Easy Dumpling Soup

chicken broth

soy sauce

ginger

dumplings

sesame oil (+ more if needed)

green onions (diced)

Using a large pot, bring the chicken broth, soy sauce and grated ginger to a boil.  After boiling for a few minutes, carefully add in your frozen dumplings. Let the dumplings cook for about 4 minutes, or until warmed through.  Turn off the heat.

Drizzle the sesame oil over the top and scatter the diced green onions over the top as well. Serve and enjoy immediately.

Easy 10-Minute Wonton Soup

chicken stock

water, divided

salt

soy sauce (or regular soy sauce)

sesame oil

fresh cilantro, chopped

green onions, sliced

In a small saucepan, bring chicken stock and 1 cup of water to a boil over medium-high heat. Add wontons and salt. When the wontons float to the top, add a cup of cold water.

Once wontons float to the top again, add soy sauce and sesame oil.

Scoop wontons out into a bowl and top up with soup base. Garnish with cilantro and green onions. Enjoy!

How to Fold Wontons

This easy Potsticker Soup combines Thai Coconut Curry flavors,  potstickers and the freshest ingredients!

Thai Potsticker Soup

olive oil

garlic (minced)

onion (diced)

red bell pepper (diced)

potato

red curry paste

(14 ounce) can unsweetened coconut milk

vegetable stock

(13 ounce) package potstickers

spinach

lime

cilantro (for garnish)

To make the soup, heat olive oil in a large stockpot or Dutch oven over medium- high heat. Add the garlic, onion, red bell pepper and sweet potato. Cook, stirring occasionally, until softened, about 3 to 4 minutes.

Stir in the curry paste and cook for an additional minute. Add the coconut milk and vegetable broth. Whisk to combine.

Bring the mixture to a boil, add the potstickers and reduce heat to a simmer. Cook, until slightly thickened, about 6 to 8 minutes. Add the spinach and lime juice and stir until the spinach is wilted.

Garnish with fresh cilantro and serve immediately.

Easy Dumpling Soup is the perfect quick dinner because it’s endlessly versatile, insanely budget-friendly, and can be made in 15 minutes.

Combine the vegetable broth, soy sauce, toasted sesame oil, and the white parts of a sliced green onion in a medium-sized pot. (If using, also add the fish sauce, pre-cooked proteins or tofu, and any fresh or frozen vegetables that need time to soften.)

Bring the broth up to a boil on medium-high heat. Once boiling, add the dumplings.

Cover the pot and allow the soup to come back up to a boil. Boil the dumplings for about 2 minutes or until they are cooked through. (Consult package directions.)

Turn off the heat and stir in the green parts of the sliced green onion and a handful of spinach.

Split the soup into 2 serving bowls and top with any desired condiments.

Easy Asian Dumpling Soup

vegetable broth

head cabbage, (chopped)

sriracha sauce (to taste)

(16-ounce) package dumplings ((I used Trader Joe's Thai Vegetable Gyoza))

green onions, (thinly sliced (green part only; reserve whites

Bring vegetable broth to a boil in a medium saucepan over high heat.

Add carrots and cabbage to broth, then return to a boil. Reduce heat to a simmer and cook vegetables are tender, about 5 - 10 minutes.

When veggies are tender, add soy sauce, sesame oil, and sriracha to soup. Stir well. Season with additional soy sauce, if necessary.

While vegetables are cooking, prepare dumplings according to package directions. (I microwaved mine, which took about 5 minutes.)

To serve, divide dumplings between four large soup bowls. Ladle broth and vegetables over the top and sprinkle with green onions. Enjoy!

This Hot and Sour Dumpling Noodle Soup is inspired by the classic Chinese wonton soup and Sichuan hot and sour soup, that gets its distinct acidity from Chinese black vinegar. This is almost like eating dumplings and noodles in a big bowl of aromatic dumpling dipping sauce packed with savory, acidity, and spicy flavors—so it’s almost addictive!

Hot and Sour Dumpling Noodle Soup (Vegan)

1.5-2 tsp gochugaru (adjust according to desired heat (see notes))

tbsp minced garlic

tsp sugar (to taste)

tbsp neutral cooking oil (avocado, sunflower, grapeseed, etc)

soy sauce (to taste)

tsp dark mushroom soy sauce

Chinese black vinegar

tsp white pepper

sesame seeds

6-8 frozen dumplings (I used frozen Chinese vegetable dumplings)

portion wheat noodles

water

tsp sesame oil (to finish)

green onions

Crispy shallots

In a large heat proof bowl, place the gochugaru or chili powder, minced garlic, and sugar. Mix well.

Heat a small or medium pot over medium heat. You can use the same pot to cook the dumplings and noodles.

Add the oil. Heat the oil over medium heat until small bubbles start to appear. You can add a tiny piece of garlic. If the garlic immediately sizzles, the oil is hot enough.

Turn off the heat and immediately pour the hot oil over the gochugaru-sugar-garlic mix. Mix well.

Add the soy sauce, dark soy sauce, Chinese black vinegar white pepper, and sesame seeds. Feel free to adjust your taste.

SOUP BASE

In the same pot, add water. Leave the water to come to a boil.

Once it boils, add the frozen dumplings or dumplings of choice.

Leave to cook until the dumplings float up. This will depend on the cooking time of your dumplings.

Remove the dumplings from the pot and then drain any excess water.

Transfer the dumplings to the hot and sour soup base.

In the same pot, cook the noodles until still very chewy and still has a bite. Do note that the noodles will still cook from the residual heat and the hot water that will be added later on, so don’t overcook your noodles.

Drain the noodles from the water and add in the bowl with the dumplings.

COOK THE DUMPLINGS AND NOODLES

Carefully scoop 1 to 1.5 cups of the hot dumplings/noodle water from the pot. Pour into the bowl with the noodles and dumplings.

Mix to evenly distribute the soup base into the liquid.

Finish with sesame oil and top with green onions and fried shallots.

Enjoy immediately while hot. The dumplings and the noodles will continue to soak the flavors from the soup base, making them even tastier!
