A simple salmon dish, parcelled up to seal in the flavours. With creamy mascarpone and fresh leeks, this fish supper is easy and rich in omega-3

Salmon & leek parcel

leek(about 3 small ones), thinly sliced

mascarpone

tbsp chopped dill, plus 1 tsp

salmon

capers

baby potatoesand wilted spinach, to serve (optional)

Heat oven to 200C/180C fan/gas 6. Place two sheets of baking parchment (large enough to wrap up each salmon fillet) on your work surface.

Put the leeks in a pan with 6 tbsp water, cover and bring to the boil. Cook for 5 mins until the water has been absorbed and the leeks are almost tender. Stir in the mascarpone, 1 tbsp dill and some seasoning.

Spoon half the creamy leeks into the middle of one sheet of parchment and place a salmon fillet on top, then repeat to make a second parcel. Sprinkle over the lemon zest with a squeeze of juice, then scatter over the capers and the remaining 1 tsp dill.

Bring the parchment up over the fish and join the two edges together by folding them over several times down the middle. Do the same with the ends and place the parcels, spaced apart, on a baking sheet.

Bake for 12-15 mins, depending on how well done you like your fish, then carefully tear open the parcel. Serve with lemon wedges for squeezing over, baby potatoes and wilted spinach, if you like.

Red Snapper Fillets

Sea Salt and Black Pepper

Pan Seared Red Snapper and Shrimp in a Lime Margarita Sauce

Season Red Snapper with Sea Salt and Black Pepper

in a large saute pan add olive oil and allow the pan to get hot before adding snapper

Add Snapper to the pan and sear the top until nicely brown

Place snapper in a baking dish with a little water and place in a 350 degree preheated oven for 15 minutes to finish cooking

In the same pan add additional oil if needed, then saute tomatoes and shrimp till almost fully cooked and remove from heat.

in a small saute pan, add 1 tbsp of butter and after it melts, add in brown sugar and blend well.

add in lime juice and tequila, allow the alcohol in the tequila to burn off.

add in the last tbsp of butter and allow the mixture to thicken and remove from heat

When snapper is done, remove shrimp from saute pan adding to the lime sauce and gently reheat

serve Red Snapper (removing bottom skin when taking out of the baking dish) and arrange tomatoes around the fish and top with shrimp and margarita sauce

Top with lime zest and chopped cilantro

Parmesan Crusted Cod

panko bread crumbs

Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.

In a medium bowl, combine the panko, parmesan cheese, lemon zest, garlic powder, parsley, salt and pepper. Add the olive oil and toss to combine.

Arrange the cod fillets on the baking sheet and season all over with salt and pepper. Divide the panko topping among the fillets, pressing lightly so that it adheres.

Place in the oven and bake for 10-12 minutes or until the topping is lightly browned and the fish is mostly opaque (just cooked through), with a trace of translucence in the center (cut into a piece to check). Cooking time will depend on the thickness of the fillets. Serve immediately.

Love this recipe! Definitely a favorite of ours. I add a big splash of dry white wine and it takes the sauce to the next level!

I did not feel the cook time was long enough, plus when following these directions (and not dumping out the excess olive oil before adding the butter and other ingredients) the sauce was very oily and not creamy like I had expected. My husband enjoyed this more than I did. I doubt I will make it again.

This was a pleasure to make! Absolutely fun, and directions were clear and it rolled ! I love recipes that work like this one does. I felt that as one thing was simmering I had the right amount of time to prep the next as my husband prepped the accompanying Veges and set the table. Clock work to the max.  But better than that, YES I felt like I should throw flour on my face like I had been working for hours on this. It was so quick! Mouth watering.  My fresh basil was a star, even though the salmon enjoyed was delicate tasting.   I might cut the cream next time as I have an agreement with cream that we agree to disagree ( I am slightly unaccepting).   As a gluten free eater, this salmon recipe is a keeper! This Tuscan Salmon Is The Quick And Easy Dinner You Should Make Tonight

Simple pan fried cod with butter and lemon. This light and healthy dinner comes together in minutes. One of the best easy ways to cook fish!

Pan Fried Cod

salt

Pat the cod fillets very dry. Season both sides with salt and pepper.

Heat

Heat the oil a 10-inch or similar cast-iron or heavy-bottom skillet over medium-high heat. Once the oil is hot and shiny (but not yet smoking), gently lower the fish into the oil, moving away from your body with your motion in case the oil splatters. Lower the heat to medium.

Cook

Let the fish cook undisturbed on the first side for 2 to 3 minutes, until the underside is nicely golden.

Flip

Gently flip the cod over. A flexible, thin metal spatula (such as a fish spatula) works best. The cod might stick a bit at first, but work gently and firmly and you'll get it. Place the butter in the pan. With a spoon, spread the pat around the fish. Tilt the pan away from you so that the butter pools, then baste the fish with the butter a few times.

Continue cooking on the other side until the fish is opaque, flakes easily with a fork, and reaches 145 degrees F on an instant read thermometer, about 2 additional minutes.

Squeeze

Sprinkle with fresh herbs and squeeze the lemon over the top. Enjoy immediately, with an extra squeeze of lemon if desired.

This bright and creamy seafood soup comes together in just a few easy steps! It&#39;s a light, yet hearty stew full of flaky fish and tender shrimp. Throw together this simple meal when you&#39;re craving something cozy, fresh, and satisfying!

