This simple carrot salad with raisins gets an upgrade with a slightly spicy, slightly sweet, and very addictive sauce. It brings out the sweet freshness of the carrots and makes the whole dish sing. We are tempted to pour it over all of our salads from here on out.

Moroccan Carrot Salad

carrots,

golden raisins

c. peanuts

c. cilantro

green onions, thinly sliced

c. extra-virgin olive oil

harissa

honey

lime

garlic,

ginger

cumin

Kosher salt

black pepper

Five-alarm spicy!!!  If you're new to using harissa, start with just a pinch and taste before you decide to add more.  I made the recipe as written, and apparently my store-bought harissa was highly potent.  Our mouths were on fire.  The next time I adjusted the recipe to about 1/8 tsp of harissa and 1 1/2 Tbsp honey, and everyone thought it was delicious -- just the right combination of sweet, smoky, and spicy.  I'll be putting this in our regular rotation with the adjusted measurements.

Carrot Fries Are The New Sweet Potato Fries

This carrot salad is fresh and healthy, with a tangy vinaigrette dressing! It's easy to make, ideal for cookouts, potlucks, as a side dish, or for lunch.

Simple Carrot Salad

white wine vinegar

Dijon mustard

sugar

salt

olive oil

carrots, julienned (3 cups)

green onions

parsley

In a medium bowl, whisk together the white wine vinegar, Dijon mustard, sugar or maple syrup, and kosher salt. Gradually mix in the olive oil.

Julienne the carrots using a julienne peeler, with the grating blade on a food processor, or using the large grate holes of a box grater (this will do but the pieces aren&#8217;t as pretty).

Thinly slice the green onions. Finely chop the parsley.

Add all the vegetables to the bowl with the dressing and stir to combine. Serve immediately or refrigerate for up to 3 days.

If you&#39;re looking for a quick and easy, no-heat side dish, this Classic Carrot Raisin Salad is just the thing! You can use pineapple in this recipe, or omit it, and I&#39;m also including 3 different options to make this recipe without mayo! Yields 8 finished cups.

Classic Carrot Raisin Salad

carrots (shredded) (4 cups)

raisins

pineapple chunks ((optional))

mayo ((Greek yogurt, sour cream,

lemon juice

maple syrup

Grate

Start by peeling and grating fresh carrots. You can use a box grater or a food processor with a grating attachment for quick and consistent results.

Prepare

In a mixing bowl, whisk together mayonnaise, maple syrup, lemon juice, and salt until you have a smooth and creamy dressing.

Combine

Add the grated carrots and raisins to the dressing. Gently fold them in until they are well coated with the dressing.

Chill

Cover the salad bowl and let it chill in the refrigerator for at least an hour. This resting time allows the flavors to meld and the salad to achieve its full potential.

Enjoy

When you&#39;re ready to serve, give the salad a final toss and enjoy!

I've never made carrot salad; however, it is a childhood favorite of my husband. Therefore, I wanted a classic recipe and this was it. The recipe is easy, flavorful, and while I didn't include the pineapple, because his mother didn't include that particular fruit...again, I was trying to go "old school"...and this recipe totally met my/his expectations.
