My kids love this recipe. I cut the recipe at 1/3rd per person and made this for 2 people 2 slices each. For the cinnamon sugar, I mixed 1/2 cup of sugar and 2 teaspoons of cinnamon and had leftover.

Artichoke Shakshuka

olive oil

yellow onion, thinly sliced

red bell pepper, thinly sliced

(24 ounce) jar marinara sauce

artichoke

Kosher salt and black pepper

crumbled feta or goat cheese

1. Preheat oven to 375 degrees F. with rack in center.&nbsp;2. Heat olive oil in a 10 inch cast-iron skillet over medium-high heat. When oil is shimmering, add onion and bell pepper and sauté until beginning to soften, about 5 minutes. Remove pan from heat and add marinara sauce and artichoke hearts. Crack eggs into sauce and sprinkle with generous pinches of salt and pepper. Sprinkle crumbled feta or goat cheese over pan.&nbsp;3. Transfer pan to oven and bake until egg whites are set but yolks are still slightly runny, 15 to 20 minutes. Scatter parsley over top before serving warm from skillet, family-style.

Whisk

In a large bowl, whisk together the eggs, milk, and salt. Set aside.

Cook

Heat the butter in a large skillet over medium heat. Once heated, add in the onion, bell peppers, mushroom, and a pinch of salt. Cook for a few minutes until softened. Stir in the tomatoes and bacon.

Scramble

Pour in the egg mixture. Gently scramble the eggs to your liking. Top with cheddar cheese and chives.

Croissant Croque Madame with Béchamel Sauce

croissants

Whole grain mustard

(180 g) gruyere cheese, grated

ham,

Chives, chopped

tbsp (35 g) salted butter

(40 g) all-purpose flour, spooned and leveled

(500 ml) whole milk

nutmeg

tsp black pepper

tsp salt

In a small saucepan over medium heat, melt the butter. Once melted, add the flour and whisk until it reaches a thick paste.

Gradually add the milk 1/2 cup (125 ml) at a time, whisking out any lumps. Continue to add the milk, whisking until everything is combined. Let simmer for 5-10 minutes or until it thickens. 

Mix in the nutmeg, pepper, and salt. Set aside.*

For the Béchamel Sauce:

Line a baking sheet with parchment paper and turn on your oven&#8217;s broiler.

Cut the croissants in half and spread a thin layer of whole grain mustard on the inside of the top half.

Place each croissant cut side up on the baking sheet and spread 1/2 cup (45 g) of gruyere over both halves of each croissant.

Place 2 slices of ham on the bottom side of each croissant then put everything under the broiler just until the cheese is melted. This should take only a few minutes, but be sure to keep an eye on it so it doesn&#8217;t burn. Remove from the broiler and begin cooking the eggs.

Crack the eggs into a nonstick pan over medium heat. Cook for about 3 minutes or until the white has set.* Remove from the pan and place on the bottom half of the croissant.

Close the sandwich with the top half of the croissant and pour over the béchamel sauce. Top with chives and serve immediately.

Classic French Toast Recipe

milk (see recipe notes)

sugar

cinnamon (optional)

½ tsp ground nutmeg (optional)

tsp vanilla extract

In a shallow dish, whisk together the eggs, milk, sugar, salt, vanilla, and spices (if using). Whisk until the eggs have no “gloopy” texture. You could also place the ingredients in a jug and use an immersion blender for a few seconds to mix the eggs well.

Slice a stale loaf of brioche bread into 1 inch thick slices. If you’re using my brioche recipe, note that I can slice one loaf into 6 - 7 slices (not including the edges).

Preheat a large non-stick skillet or griddle over medium heat (or medium high if your stove doesn&#39;t run too hot).

When the pan is hot, soak one slice of bread in the egg-milk mixture. Dip one side in the mixture and keep it immersed for about 3 - 5 seconds (depends on how stale and/or thick the slices are).

Flip over the bread slice, and immerse the other side for the same length of time.

Remove the slice from the egg mix, and allow excess egg mixture to drip back into the dish.

Place some butter and/or oil in the skillet. I like to add about 1 tbsp of butter for 2 slices of bread.

Once the butter is melted, and the pan is hot, place the bread slices in the pan. Make sure the pan isn’t over-crowded, so that the bread slices achieve proper caramelization.

Cook the bread slices for about 3 - 4 minutes on the first side. Flip over, and cook the other side for another 3 - 4 minutes, with a little more butter.

Once both sides of your French toast have caramelized and cooked properly, place the toast on a wire rack (until you have cooked all of your French toast). Repeat this process with the remaining slices of bread.

Serve the French toast warm with whipped cream, fruits, and maple syrup.