Seafood Soup

celery (diced)

carrots (diced)

onion (diced)

smoked paprika

½ pounds firm white fish (see Notes)

Heat olive oil in a large pot over medium heat then add in the celery, onion, and carrots. Cook until soft, about 4-5 minutes.

Add in the garlic and cook for 1 minute before stirring in the smoked paprika, salt, and cayenne pepper.

Pour in the vegetable stock, tomato sauce, and coconut milk, then bring to a boil before reducing to a simmer for 30 minutes.

Add in the fish, cover pot with lid, and cook for about 8 minutes. Add shrimp, cover again, and cook 2 minutes or until shrimp and fish are cooked through. Serve immediately.

In a large bowl, whisk together flour, garlic powder, onion powder, chili powder, and cumin. Whisk to combine.

Great recipe, definitely up the spices. I also used a little but of Colombian corn flour for the crust. I also made a white wine, olive oil and garlic sauce to fry the fish rather than just the oil. I served with yellow squash and white rice.

Best way to make Talapia taste great. I used lots of Tajin Clasico with lime seasoning.  Nice and crunchy and  lots of flavor..  i used Kirkland frozen Talapia and thawed before cooking.

Great result! This was simple and wonderful flavor.  I halfed the recipe for two large filets, and there was enough to do a couple more.  I liked the flavor, but I’m willing to half the flour and keep seasoning the same for a full batch.  Nice texture.

You NEED These Perfect Fish Tacos For Your Next Taco Tuesday

This one-pan baked flounder recipe with garlic, Parmesan cheese, and vegetables is easy and so delicious (thanks to a bold and lemony sauce with Mediterranean spices!). If you can&#39;t find flounder, any mild white fish would work, such as Dover sole, halibut, or branzino filet will work. Choose thinner fish filets if possible. Serve baked flounder with potatoes or greens like broccoli or a green bean salad.

Easy Garlic Parmesan Baked Flounder Recipe (20 mins)

flounder fillet, (sole fillet will also work)

zucchini,

Kosher salt and black pepper

garlic cloves, (minced)

Heat the oven to 350 degrees F.

Pat the fish dry and season it well with kosher salt and black pepper on both sides. Arrange the fish in a large pan and add the zucchini and onions next to it and season them with salt and pepper.

In a small mixing bowl, add the garlic, spices, lemon juice, and olive oil. Whisk to combine.

Pour the sauce all over the fish and vegetables.

Bake in the heated oven for 7 to 10 minutes, then carefully remove the pan and sprinkle the grated parmesan all over the fish and vegetables. Return the pan to the oven and bake for another 3 to 5 minutes or so until the fish is flaky and the cheese has melted some. (Flounder fillets are thin and should not take too long to cook. Be careful not to overcook them).

Preheat grill / broiler on high.

Combine the Crumb ingredients and mix well to combine.

Sprinkle both sides of fish with salt and pepper, then spread the mustard on the top of each fillet (top only).

Press the mustard smeared side of the fish into the crumb mixture. Press down firmly to make it stick. Then spray with oil (for extra golden crumb!).

Drizzle 1/2 tbsp oil in a skillet and preheat on the stove over high heat.

Once skillet is hot, place the fillets in the hot pan then place under the grill / broiler (about 5&quot;/15cm from the heat source) for 5 - 6 minutes until the crumb is golden and the fish is cooked, rotating as required. Fish should flake in centre once cooked.

Oven option: bake at 220C/390F for 10 - 12 minutes, then finish under the grill/broiler on high to make the crumb golden.

Serve immediately with lemon wedges!

Place a rack in the center of your oven and preheat the oven to 425 degrees F.

In a small bowl, add the Land O Lakes® Butter with Canola Oil, garlic, parsley, shallot, 1/2 teaspoon salt, and pepper. Zest the lemon right into the bowl (reserve the whole lemon). With a fork, mash the butter with canola oil to smoothly combine all of the ingredients. Cut the whole lemon into thin slices (you will need 8 slices total for the recipe).

Assemble the Packets: Tear off 4 squares of parchment that are at least 12 inches on each side. Lay the sheet flat on a work surface. Place 1 cup of salad greens in the center of a sheet, leaving space at the top and bottom. On top of the greens, place 1 fish fillet so that it runs vertically top to bottom. Lightly sprinkle the fish with salt. With the back of a small spoon, spread one-quarter of the butter mixture on top of the fish. Lay 2 slices of lemon on top of the butter mixture and scatter 6 tomato halves around the fish.

Fold the Parchment Packets: Lift the right and left sides of the paper up and towards the center, directly above the fish. Touch the two sides together and tightly roll them, folding as you go, until you reach the fish. Now, roll and crimp the top and bottom ends, rolling them towards the counter, away from the center of the fish. When you reach the end, tuck the end underneath the fish. Place the packet on a rimmed baking sheet, using the weight of the fish to hold the ends in place (you don&#x27;t want the packet to come unsealed as it bakes). Repeat with remaining three packets. Reserve any remaining lemon slices for serving.

Place in the oven and bake for 12 to 15 minutes, until the fish is fully cooked through and flakes easily with a fork. Serve warm with reserved lemon slices and additional fresh parsley as desired.
