Preheat oven to 425F.

For the dry rub, mix all the ingredients together in a small bowl.

Rub all over both sides of the ribs. Lay ribs in a large roasting pan (cut in half if you need to, to make them fit). Add the water and cover the whole  pan tightly in foil.

Bake 1 &amp; 1/2 hours, until meat is very tender. Check occasionally that the water has not evaporated away, as this can burn your ribs.

Preheat grill or broiler. Grill or broil 6 to 8 minutes, watching carefully so that they don&#x27;t burn. You can brush some of the BBQ sauce on before grilling or after, that&#x27;s up to you.

Excellent. I did a quick search for the run when the NYT Cooking site did not leave a recipe. I had a bottle of the rub in my hands at the store. I realized I had all the ingredients at home. Put it together in 5 minutes, marinated it in plastic wrap at room temperature for an hour. A two-pound tri-tip was finished by two discerning teenagers and my wife. Everyone was happy with it. I did cut the cayenne down to 1/4 teaspoon and used a tablespoon of dry rosemary instead of fresh.

We rubbed a tri-tip with this recipe and smoked it on our Traeger. Simply put... Best tri-tip I've ever had!!! A little secret though, we doubled the cayenne. This is one for the record books! Thanks Hilda.

OK....This recipe is AMAZING!! The only additional thing I do is add a splash of apple cider vinegar to the water to add some zing. Every time we make ribs, we are taken aback that they are keto approved!!
