.
