Busy weeknights? No problem. This easy and fast Gnocchi with Sausage and Spinach is wonderfully tasty! All you need is 20 minutes and one pan. Deliciously simple! Serve with a loaf of French or Italian bread to eat up any leftover sauce.

20-Minute, One-Pan Gnocchi with Sausage and Spinach

olive oil

onion, chopped

garlic cloves,

lb Italian sausage (bulk, no casings)

(16 oz) package potato gnocchi (from refrigerated or pasta aisle)

(14.5 tomatoes

chicken broth

baby spinach leaves

tsp black pepper

mozzarella cheese

Parmesan cheese

In a large nonstick skillet, add oil and heat over medium high until hot. Add onion and garlic and stir/cook until fragrant, 30 seconds.

Add sausage; stir and break it up into pieces, until nicely browned. Don&#8217;t drain. Add uncooked gnocchi. Stir 1 min, gently breaking up any clumps. Stir in tomatoes with juices and chicken broth. Cover and cook on medium heat, 5 min, or just until gnocchi is fluffy and cooked through. Turn off heat.

Add spinach and pepper. Stir until spinach leaves are wilted. Sprinkle with cheeses and cover for 3-5 minutes or until cheese is melty. Serve immediately.

Thank you! I was looking for a recipe that I had most of the ingredients for already. I used spinach gnocchi and a bag of mixed italian style veggies instead of going out to find fresh spinach. Skipped the mozza cheese too, but the Parmesan was enough for us. I love these kinds of recipes that can be adapted to what you have. Loved it!

Made this last night.  It was very tasty! Took longer to make than 30 minutes, but here is the reason. I couldn't find dry or refrigerated gnocchi at the market (live in a small town) so I decided to make them when I got home. Found several recipes online using instant potato flakes.  Next time I will cook them first before adding them to the meat.  I didn't because your recipe called for uncooked, but it took about 15 minutes for them to cook through.  I now have some in my freezer, the recipe made enough for two batches.

One-Pot Gnocchi with Spinach and Chicken

Homemade Gnocchi! Start making your very best fresh Italian at home. Serve it for dinner with sauces and toppings and you've got a party!

Homemade Gnocchi

russet potatoes (2 1/2 lbs)

flour

ricotta cheese

salt

Cook Potatoes

Add potatoes to a pot. Cover with water and bring to a boil. Cook for about 20 minutes. Remove from water and let cool on towels to absorb excess moisture.

Peel and Grate Potatoes: 

Remove the peels. Grate potatoes finely using a box grater (or, ideally, a potato ricer).

Mix Dough

Mound potatoes on a clean work surface. Add flour, then ricotta, then egg, then salt. Whisk with a fork, starting in the center and working your way out. It will get crumbly.

Knead Dough

Use your hands to gently bring the mixture together into a smooth dough. Don&#8217;t overmix it and don&#8217;t overflour it!

Gnocchify: 

Form into a loaf. Cut the loaf into slices. Roll each slice into a rope. Cut rope into small pieces.

Boil: 

Dust the small pieces with flour to prevent sticking. Working in batches, add the gnocchi to a pot of boiling water. When they rise to the top, remove with a slotted spoon. I usually put em in a bowl and toss with a little olive oil to prevent sticking.

Serve

We love 00 flour for pizza crust (it really does make a difference), but I had not thought of using it in gnocchi. Thanks for the great recipe.

At the rate everyone is avoiding gluten we may be inviting future problems with 
 "gluten sensitivity" because no one has developed antibodies to gluten. It is estimated that 1/3rd of the population are following gluten free diets yet 1% of the population has celiac disease. Gluten sensitivity is real but not a commcondition. And they say we are overreacting to COVID 19. Also it should be noted thsat Celiac Disease is a genetic condition and is inherited. It does not come from eating foods with gluten. Also foods that are naturally gluten free are a lot different than packaged foods that are gluten free.  Some people with IBS (Irritable Bowel Syndrome) misdiagnose themselves as Celiac disease or gluten sensitivity. Check  with your family Physician to be sure which you actually have.
Meanwhile the recipe appears simple enough that even I should be able to get excellent results. AS for me avoiding Gnocchi becaue the flour may comtain gluuten ? Nevergonna happen or as my Grandmother would have said "Not ona you life".

