Mushroom Kale Lasagna Rolls are one of the tastiest ways to enjoy kale! They are quick, easy and perfectly portioned.

Mushroom Kale Lasagna Rolls

9 oz dry lasagna noodles, cooked

marinara sauce

kale (stems removed, chopped fine)

oz mushrooms (chopped fine)

olive oil

garlic (chopped)

oz part skim ricotta cheese (I like Polly-o)

Parmesan cheese

egg (whisked)

salt and fresh pepper

oz 10 tbsp part-skim mozzarella cheese, shredded

Preheat oven to 350F.

Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.

Place kale in a food processor and pulse a few times until chopped.

In a large skillet, heat oil over medium heat. Add garlic and sauté until golden, about a minute. Add kale, salt and pepper and sauté about 5 minutes.

Add mushrooms to the pan, cook until soft, an additional 5-6 minutes. Adjust salt and pepper, to taste.

Combine cooked kale, mushrooms, ricotta, Parmesan cheese, egg, salt and pepper in a medium bowl. Place a piece of wax paper on the counter and lay out cooked lasagna noodles. Make sure noodles are dry.

Take 1/3 cup of mushroom kale mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle 1 cup of sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, until cheese melts.

Makes 10 rolls. Serve with extra sauce on the side.

Followed the recipe, and I added some oregano and garlic to the sauce and it was amazing. 😍

It did have some trouble with staying in one piece like the end result in the video, but I think it may have been too much moisture in the sauce. Something to work on next time!

Delicious! We resisted returning for thirds!  Made a few substitutions because I didn't have everything on hand (like cottage cheese for ricotta and spinach for parsley). My first time making lasagna with ground turkey, and I wasn't sure we'd like it;  but we loved i!

Oh my gosh! This was hands down the BEST lasagna I have ever made. I added fresh garlic and spinach to the ricotta mixture, and subbed Raos sauce for the canned tomato.

I followed the directions to a tee, but it was a little dry. So, I poured a can of tomato sauce over it and sprinkled a little oregano on top. That did the trick!

Great recipe. I made the meat sauce to my taste adding crushed red bell pepper, garlic salt, oregano, a little hot sauce, an extra small can of tomato sauce, and a few dashes of red wine vinegar. I used oregano in the ricotta and added extra Parmesan. Next time I will slice the mozzarella thinner. Everyone loved it. Will make again!

Tried this for the first time tonight.  As a surprise dinner for Valentines day... Lets just say.. It was a success !!

First lasagna I have ever made and it was beyond fantastic. This makes a lot! I couldn’t use all the noodles. Hubby likes it and he’s usually open to tell me what to change for next time. He said it was amazing, maybe a little less cheese? But for me that’s not goinyg to happen. Making it again as we speak!!!!!

This was so good but instead of 1lb of meat I used 2lbs of meat and I added 2 eggs to my ricotta and added 8oz of shredded mozzarella to the ricotta mix and the remainder 8oz of mozzarella on top of the lasagna

An easy lasagna recipe that&#x27;s packed with flavor! Lasagna noodles are layered with meat, spaghetti sauce, and three types of cheese for the ultimate Italian meal. Serve it alongside a simple salad and garlic bread for a cozy dinner that’s perfect this time of the year!

Easy Lasagna Recipe

(15 ounce) container ricotta cheese

Parmesan cheese, (divided)

parsley

egg, (lightly beaten)

(26 ounce) jar marinara sauce

water*

lasagna noodles, (uncooked)

Heat oven to 350°F and prepare a 9x13&quot; baking dish with cooking spray; set aside.

Brown meat in large skillet on medium-high heat. Meanwhile, mix 1-1/4 cups mozzarella, ricotta, 1/4 cup Parmesan, parsley and egg until blended. Set aside.

Drain meat; return to skillet. Add marinara sauce in with meat and stir to combine. Add 1 cup water to empty sauce jar; cover with lid and shake well. Pour into meat mixture; stir until blended.

Spread 1 cup meat sauce onto bottom of baking dish; top with layers of 3 lasagna noodles, 1/3 of the ricotta cheese mixture and 1 cup meat sauce. Repeat layers twice. Top with remaining noodles, meat sauce and cheeses. Cover with foil that has been sprayed with cooking spray.

