This bright pink "nice cream" will have you dreaming of a tropical island vacation. This smoothie bowl is thick like ice cream, and while you might be thinking breakfast, it's a pretty amazing dessert as well. Juice bars in the US sell these as a "pitaya bowl."

Dragon Fruit Smoothie Bowls

banana (chopped and frozen)

mango (chopped and frozen)

dragon fruit (pitaya) (chopped and frozen)

coconut milk (canned, full fat)

coconut

fresh fruit

Add the frozen fruit to a food processor. Allow to sit at room temperature for about 5 minutes to gently thaw before beginning to process.

Add coconut milk, and then process until very smooth and the mixture begins to fluff up.

Use a spoon to push down any chunks of fruit that aren't processing.

This works the best in my food processor if I fill the bowl about half full. Any less or too full, and some of the fruit doesn't get blended well.

Top with fruit, nuts, coconut, or nut butter, or just enjoy like soft serve ice cream!

lime juice

scoop whey protein powder* (option, can sub plant based protein powder)

2-4 ice cubes (depending on how thick an icy you'd like it!)

Add frozen fruit, milk, lime juice and protein powder to a blender, and process until very smooth.

Add more almond milk as necessary to thin to desired texture.

A delicious, vibrant pink syrup made of tropical dragon fruit.

Pink Dragon Fruit Syrup

Pink dragon fruit

White sugar

Water

Put the pink dragon fruit, sugar, and water into a small pan.

Heat the pan and bring it to a simmer while gently stirring.

Cook the ingredients until the sugar completely dissolves.

Take the pan off the heat and let it cool down for some hours. Four hours should usually be enough, but you can also extend it to 6 or 7 hours to get more of that color into your syrup.

Strain the syrup into a bottle and store it in the fridge.

The syrup is good to use for up to 4 weeks when stored below 10C (50F).

Combine all ingredients in blender until fully blended. Add extra coconut water if needed to get desired consistency. Optionally, add up to 1/2 cup sugar for desired sweetness level.

Pour dragon fruit mixture into popsicle mold and add wooden popsicle sticks. Freeze for 4-6 hours, or until fully frozen.

Remove popsicles from mold and enjoy!

Only six ingredients are needed to make this gorgeous homemade popsicles.

Dragon Fruit is a tropical fruit that tastes similar to a cross between kiwi and pear. The fruit is also known as pitaya, red dragon fruit, pitahaya, or strawberry pear can be found in the fruit section of many grocery markets, or in the frozen fruit section. I used the bright pink frozen version by Pitaya Foods for this popsicle recipe (purchased from Costco), but any dragon fruit variety would work! Dragon fruit is knowns as a superfood, full of antioxidants and vitamin C.

Raspberries add sweet and tart flavor to this popsicle recipe and help to keep this popsicle brightly colored. You can use fresh or frozen raspberries in this popsicle recipe.

Freshly Squeezed Orange Juice adds some acidity, tartness, and sweetness to these healthy popsicles.

Freshly Squeezed Lime Juice adds more acidity and a fun flavor to the dragon fruit mixture.

Coconut water is used to help blend up the mixture, I added about 1/2 cup but you can add more or less depending on the texture and flavor you want. I used my favorite brand, Harmless Harvest, purchased from Costco, but any coconut water should do!

Sugar is an optional ingredient in these dragon fruit popsicles, but it helps to make the texture a little softer, while also adding extra sweetness.

Supplies Needed for Dragon Fruit Popsicles

Popsicle Molds I love these silicone molds, but there are so many great options to choose from that would all work great for dragon fruit popsicles.

Wooden popsicle sticks can be purchased on amazon, or some popsicle molds, like this one come with the popsicle sticks attached.

Blender most blenders should work for this recipe, I use my vitamix.

You will also need access to a freezer for this dragon fruit popsicle recipe!

How to make Dragon Fruit Popsicles

These homemade popsicles take hardly any prep time and are so easy to make. Simply combine ingredients in your blender, pour into popsicle molds, add popsicle sticks, and freeze for 4-6 hours or until completely frozen. Remove dragon fruit popsicles from mold and enjoy! Store in the freezer in air tight containers.

Enjoying the exotic flavor of dragon fruit has never been easier with our how-to recipe for homemade dragon fruit jam! Using just three simple ingredients, you can quickly whip up a batch of dragon fruit jam that will add a delightful flavor to your morning toast, sandwiches, and more.

How to Make Dragon Fruit Jam

Slice dragon fruit in half lengthwise, and scoop out the flesh, leaving the skin behind. Save the skin to use as a vessel for the cooled jam, if desired.

In a medium saucepan, combine the dragon fruit pulp and sugar. Bring to a simmer over medium heat and cook the dragon fruit until it has a jam-like consistency, stirring often to prevent sticking. This will take about 30 minutes. NOTE: if you find it’s not thickening enough after 30 minutes, make a cornstarch slurry (two tablespoons cold water and one tablespoon cornstarch – mix well before adding) and mix it into the jam and allow to cook a bit longer until thickened.

Once it’s thickened, add the lemon juice, stir, and continue to cook for two more minutes.

Remove from heat and allow to cool completely before transferring to a glass jar with a lid. Store in refrigerator for up to two weeks.

Just makes this jam. Super quick and easy! TY