I’ve made extra and froze them. Separate them out so they don’t touch on a parchment paper lined freezer tray. Freeze and when solid place in a freezer ziplock bag. Only works with small batches, 2 to 3 servings per tray and bag. Boil a bit longer to cook.

How to Make Homemade Gnocchi

Just stir together all of the ingredients and you'll have a delicious Dump-and-Bake Chicken Marinara Gnocchi recipe in about 30 minutes!

Dump-and-Bake Chicken Marinara Gnocchi

½ cups (23 ounce jar) marinara sauce

chicken

(16 ounce) package mini gnocchi (about 3 cups)

garlic**

fresh parsley or basil

Preheat oven to 425 degrees F. Spray an 8- or 9-inch baking dish with cooking spray and set aside.

In a large bowl, whisk together marinara sauce and chicken broth until smooth. Stir in chicken, gnocchi, and garlic.

Transfer to prepared baking dish.

Bake in the oven for 20 minutes. Remove dish from the oven, stir, and taste one of the gnocchi. It should be tender and just about done (if it’s still too hard, put the dish back in the oven for a few more minutes). Sprinkle mozzarella and Parmesan over top of the dish, and return to the oven for 5 more minutes, or until gnocchi is tender and cheese is browned on top.

Parmesan cheese, shredded

Dice

Dice onion and slice mushrooms. Chop or julienne spinach. Mince garlic.

Saute

Heat a large skillet with high sides (or stockpot) over medium heat. Add olive oil and saute onions and mushrooms until the onions begin to go translucent (4-5 minutes). Add garlic and saute for another 30 seconds.

Stir

Pour in diced tomatoes (including the juice) and add Italian seasonings, salt and pepper. Add the spinach leaves and carefully stir.

Simmer

Once spinach is wilted, add uncooked gnocchi and stir together. Simmer for 3-4 minutes, until the gnocchi is cooked. Stir in Parmesan cheese and serve warm.

cremini mushrooms, (sliced)

oregano

tomato puree

shelf-stable gnocchi

Preheat the oven to 400 degrees F.

In a large ovenproof sauté pan or skillet over medium heat, heat the olive oil. Sauté the onions until they become soft and translucent, about 3-4 minutes.

Add the mushrooms and sauté until they start to brown, about 5 minutes. Stir in the garlic, thyme, oregano, red pepper flakes, salt and pepper. Sauté for a few minutes until the mushrooms are caramelized and fragrant.

Then stir in the spinach letting it wilt.

Pour in the tomato puree and stir it with the onions and mushrooms. Add the gnocchi and grated mozzarella, stirring everything together.

Top with torn mozzarella and bake for 25-30 minutes until the gnocchi is tender and the cheese is melted and golden.

Sprinkle with grated Parmesan and chopped parsley before serving.

lb. Italian sausage

rosemary

marjoram

lb fresh gnocchi

sundried tomatoes (drained)

heavy cream

Salt and pepper

In a large skillet over medium heat brown the sausage.  When the sausage is about halfway browned add the onion; cook until soft.  Reduce heat to low. Add the garlic, parsley, oregano, rosemary, thyme, marjoram and crushed red pepper.  Cook for 1 minute stirring constantly.  Remove from the skillet and plate. Drain any excess grease and carefully wipe out the skillet.

Melt butter and heat oil in same skillet over medium heat.  Add gnocchi and sundried tomatoes cooking until the gnocchi are lightly browned; stirring several times.

Add the chicken broth and heavy cream simmering until slightly thickened; 5-6 minutes. Add the spinach and cook just until wilted.  Reduce the heat and add the Parmesan cheese stirring gently until it melts.

Add the cooked Italian Sausage mixture back to the skillet and heat through. Season with salt and pepper to taste.
