Yukon Gold Potatoes

Place the whole, unpeeled potatoes in a large pot of water. Bring the water to a boil,&nbsp;then lower the heat and simmer for 10 to 15 minutes, until the potatoes are fork&nbsp;tender.

Drain the water completely from the pot and then cover the pot with a lid to allow the&nbsp;potatoes to steam for 5-10 minutes.

Peel potatoes, if desired, and cut them into 1 inch chunks.

Separate egg yolks from the whites of the hard boiled eggs and place the&nbsp;yolks in a bowl.

Mash the yolks with a fork and then stir in the mayonnaise, buttermilk,&nbsp;mustard, a splash of pickle juice, and salt and pepper, to taste.

Pour the dressing over the warm potatoes. Chop the egg whites and add them to the&nbsp;potatoes along with the celery, onion, and pickles.

Stir well, cover, and refrigerate for a few hours to allow the flavors to blend.

great German dish.... I double the sauce mixture for personal preference but you can agree the mixture taste great.

Just made it first time.  I need to read the post first (I never do).   Need to triple the sauce.   I added jalapeños in the sauce with onion and used arugula instead of green onions because I didn’t have any but I did have fresh arugula.

Didn't have any scallions so I sprinkled with finely shopped It parsley. Thinking of adding a few anchovies next time.

Whisk all the dressing ingredients together (or cover the mason jar and shake to combine) and set the dressing aside.

Wash and chop the potatoes. You can peel them first, or leave the peels on - your choice.

Add the potatoes to a large pot and add water just until the potatoes are covered with water.

Add the pot to the stove on medium-high heat and wait for the water to boil. Once the water begins to boil, turn the heat down to medium, cover the pot and let the potatoes cook for about 8-10 minutes. You&#039;ll have to check on them every few minutes to make sure they don&#039;t over-cook. You&#039;ll know they&#039;re done when you can pierce one with a fork without too much force but all the pieces are still intact.

Use a colander to drain the potatoes and rinse them under cold water until they cool to room temperature.

Once the potatoes are cool, be sure to let them dry for a few minutes before assembling the salad. If your potatoes are wet the dressing won&#039;t stick to them and you&#039;ll end up with a mess. The best way to do this is to lay them out on a clean kitchen towel for a few minutes.

While you&#039;re waiting, chop the celery, hard boiled eggs, and green onions.

Add the potatoes to a large bowl and add the dressing. Toss the potatoes until they&#039;re well coated. Add the celery, eggs, and green onions, and toss gently.

Quarter potatoes (or halve if they are small red potatoes) and place them in a 5-quart saucepan. Fill the pan with cold water until the potatoes are covered by 1”

Bring water to a boil and boil until the potatoes are soft and easily pierced with a fork (but not falling apart).

Drain the potatoes in a colander and let them cool until they are cool enough to touch. Mix/toss them every few minutes to help release heat from the bottom layer of potatoes.

Once the potatoes are cool enough to handle, peel the skins off of them, then dice them into ½” pieces.

Transfer the diced potatoes to a large bowl (preferably one with a lid because you will be chilling the salad).

Prepare the Potatoes

While the potatoes are boiling, make the dressing.

Whisk together mayonnaise, mustard, honey, lemon juice, sea salt, pepper, paprika and fresh dill in a small bowl until combined.

Make the Dressing

Add the celery, green onions, and hard-boiled eggs to the diced potatoes in the large bowl. Stir to combine.

Add the dressing and mix until evenly distributed.

Assemble

Cover the potato salad and chill in the refrigerator for at least 6 hours, or overnight.

Sprinkle with additional fresh dill and serve cold.

I used Type C red potatoes, I didn't peel them, gives some extra color (or I'm lazy!).

Made this and it was delicious! I normally use yellow mustard instead of Dijon and also relish! I followed the directions and the dressing is awesome!

I also add sweet relish &amp; some diced red &amp; green bell peppers.  The bell peppers give it a nice crunch &amp; great added flavor!

This is close to what I make.  I use a lot of hard boiled eggs and six is common. I also use drained pimentos. Depending upon the size of the salad I may use a large jar and a small jar. I also use sweet pickle relish but ultimately I can and have you deal relish both work well. Some people put in crumbled up bacon but I don't. Nor do I use celery and especially not onion with people having allergies to it. I put hard-boiled eggs sliced on top for a decoration and sprinkle it with paprika.

I just made the chocolate chip cookies.  Easy recipe ....Due to health issues I cut sugar to 3/4 on white and brown; and used salted butter and omitted the salt.  They were sweet enough and did not notice the difference w/o salt because we are salt free people.. Thanks for recipe