Bake 1 hour or until heated through, removing foil after 45 min. Let stand 15 to 30 minutes before cutting to serve. Garnish with fresh parsley and enjoy!

Easy Skillet Ravioli Lasagna

recipe Quick and Easy Marinara

fully-cooked Italian chicken sausage

fresh cheese ravioli (I use the Butoni 4-cheese ravioli)

whole milk Mozzarella cheese

Italian seasoning (for garnish)

basil leaves (for garnish)

Prepare one recipe of Quick and Easy Marinara as directed.

Cut the chicken sausage in half, lengthwise, then cut into slices about ⅓-inch thick. Set aside.

Transfer 1 cup of the marinara sauce to a deep 10-inch skillet or a 12-inch skillet or a 9x13-inch baking dish. Add the sliced sausages to the remaining marinara sauce.

Layer half of the ravioli over the sauce. Some of the ravioli will overlap each other a bit. Spoon half of the remaining sauce over the ravioli, then half of the Parmesan and half of the sliced (or shredded) Mozzarella.

Layer the remaining ravioli next, then the remaining sauce, Parmesan and Mozzarella. Sprinkle the top lightly with Italian seasoning.

When ready to bake, preheat the oven to 375˚F. Cover the lasagna with foil and bake for 25 minutes. Uncover and continue baking for another 10-15 minutes or until bubbling and the cheese is lightly browned. Allow the lasagna to rest for 10 minutes. Scatter the basil leaves on top before serving.

Select sauté on the pressure cooker and add oil.  When hot, add sausage.  Brown and crumble the meat until it’s cooked through.  Remove to a plate lined with paper towels to absorb the extra grease.

In a medium bowl, stir together ricotta, 1 cup mozzarella cheese, parmesan cheese, egg, salt, pepper, and basil.  

Lightly spray a 7 &#8211; 8 inch pushpan, cake pan, or springform pan with nonstick cooking spray.  Spread about ½ cup sauce in the bottom of the pan.  Top with a layer of noodles (break the noodles to fit).  Spread a third of the ricotta mixture over the noodles; sprinkle with a third of the sausage.  Repeat the layers two more times, ending with a layer of sauce.  (From bottom to top, you should have: sauce, noodles, cheese, sausage, sauce, noodles, cheese, sausage, sauce, noodles, cheese, sausage, and then any remaining sauce.)

Add 1 cup of water to the pressure cooker pot and plate trivet inside.  Place the lasagna on the trivet using a silicone or tinfoil sling for easier removal.  Secure the lid and turn pressure release knob to a sealed position.  Cook at high pressure for 25 minutes.  

When cooking is complete, use a natural release for 10 minutes and then release any remaining pressure.

Carefully remove the hot lasagna.  Top with remaining ½ cup of mozzarella cheese.  Place under the oven broiler to brown the cheese.  May also use an air fryer lid if available.  Allow the lasagna to rest and cool for 15 &#8211; 20 minutes before serving.

This was delicious!! So worth the time it took to prepare. I used 8 regular noodles and soaked them as in the notes. Seven would have been enough for three layers in my 7" Fat Daddios push-bottom pan, but I just layered them more. I will do 8 again next time, too, for a good noodle to filling ratio. I used a couple of Tbs of minced flat Italian parsley instead of basil (personal preference). The quesadilla cheese is for sure the way to go! EXCELLENT!! Company-worthy for sure.

Heat olive oil in a large skillet over medium high heat. Add ground beef and season with salt and pepper. Brown meat and remove some of the grease.

Stir in garlic, minced onion, pasta sauce, oregano, basil, garlic powder and red pepper flakes. Season with salt and pepper, to taste.

Bring sauce to a simmer and stir in pasta and water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-15 minutes.

Remove from heat. Stir in parmesan and mozzarella cheese.&nbsp;

Spoon a few scoops of ricotta on the top, and cover for a few minutes to allow the cheese to warm.&nbsp;

Top with fresh basil. Serve immediately.

In a large skillet cook ground turkey. Once cooked, stir in marinara sauce, set aside.

Meanwhile, in a medium mixing bowl, combine cottage cheese, Parmesan cheese and Italian seasoning.

