A vibrantly beautiful salad that’s truly fit for a celebration! You can even shape it like a gorgeous Christmas wreath for a showstopping, edible centerpiece! Pretty greens are studded with crunchy pistachios, sweet and tangy pomegranate arils, and juicy oranges. Topped off with a sprinkling of creamy goat cheese and a refreshingly light champagne vinaigrette. A perfect party salad!

A Nordic tradition that you can easily prepare at home.  Give Swedish Glögg (Mulled Wine) a try and discover why the locals love it so much!

Glögg Recipe (Swedish Mulled Wine)

red wine, ((750 ml each))

orange peel

cinnamon

pcs star anise

pcs cardamom pods

sugar

raisins ((for serving))

almonds, (blanched (for serving))

Place a medium-sized to a large saucepan over low heat and pour the wine into it.

Add the peels, cinnamon, star anise, cardamom, and cloves.

Add the sugar and mix until completely dissolved.

Continue simmering for 15 minutes -- but do not let it boil.

Take it off the heat, transfer the wine into a bottle or jug, and let everything soak for 2 to 24 hours.

Preparing Swedish mulled wine:

Strain the spices and heat the wine (again, do not boil).

Pour into serving glasses or mugs.

Serve Swedish glögg with some almonds and raisins.

No Christmas celebration in Sweden is complete without some Glögg (or Mulled Wine).  If you haven't tried it yet, no worries, there is no need to travel to Northern Europe to enjoy it.  You can easily make it at home!

Swedish Mulled Wine (Glögg)

Sweet, tangy, spicy, and creamy! This dip is perfect during the fall and winter when cranberries are abundant!

Cranberry Cream Cheese Dip

cranberries

green onions (chopped)

cilantro

jalapeno pepper

sugar (more

lemon juice

cumin

cream cheese (room temperature)

Place the cranberries in the bowl of your food processor or blender. Pulse to give them a rough chop. Add the green onions, cilantro, jalapeno, sugar, cumin, lemon juice, and salt. Pulse until well combined and finely chopped, but not pureed. Refrigerate for 4 hours (longer if desired, up 24 hours).

Spread the cream cheese on a serving plate or pie plate in an even layer. Top with the cranberry mixture.

Serve with crackers or tortilla chips.

I have made this quite a few times for gatherings.  It's always been a big hit.  The flavors all go so well with each other.  Made exactly as recipe states.  No changes needed!

Mini Christmas pudding jellies are a jelly version of a classic Christmas dish, and are perfect for individual servings.

Mini Christmas pudding chocolate jellies recipe

water

12.00 gm gelatine powder

(1/2 cups) caster sugar

dark chocolate, chopped

Arnott’s Choc Ripple biscuits

white chocolate, melted

Spearmint leaf lollies, chopped, to decorate

Red M&M’s Minis, to decorate

Step 1

Place the 125ml (1/2 cup) water in a small bowl. Sprinkle with the gelatine and stir until well combined. Place the sugar and 250ml (1 cup) water in a saucepan over medium heat. Cook, stirring, for 2 minutes or until the sugar dissolves. Bring to the boil then remove from heat. Add the chocolate and stir until melted and smooth.

Step 2

Pour the gelatine mixture over the warm chocolate mixture. Stir until the gelatine dissolves. Place in the fridge, stirring occasionally, for 30-40 minutes or until slightly thickened.

Step 3

Stir the mixture until smooth. Place a 6-hole 100ml (7cm diameter) silicone dome mould on a baking tray. Divide the mixture evenly among the holes. Place a biscuit on top of each one. Place in the fridge for 6 hours or overnight until set.

Step 4

Gently loosen each jelly from the mould by pulling it away from the edges. Place a serving plate or board larger than the dome mould on top and flip so the mould is upside down on top of the plate or board. Gently squeeze each mould to release the jellies.

Step 5

Drizzle a little white chocolate over each jelly then top with spearmint leaves and M&M’s to decorate.
