Instant Pot Beef Enchiladas

beef broth

tomato sauce (1 can)

onion powder

garlic powder

chili powder

cumin

paprika

salt

oregano

cayenne

beef chuck roast

corn tortillas (small)

Whisk together all ingredients except the beef roast into the pressure cooker.

Add the beef roast.

Turn the vent to the sealing position. Turn on the pressure cooker to manual high pressure for 65 minutes.

Release the pressure when the time is up.

Remove the beef, saving the enchilada sauce, and shred the beef.

Place the tortillas in a single layer on a sheet tray. Broil until lightly charred and golden brown. Remove from the oven.

Preheat the oven to 350ºF.

Spread 1/2 cup of the reserved enchilada sauce into the bottom of a 9x13 baking dish.

Dip a corn tortilla into the enchilada sauce.

Fill with 3 tablespoons of the beef mixture and 2 tablespoons cheese.

Roll up the enchilada. Place into the sauce. Repeat until all the enchiladas are made.

Pour remaining enchilada sauce over the top of the finished enchiladas.

Sprinkle remaining cheese over the top fo the finished enchiladas.

Cover with foil and bake for 20 minutes, or until they are bubbly and the cheese is melted.

Beef Enchiladas Recipe

roast beef (shredded, cooked)

Preheat the oven to 350°F.

In a medium bowl, mix together the shredded beef, green chilies, corn, and ½ cup enchilada sauce. Spread ½ cup of enchilada sauce into the bottom of a 9 x 13 baking dish.

Scoop about ⅓ cup of filling into the middle of each of the tortillas, and sprinkle with cheese (reserving about 1 cup of cheese for the top of the enchiladas). Roll each tortilla up and place them seam-side down in the prepared baking dish.

Pour the remaining enchilada sauce over the top of the rolled-up tortillas, spreading to cover the tortillas completely. Sprinkle with the remaining shredded cheese.

Bake for 20-25 minutes, or until the cheese is melted and the sauce is bubbling. Serve hot.

These Hearty Ground Beef Enchiladas are my go-to recipe on busy nights. I always have the ingredients on hand for beef enchiladas, and I make them extra filling by adding beans to the mixture.

Hearty Ground Beef Enchiladas Recipe

red enchilada sauce (2 (10 oz cans))

salsa (divided)

flour tortillas (10 inch size)

Heat oven to 350 degrees.

In a large skillet, brown the ground beef and onions over medium heat until meat is no longer pink; drain well.

Stir in the beans, one can of enchilada sauce and 1/2 cup salsa; set aside.

Top each tortilla with 2/3 cup beef mixture.

Roll up and place seam side down in two greased 9 x 13 inch baking dishes (8 enchiladas per pan).

Drizzle with the other can of enchilada sauce and remaining salsa.

Sprinkle with cheese and olives.

Bake uncovered for 20-25 minutes.

Can Easy Beef Enchiladas be made ahead?

Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish or pan with cooking spray.

In 12-inch nonstick skillet, cook beef, onions and bell pepper over medium-high heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in 1 cup of the enchilada sauce and the chiles; heat to simmering, then remove from heat.

Spread 1/2 cup of the enchilada sauce evenly in baking dish. Spread about 1/2 cup beef mixture down center of each tortilla; sprinkle each with 2 tablespoons cheese. Wrap tortillas tightly around filling, placing each seam side down in baking dish. Top with remaining enchilada sauce. Sprinkle with remaining cheese.

Bake 23 to 27 minutes or until hot and bubbly (at least 165°F in center). Let stand 5 minutes before serving.
