Creamy Pineapple Cucumber Smoothie

cucumber

pineapple ((if frozen, omit ice))

ripe, peeled, frozen banana

light coconut milk*

filtered water

lime,

greens

ice cubes

Add cucumber, pineapple, frozen banana, light coconut milk, water, lime zest, lime juice, greens, and ice cubes to a blender and blend on high until creamy and smooth, scraping down sides as needed.

For a thicker smoothie, add more ice. For a thinner smoothie, add more liquid of choice. Taste and adjust flavor as needed, adding more lime juice or zest for acidity/brightness, banana or pineapple for sweetness, coconut milk for creaminess, and greens for more intense green color.

Serve immediately. Leftovers will keep covered in the refrigerator up to 24 hours, though best when fresh.

Slice off the ends of the cucumbers and peel. Chop into a few larger pieces.

Place the cucumbers, water, lemon zest, lemon juice and mint in a food processor or in a blender. Blend the ingredients for 2-3 minutes until smooth.

Set a strainer over a larger bowl and pour the cucumber juice into the strainer. Use a spatula to move the juice through the strainer until no more juice strains out. Discard the solids.

Enjoy the cucumber juice immediately, or store in fridge for up to 24 hours.

In the base of a high-speed blender, combine the coconut water, cucumber, pineapple, lime juice, mint leaves, and ice cubes.

Put the lid on and blend the ingredients for 30-45 seconds, or until the mixture is smooth and creamy.

I added frozen strawberries instead of ice cubes, MCT oil and a fresh egg. Still a little to sour for me.. Will try 1/2 avocado for a little creamier texture

This smoothie is an upgraded version of the one that was prescribed in my country to address colon issues. The difference is that instead of coconut water, the other one was made with plain water and one little piece of aloe vera gel added. The pineapple gives it a pleasant sweet flavor.

Cucumber Smoothie With Spinach

¼ cups unsweetened non-dairy milk

½ cup silken tofu or plain non-dairy yogurt

half of a large English cucumber seeds

baby spinach or mixed super greens

vanilla plant-based protein powder

pineapple banana

lemon or lime juice

palmful of your favorite nut

Blend

Combine all ingredients except ice in a high-speed blender.

Adjust

Start on low and gradually increase to high speed. Blend until completely smooth. Add as much ice as you like, and blend again.

Serve

Enjoy now or store the cucumber smoothie in an airtight jar to enjoy later the same day. Keep refrigerated.
