This cucumber sauce is full of flavor and fast to make! Made in minutes with Greek yogurt, lemon, and dill, it's like a quick tzatziki.

Quick Cucumber Sauce

cucumber

garlic clove

lemon juice

full fat Greek yogurt

olive oil

dill*

salt

black pepper

Water

Peel the cucumber and coarsely grate it. Place it in a clean tea towel or dish towel and squeeze tightly over a sink to remove excess liquid.

In a medium bowl, stir together all ingredients, then stir in about 2 to 3 tablespoons of water, until the sauce is smooth and creamy (the water amount will vary based on the yogurt brand). Store for up to 1 week refrigerated.

Just to ask: instead of adding water, why not use the juice squeezed out from the cucumber? Is that a ‘no-no’?

Tzatziki sauce is a creamy yoghurt and cucumber dip packed with flavour which lifts up any Mediterranean dish. It can be used as an appetizer dip or condiment with grilled meat and veggies. And on top of all, it&#039;s very easy to make with just a few ingredients.

Homemade tzatziki sauce recipe

cucumber or 1 medium English cucumber (grated)

(or 500 g) Greek yoghurt

garlic (grated)

olive oil (extra virgin)

sea salt

½ teaspoon freshly ground pepper

dill

Grate

Slice the cucumber in half and take out the seeds. Grate the cucumber halves with the peels. Put the grated cucumber in a sieve to let the moisture drain. This can take a while, so you can also squeeze the moisture out by hand over the sink or in a cheesecloth.

Take a large bowl, add the Greek yoghurt, the grated and drained cucumber, the grated garlic, lemon juice, pepper, salt. Mix well.

Season

Taste and add more salt and pepper if necessary. Add the fresh dill and refrigerate.

I love tzatziki, it's so easy to make and it goes well with just about anything. I never added parsley, I'll try that. Thanks for the tip!

Using a box grater, grate the halved cucumber over the big holes. Remove to a mesh strainer and season with salt. Let the cucumber rest for 5 minutes, then squeeze the cucumber to get rid of excess moisture.

In a bowl, mix the mascarpone, Greek yogurt, garlic, lemon, and dill. Fold in the cucumber and taste for final seasoning. Refrigerate for at least 20 minutes to let the flavors develop.

Topped with a creamy greek salad, these easy ground chicken smash tacos are bright, flavorful, and juicy! The amazing feta cucumber sauce holds the veggies together so they don&#39;t fall out of the tortillas. Each bite tastes so fresh. The tacos are ready in less than 30 minutes, seared in a skillet or on a griddle.

For the sauce: Mix all ingredients together in a large bowl and refrigerate until ready to use. Can be made up to 3 days in advance.

For the tacos: Put ground chicken in a bowl. Add dry spices and salt evenly over the chicken and mix gently with fork or spoon to combine.

Portion the chicken out into 2 ounce portions, I use a cookie scoop to do this. Take one portion and using the back of a spoon, spread onto each tortilla, ensuring that the chicken goes all the way out to the edge.

Spreading chicken onto tortillas for smash tacos

Heat a large non-stick skillet over medium high heat. Add a teaspoon or two of olive oil. Then place one or two of your tortillas (if your skillet is big enough), meat side down, into the pan. Press down lightly with a spatula so that there is nice contact with the meat to the skillet. Cook for 3 minutes, then flip the tacos and cook for another 2(ish) minutes to make the tortilla golden brown. Remove from heat and set on cooling rack. Finish making as many tacos as you&#39;d like, or store the remaining meat in a sealed container in the fridge.

Take your chopped veggies and add to a bowl. Add about 3 tablespoons of the cucumber sauce and mix to coat. You can add more if you&#39;d like, until the veggies are saucy and creamy.

Made these last night and they were fun to make... easy but super flavourful! I have seen "smash tacos" before yet have not tried! I love that it is ground chicken and maybe a bit less fat :) Thank you for the inspiration. I will 100% be making these often.

These were so good! Made them for dinner last night. The chicken was juicy and the sauce with the salad was a wonderful contrast of flavor. I added a little chopped parsley to the chicken mixture because I had it on hand. So very yum and satisfying!
