This easy, juicy Instant Pot Pulled pork is fall-apart tender pork in a sweet and smoky barbecue sauce, and perfect for a crowd!

Instant Pot Pulled Pork

Stir

COOK THE PORK: In a bowl, stir together the garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub it all over the outside of the pork.

Saute

Add the oil to the Instant Pot and turn to SAUTE. Once the oil is hot, add the largest of the pork pieces and brown on two sides. This will take about 2 minutes per side. If your Instant Pot issues a “hot” or “burn” warning, turn the heat down (if you have that option), or if not, turn it off entirely and sear the pork in the residual heat. If the pot cools too much to brown, turn it back on. Remove the pork to a plate. Repeat with the remaining 2 pieces—you can cook the last 2 pieces at the same time as long as they do not overlap. Remove to the plate.

Scrape

Add half of the broth to the Instant Pot. With a wooden spoon, scrape up all of the stuck-on bits of food and seasoning.

Cook

Return the pork to the Instant Pot. Cover, seal, and cook on HIGH (manual) pressure for 40 minutes (for pork loin) or 1 hour (for pork shoulder/butt).

Vent

Once the pressure has built and the cook time has elapsed, allow the pressure to release naturally for 15 minutes (do not open right away or the meat may be tough). Vent to release any remaining pressure then carefully open the Instant Pot.

Pour

Remove the pork to a large bowl. With a slotted spoon, scooped out most of the onions and add them to the bowl with the pork. Carefully pour all but 1 cup of the pork cooking juices into an extra-large measuring cup or bowl with a spout. Keep the extra liquid handy.

Whisk

PREPARE THE BBQ SAUCE: Turn the Instant Pot to SAUTE. Whisk in the tomato sauce, tomato paste, vinegar, syrup, molasses, Worcestershire, paprika, chili powder, mustard, garlic powder, black pepper, salt, and cayenne. Cover the pot loosely with the Instant Pot lid, still leaving some room for steam to escape (this sauce loves to splatter). Let simmer, whisking every few minutes, until thickened, about 5 minutes.

Once cool enough to handle, shred the pork with two forks or with your fingers. Stir the shredded pork, onions, and any juices at the bottom of the bowl into the pot with the sauce. If the sauce is too tight to easily coat the pork, splash in additional cooking juices so that the pork is nicely coated with sauce. Taste and adjust seasoning as desired. Pile onto buns, top with slaw, and enjoy!

Mix together the ingredients for the rub in a medium bowl.

Mix together the ingredients for the liquid mop

Press the rub into the meat and place in slow cooker.

Pour the liquid mop over the meat.

Cook on low: Bone-in: 10 hours. Boneless: 8 hours.

When the meat is almost done, put all the sauce ingredients in a medium sauce pan and heat over medium heat for about 10 minutes.

Carefully remove meat from cooker.

Discard all but about 1 cup of the liquid (set aside).

Shred the meat from the bone using two forks.

Place the meat back into the cooker and add the reserved liquid.

Mix in 2 cups of the sauce and cook for another 30 minutes.

Toast the buns on a grill or a hot skillet

Place shredded pork onto toasted buns and top extra sauce and coleslaw.

Pass remaining sauce in separate dish.

Add the ingredients for the dry rub into a small bowl and mix together.

Use all of the rub to coat the pork, it will seem like a lot but the dry rub flavors the pork as well as the juice when the pork is done.

Add the pork to your slow cooker along with the apple juice, onions and garlic.

Set the slow cooker on low for 8 hours. Since slow cookers cook at different temperatures, check the pork after 6 hours to see if it shreds easily with a fork, if not let it go for another hour or two.

Remove the pork from the slow cooker to a board to cool slightly. Drain the juices from the slow cooker into a bowl, discarding the garlic cloves.

Shred the pork with two forks or meat claws and add back to the slow cooker. Add the onions (if using) and up to a cup of the reserved juices. You don&#8217;t want the pulled pork to have too much liquid so add the juices a little at a time and stir until you have the right consistency.

This dry rub creates a super delicious dish. I don’t like sweet meat, so I cut the brown sugar down to 1 tsp. I would have eliminated it, but I used the full amount of cumin, and I thought the imperceptible amount of brown sugar would mellow and counterbalance the heavy cumin. By far, this is the best pulled pork I’ve ever had. Every single person who ate it raved about it. Every. Single. One. This recipe is a keeper. Thank you mantitlement. Oh my goodness this is by far the best pulled pork I've had.  I had no apple juice so used a whole chopped up apple and 1/2 c water.  I used about 2T of jarred minced garlic.  Once the meat and onions were out, I took a stick blender to the broth to get smooth out the apple pieces and minced garlic.

I smoke on my Traeger all the time. But honestly this is every bit as good. Especially when you factor in the minimal work needed to end up with a succulent product. Thank you for this recipe. It’s our new go to.

I just made this and it taste amazing!!! The only thing I didn’t add was the powder ginger cuz I didn’t have any. I don’t think it made that much of a difference on the taste but next time I will just to see if there’s any difference in the flavor. The pulled pork by it self has a lot of flavor and a nice kick to it. I shredded the pork, threw back in the crockpot with its juices, onion and garlic and I added some bbq sauce. I have never cooked pulled pork in my life. So at 59 years young I wanted to do this for July 4th. This was a very easy recipe to follow and my family loved it.  It was gone very quickly. (3-5 pound) Pork Butt (Boston Butt, Pork Shoulder Blade Roast, or Picnic Shoulder)

Prep. Place meat in the slow cooker. Add dashes of Worcestershire sauce to the top of the meat until it is well covered. Then sprinkle heavily with Stone House Seasoning. Cook on low setting of slow cooker for 8-10 hours. Internal temperature of pork roast should be between 190º F and 205º F. Leave meat in the slow cooker on the &quot;warm&quot; setting for about 4 more hours or until the meat will easily pull with two forks.

Chop onions and place in bottom of slow cooker. Place pork shoulder on top of the onions, pour the stock over the pork.

Remove pork from slow cooker. Use two forks to pull it apart discarding any excess fat.