Preheat oven to 350ºF and in an 8 x 8 to 8 x 11" baking dish that has been sprayed with nonstick cooking spray, layer 1/3 meat sauce (more sauce than meat), 2-3 noodles, and 1/2 cottage cheese mixture.

Repeat layering process with meat sauce, noodles and then cottage cheese mixture.

One more layer of meat sauce and then top with mozzarella.

Cover with tin foil. Bake for 20 minutes at 350ºF. Remove tin foil and bake for another 10 minutes.

Let rest for 10 minutes before serving. Enjoy a large serving! Makes 6 HUGE servings!

This Easy Homemade Lasagna may not be traditional, but it is still delicious! Made with cottage cheese, a simple meat sauce, and lots of cheese, this lasagna recipe is a family favorite.

Easy Homemade Lasagna

whole wheat lasagna noodles (uncooked)

cottage cheese

tsp crushed red pepper flakes (optional)

tsp minced garlic

tomato sauce (or your favorite store brand of spaghetti sauce)

mozzarella cheese (divided)

Parmesan cheese (divided)

Prepare pan and preheat oven.

Brush a 9x13 pan with olive oil and preheat oven to 375 degrees Farenheit

Cook beef.

Preheat a large skillet over medium-high heat. Add in meat and begin to brown. Add in 1 teaspoon garlic powder, ½ teaspoon salt,  and 1 teaspoon oregano and brown fully. Turn off heat and drain off any excess grease on meat and return to skillet. Add in spaghetti sauce and 1 cup of water and mix well. 

Prepare cottage cheese filling

In a medium mixing bowl, combine the cottage cheese with parsley, minced garlic, crushed red pepper flakes, Italian seasoning, egg, and 1/4 cup parmesan cheese until well combined.

Layer lasagna.

Spread a thin layer of the meat sauce on the bottom of the pan. Lay 4 noodles down. Evenly top the noodles with 1/2 of the cottage cheese mixture and then spread out 1 cup of the meat sauce over the cottage cheese mixture.  Lay 4 more noodles down and spread with the remaining cottage cheese mixture evenly over the noodles. Top with 1 cup sauce and 4 more noodles. Pour the remaining sauce over the noodles and top with the shredded mozzarella cheese and remaining parmesan cheese.

Cover and bake.

Cover with aluminum foil and bake for 45 minutes. Remove the foil and return to the oven to bake for an additional 15 minutes, or until the cheese is golden and the noodles are tender

Rest and serve.

Let sit for 10 minutes or so, before slicing and serving.

Giada's Crispy Sheet Pan Lasagna

(5 oz) container baby spinach

lb spicy Italian sausage,

Preheat oven to 425°F and grease a 12x17-inch baking sheet with 1 tablespoon of the olive oil. Set aside.

In a medium skillet over medium heat, heat 1 tablespoon olive oil along with the garlic and pepper flakes. Cook until fragrant, stirring often, about 1 minute.

Add spinach and salt and cook, again stirring often, until the spinach is mostly wilted, about 1 more minute.

Remove spinach to a colander and press out any excess liquid. Remove spinach to a bowl and using kitchen scissors, cut spinach into small pieces. Add ricotta and stir to combine. Set aside.

Wipe out skillet and set over medium heat. Add remaining olive oil, then add sausage and brown undisturbed until the first side has browned, about 3 minutes. Using a wooden spoon, break apart the sausage into bite-sized pieces. Continue cooking, stirring frequently and breaking apart the meat as needed, until sausage is cooked through and lightly brown, about 5 minutes more.

Add onion to skillet and cook until starting to soften, 3 minutes more. Remove from heat.

While sausage cooks, bring a large pot of salted water to a boil over high heat. Cook pasta 1-2 minutes less than package directions indicate, stirring often. Drain and reserve 1/2 cup pasta water.

While pasta cooks, add marinara to the sausage mixture. Add pasta water, drained pasta, 1 cup of the mozzarella, and 1/2 cup parmesan, and stir to combine.

Spread mixture on prepared baking sheet, then dollop with the ricotta mixture. Sprinkle with remaining mozzarella and parmesan and bake until pasta is tender, sauce is bubbly, and top is lightly browned, about 30 minutes.

Let rest 5 minutes before slicing and serving. Enjoy!
