oz frozen whipped topping (thawed)

orange gelatin mix (just the powder)

oz of 4% fat cottage cheese (small or large curd will work)

mandarin oranges (drained)

mini marshmallows

Combine the thawed whipped topping and orange gelatin powder together in a large bowl and stir until combined.

Add in the cottage cheese, mandarin oranges and mini marshmallows and gently fold in until mixture is combined.

You can enjoy right away or chill covered in the fridge until ready to serve. The flavors tend to blend better after it's been chilled for at least 1 hour.

This Lime Jello Salad is an old fashioned dessert just like grandma used to make! Lime Jello mixed with cream cheese, crushed pineapple and a whipped topping. Light, fluffy and perfectly sweet and tangy, it's an easy no bake dessert that is perfect for picnics, cookouts, pitch ins or potlucks.

Lime Jello Salad

water

(6 oz or 2 small (3 oz each) boxes lime gelatin)

(20 oz, crushed pineapple)

brick (8 oz, cream cheese, softened)

tub (8 oz, whipped topping, thawed)

Add boiling water and jello in a large bowl. Mix well until completely dissolved.

Add pineapple and stir well.

Refrigerate for 30 minutes to cool to room temperature.

Remove about 1 cup of whipping cream and place into a piping bag fitted with a tip. Refrigerate.

In a separate bowl, combine cream cheese and remaining whipping cream and beat well with a mixer. Add to lime mixture and beat well until combined. Fold in nuts.

Pour into a 9x13 baking dish and refrigerate for four hours or overnight. Top with additional whipped topping before serving.

Best Strawberry Pretzel Salad (Dessert!)

strawberry jello mix

crushed pretzel pieces (any shape)

pecans

butter

granulated sugar (+ 1 tb, divided)

cream cheese (softened)

whipped topping (like Cool Whip)

Preheat oven to 350°F. Set out a 9 x 13 inch baking dish and a mixing bowl. Grease the baking dish and set aside. In the bowl, mix the strawberry jello with 2 cups boiling water, stirring until completely dissolved. Set aside to cool to room temperature.

Meanwhile, crush enough pretzels to fill 2 cups. You can chop them, place them in a zip bag and beat them with a rolling pin, to quickly pulse them in a food processor. Then chop the pecans.

Place the crushed pretzels, chopped pecans, ¼ cup + 1 tb sugar in the baking dish. Pour the melted butter over the top, then toss well to coat the pretzels. Press the pretzel mixture into a tight even layer and bake for 10 minutes.

Set out a clean mixing bowl. Use an electric hand mixer to beat the cream cheese  with the remaining ½ cup sugar, until light and fluffy.  Gently fold in whipped topping until completely smooth and even. Set aside.

Trim the tops off the strawberries, then thinly slice. Separate out one-third of the strawberry slices and finely dice (to fill in the cracks.) Then mix all the berries together.

Once the pretzel layer has cooled to room temperature, spread the cream cheese filling over it, in an even layer. Spoon the fresh sliced (and diced) strawberries evenly over the cream layer.

Pour the cooled strawberry jello mixture over the fresh strawberry layer. YOU DO NOT HAVE TO USE IT ALL. I usually pour about three-quarters of the liquid jello over the berries, so they are all completely coated in jello, but not floating in it. This creates a better berry-to-jello ratio, in my humble opinion. (It’s a matter of personal preference, so use as much of the jello as you like.)

Refrigerate until the jello is set, usually 2-3 hours. Cut and serve cold.

In a large saucepan, combine the water, tapioca pudding mix, instant vanilla pudding mix, and orange jello mix. Heat over medium heat until the mixture begins to boil.

Pineapple Pretzel Fluff

pretzels

butter, (melted)

granulated sugar, (divided)

cream cheese, (softened)

(20-ounce) can crushed pineapple, (drained)

(12-ounce) container Cool Whip, (thawed)

Preheat oven to 400 degrees. Line a 9x13-inch baking pan with parchment paper.

In a medium bowl, stir together pretzel pieces, butter, and 1/2 cup sugar. Transfer mixture to prepared baking pan. Press down gently on it and spread it out some. It does not need to cover the bottom of the pan.

Bake for 7 minutes. Let cool.

In a large bowl, use a hand-held mixer to beat cream cheese and remaining 1/2 cup sugar until smooth and creamy.

Fold in Pineapple and Cool Whip. Refrigerate for at least 1 hour.&nbsp;

Just before serving, crumble the pretzel mixture and mix into pineapple mixture. I like to reserve some of it to sprinkle on top.

Retro Sea Foam Salad Recipe

(798 ml) can pear halves (DO NOT DRAIN)

heavy cream

whipped topping (thawed (see notes))

Measure out one cup of pear juice from the canned pears into a large glass measuring cup (make sure it is microwave  safe!).

Heat the pear juice in the microwave until boiling.

Carefully sprinkle the lime gelatin over the boiling hot pear juice. Stir until the gelatin has dissolved completely with no granules remaining.

In a large bowl combine the cream cheese with the heavy cream. Beat until smooth.

Slowly add in the gelatin mixture, and mix until smooth and blended in completely.

Place the bowl in the refrigerator and chill until the mixture is partially thickened, around 40-50 minutes. The time needed for this step depends on how hot your water was.

Drain the remaining pears in the can and place the pears into a medium sized bowl. Mash the pears with a potato masher or fork until smooth.

Fold the pears and the whipped topping into the lime gelatin mixture.

Pour the gelatin into a mold or a large bowl. IF you have extra like I did when putting it into the mold simply put the rest into a small bowl.

Cover and chill the mixture in the fridge for 2-3 hours OR until it&#039;s set.

To unmold the salad, dip the bottom of the mold (which is actually the top when you flip it over, FYI)  in warm water for  5 seconds. Invert the onto a large serving plate and serve.

If you have made it in a bowl, simply scoop it out to serve!

lemon juice (~1 large lemon)

In a medium tall bowl, (I use my 8 cup measuring cup), using an electric mixer, whip cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up. Add the dry pudding mix and continue beating until well combined.

With the mixer running on low speed, slowly add the creamer, 1 tablespoon at a time, to the cream cheese mixture. Be sure the creamer is completely combined before adding another tablespoon.Repeat until all of the creamer has been added to the mixture and the mixture is completely smooth. Refrigerate while you prepare the fruit.

In a large bowl, combine lemon juice and bananas. Stir to coat bananas completely; pour off any excess lemon juice. Add strawberries and blueberries. Gently stir to combine. Fold the cheesecake mixture into the fruit.

Serve immediately, or cover and refrigerate until ready to serve.

I mixed the cheesecake pudding mix with the creamer in a small bowl. I whipped up the cream cheese in a larger bowl, then added the pudding mix to the cream cheese with no issues of clumping. It was completely smooth. 👍🏻

I love this recipe! It’s so summery and light! I’ve made it with and without the cream cheese (I have a friend who is lactose intolerant) and it turned out great both ways. I also used a white chocolate mocha flavored creamer, and it added a new layer of flavor. There have been raves all around every time I’ve taken it to a pot luck.
