Korean Braised Potatoes (Gamja Jorim)

lb (one package) baby potatoes (cleaned)

tbsp vegetable oil (or any neutral oil)

sesame seeds (to finish)

green onions (optional, for garnish)

soy sauce

tbsp honey (or sugar)

garlic (minced)

tsp Gochugaru (Korean chili flakes) (optional)

water

Combine all sauce ingredients in a bowl.

Add salt and vinegar to a pot of boiling water. Add potatoes, cover, and cook until tender on medium-low heat, about 10-15 minutes. Drain and set aside.

In a large skillet over medium heat, add oil and pan-fry your potatoes for about 5 minutes until golden brown. Pour in the sauce and simmer until thickened, stirring frequently for even coating.

Turn off the heat and mix in sesame seeds. Garnish with green onions and serve immediately. Enjoy!

When it comes to potatoes, how do you like 'em?

Preheat oven to 350° and line a small baking sheet with parchment paper. Pierce potatoes all over with a fork. Rub with oil and season generously with salt and pepper.&nbsp;

Bake until potatoes are easily pierced with a fork, 1 hour to 1 hour 30 minutes.&nbsp;

Meanwhile, make onion soup filling: In a large pot over medium heat, melt butter. When melted, add onions and thyme and season with salt and pepper. Cook, stirring occasionally, until onions are soft and caramelized, about 20 minutes.

Remove thyme and add wine. Bring to a simmer and cook until wine is mostly evaporated. Add in flour and garlic and cook until garlic is fragrant, 2-3 minutes. Add in broth and bring to a simmer. Let simmer until thickened slightly, 5 minutes. Season with more salt and pepper to taste.

When potatoes are tender, cut a slit lengthwise on the top of the potato, then press ends together to create an opening. Spoon soup into each potato and top with a slice of gruyere. Place on prepared baking sheet and bake until cheese is melted. If you would like more color, broil on high for 1 minute. Garnish with more thyme sprigs and serve.

How to Make French Fries

russet potatoes (cleaned)

salt

vegetable or canola oil

garlic salt

oregano

blackened seasoning

Cut 3 potatoes into ¼- ½” matchsticks and rinse under water to remove some of the starch. I kept the peel on, but you can choose to peel your potatoes.

Combine salt and ice-cold water into a bowl.

Place chopped potatoes into bowl and soak for 5-10 minutes.

Pat potatoes dry and place in a dish and work in batches by laying potatoes in a single layer. Microwave covered for 3-4 minutes or until almost fork tender.

Pour vegetable oil onto a sheet pan or 9x13 inch dish.

Place pan in oven and turn on broiler on low. Broil oil on low for 2-3 minutes or until oil has heated. Watch it closely!

Sprinkle potatoes with garlic salt, oregano, and blackened seasoning

Take pan out of oven and carefully arrange potatoes on top of oil in a single layer.

Place fries in oven on middle rack and cook for 5 minutes on low broil or until golden brown.

Turn fries over and cook for an additional 3-5 minutes or until golden brown and fork tender.

Preheat oven to 200°C (375°F).

Add half of the sea salt into a medium-sized cast-iron skillet or roasting tray.  Use your hands to even out the salt.

Place the potatoes on top of the salt.

Add the remaining salt on top of the potatoes.  Try to do this evenly.  There is no need to cover an entire potato with salt.

Place the skillet or tray into the oven for 45 to 50 mins, or until the potatoes are cooked.

Take the skillet or tray out of the oven.  Set aside to let the potatoes cool.

Transfer the potatoes into a plate and serve.

Traditional Patatas Bravas Recipe (Spanish Fried Potatoes)

garlic, (sliced thinly)

onion, (sliced thinly)

tsp sweet smoked paprika

tsp hot smoked paprika

tsp cumin

cayenne

tomatoes

tsp sherry vinegar

& 1/2 cups vegetable oil, (for frying)

salt and pepper, (to season)

sea salt, (for serving (optional))

Peel the potatoes and place them into a pan with cold water.

Add 1 &amp; 1/2 tablespoons of salt.

Place the pan over medium-high heat and bring to a boil.

Lower heat, then simmer until the potatoes are tender --- about 10 to 15 minutes.

Drain the parboiled potatoes and set them aside to cool.

Parboiling the patatas:

While the potatoes are boiling, start preparing the bravas sauce by heating olive oil on a medium-sized saucepan over medium heat.

Add garlic and onion and cook until the onion turns soft.

Add cayenne, cumin, sweet and hot smoked paprika.

Adjust the heat to medium-low and cook the spices for about two to three minutes, mixing continuously.

Add the crushed tomatoes, then bring the heat back to medium and combine.

Add the sherry vinegar, salt, and pepper, and mix.

Cover the spicy sauce and let it simmer for about 20 minutes.

Taste and adjust the seasoning and spices of your bravas sauce.

Take the pan off the heat and use an immersion blender to puree the sauce.

Preparing the bravas sauce:

Once the potatoes are cooled, cut each potato into 8 equal portions.

Heat the frying oil in a medium-sized pan over medium-high heat.

Once it&#39;s ready, place the slices of potatoes into the pan carefully.

Cook until the potatoes turn golden, then place them on a kitchen paper to drain any excess oil.

Serve your patatas bravas with a sprinkling of sea salt --- enjoy!

Preheat your oven to 200°C (375°F).

Red skin potatoes (about 7 larger potatoes)

Preheat your oven to 400 degrees F. Scrub/wash your potatoes with a potato brush. Grease a baking sheet or line it with parchment paper.

Cut your potatoes into small chunks that are all about the same size by cutting each potato in half and then cutting each half in half or fourths (depending on the size of your potatoes). Lay the potatoes on your prepared baking sheet.

Great recipe! It worked for the first time user.

Outstanding results with this recipe!  I cook for my wife and two kids on the weekends and was looking for something a little different.  Am I glad I found this, because everybody loved it.  I did make a slight modification and sprinkled Parmesan cheese over over the potatoes after applying the oil/garlic/seasoning mix, which resulted in a golden, slightly crispy crust.  I’ll come back to this recipe again.

Put the potatoes in a large saucepan and cover with cold salted water. Bring to the boil, then simmer for 15 mins until they are tender but still hold their shape, and you can insert a cutlery knife easily.

Drain the potatoes and allow to steam-dry. Heat the oil with 1 tbsp of the butter in a large frying pan over a medium-high heat. Once the butter is foaming, add the potatoes, cut-side down, and fry undisturbed for 5 mins until golden.

Add the remaining butter along with the spinach, capers, lemon zest and juice. Stir everything together for a few mins so that the potatoes are coated and the spinach has wilted, then season to taste with salt and black pepper.

Boil the potatoes in salted water until tender. Preheat the oven to 200°C (fan).

Grease mini tart tins with olive oil. Transfer the boiled potatoes to the tins and crush them using a glass. Shape the potatoes into tart shells by pressing down with a spoon, building up the edges.

Drizzle with olive oil, then sprinkle with salt, pepper, Parmesan, and thyme.

Bake for 40–45 minutes, or until golden.

While baking, blend the feta, spinach powder (or fresh spinach), lime juice, black pepper, and olive oil in a food processor until smooth.

In a separate bowl, combine chopped tomatoes, jalapeño, red onion, oregano, salt, balsamic vinegar, and olive oil for the salsa.

Once the tarts are baked, remove them from the tins and top with whipped spinach feta and tomato salsa.
