Slow Cooker Pot Roast is the ultimate comfort food! It's a super hearty, deliciously flavorful meal in one that's sure to satisfy even the pickiest of eaters. This is just classic, homestyle, stick to your ribs good food made with basic, real ingredients. Plus it's the best thing to come home to, cooked and ready to eat, after a long day.

Slow Cooker Pot Roast

Tbsp olive oil, (divided)

(3 lb) chuck roast*

Salt and black pepper

onion,

garlic cloves, (minced (1 1/2 Tbsp))

beef broth

Worcestershire sauce

Tbsp minced fresh thyme

rosemary

2.5 lbs small yukon gold potatoes, (left whole)

carrots

cornstarch

parsley

Heat 1 Tbsp olive oil in a large pot over medium-high heat. Dab roast dry with paper towels, season all over with salt and pepper.

Sear roast in pot until browned on both sides, about 4 - 5 minutes per side. Transfer roast to slow cooker.&nbsp;

Add remaining 1/2 Tbsp olive oil to pot. Add onion and saute 2 minutes, add garlic and saute 30 seconds longer. Pour onion mixture over roast in slow cooker.&nbsp;

Return pot to heat, pour in beef broth, Worcestershire, thyme and rosemary and cook about 15 seconds, just long enough to scrape up browned bits from the bottom of the pot. Remove from heat.

Layer potatoes and carrots over onion layer in slow cooker, pour beef broth evenly over top then season with salt and pepper.

Cover slow cooker and cook on low heat until roast and vegetables are tender, about 8 - 9 hours.

Remove roast and vegetables, shred roast (discard fat) and cut potatoes if desired.

If you'd like to thicken the broth and make a gravy, pour broth from slow cooker through a fine mesh strainer into a small saucepan**. Heat over medium-high heat. Whisk cornstarch with 3 Tbsp beef broth then pour into saucepan. Bring to a simmer, stirring constantly, let simmer 30 - 60 seconds.&nbsp;

Plate roast and vegetables, pour gravy over the top and sprinkle with parsley.

This slow cooker pot roast is a chuck roast simmered to tender perfection in a crock pot with carrots and potatoes. A comfort food classic that&#x27;s simple to make, and is great for feeding a crowd.

Yukon gold potatoes (whole or halved)

carrots (peeled, halved and cut into 2 inch pieces)

Heat the oil in a large pot over medium high heat. Season the roast generously all over with salt and pepper.

Place the meat in the pan. Cook for 4-5 minutes per side or until browned.

Place the beef broth, tomato paste, Worcestershire sauce, garlic, Italian seasoning, bay leaf, smoked paprika and salt and pepper in the bottom of a large slow cooker. Whisk to combine.

Arrange the onions, carrots and potatoes in the bottom of the slow cooker. Place the roast on top.

Lay the slices of bacon on top of the roast. Cover and cook for 6-8 hours on low heat.

Remove the meat and vegetables from the pot and arrange on a serving platter. Discard the bay leaf and bacon.

Pour the liquid from the slow cooker through a strainer into a medium sized saucepan. Skim any fat from the liquid. Bring the liquid to a simmer over medium heat.

Whisk together the corn starch with 3 tablespoons of cold water. Add the corn starch mixture to the pan of liquid. Bring to a boil and cook for 1 minute or until gravy has just thickened.

Pour the sauce over the meat and vegetables. Sprinkle with parsley, then serve.

The Perfect Crock Pot Roast

pkgs brown gravy mix

Spray your crock pot with cooking spray

Place your roast in your 6- quart crock pot (I used my Hamilton Beach Programmable Insulated Slow Cooker.)

Surround your roast with your potato wedges, onion halves and carrots

Mix together one of your brown gravy mixes with 1 c cold water

Pour over your roast and veggies

Cover and cook on low for 8-10 hours (total)

An hour before serving, mix together your remaining brown gravy mix and 1 c cold water

Pour over roast and veggies

Cover again for the last hour of cooking.

Rinse the roast and pat it dry. Mix salt, pepper, garlic powder, paprika, thyme and rosemary and rub into the roast on all sides.

Heat olive oil in a large skillet over medium heat. Brown roast on all sides; about 3-4 minutes per side.

Place carrots, onion, garlic and potatoes into the slow cooker. Pour in beef broth, then set the browned chuck roast on top.

Cover and cook on low 8-10 hours or on high for 5-6 hours.

Transfer the meat and vegetables to a serving dish. Combine water and cornstarch in a small bowl then pour into the slow cooker. Whisk together to combine. Cover and cook on high for 5 minutes, just enough to thicken the gravy.

Serve meat and vegetables smothered in gravy, with minced parsley for garnish if desired.

Heat 3 tablespoons of oil in a large frying pan. Sear roast on all sides in the frying pan. This seals in the juices and flavor of the meat and gives it a deep brown color on the edges.

Place the roast in the crockpot.

In a mixing bowl, combine brown sugar, vinegar, soy sauce, Worcestershire sauce, mushroom soup, half of the onion soup mix, and broth. Mix well and pour over the roast.

Put the carrots and potatoes in a resealable plastic bag.  Sprinkle the remaining half of the dry onion soup mix over the vegetables and shake the bag until they are coated.  Add the vegetables to the roast in the crock pot half way through the cooking time.

Place lid on the slow cooker and cook on high heat for 5-6 hours, or on low heat for 8-10 hours.

Twenty minutes of prep and a long day of slow cooking rewards you with tender, flavorful beef and vegetables and a delicious, already-thickened gravy you&#039;ll be eating by the spoonful!

All-Day Crock Pot Chuck Roast

beef chuck roast (well-marbled)

Kosher salt (to taste)

Black pepper (to taste)

all-purpose flour

unsalted butter

baby potatoes

red wine (or additional beef broth)

onion soup mix

bay leaves

Season the roast with salt and pepper to taste. Dredge the beef in the flour. Melt butter in a large skillet and brown the beef on all sides over high heat, about 4 minutes per side.

Transfer the roast in the slow cooker and add the carrots, onion, and potatoes.

Reduce the heat on the stovetop to medium. In the same skillet, stir in the tomato paste and cook 1 minute. Stir in the wine and deglaze the pan, scraping any browned bits from the bottom of the skillet. Simmer until the wine is reduced by half, 1-3 minutes.

Stir in the broth, onion soup mix, bay leaves, thyme, salt, and pepper to taste. Simmer for 3-4 minutes, whisking occasionally, until thickened.

Pour the gravy over the contents of the slow cooker. Cover and cook on high for 4-6 hours or low for 8-10 hours.&nbsp;

When cooking time is up, remove bay leaves and thyme and serve the roast with vegetables and gravy, garnishing with more fresh thyme if desired.
