Just got my instant pot and this is the first thing I tried. A friend gave me some lamb stock he made so I was eager to finally make risotto without being chained to the stove for an hour. I replaced the wine with water (I call that a reverse Jesus) and it was amazing. I’m definitely making this again.

Just made this and it was a breeze, the risotto was the perfect toothy texture, flavorful and so rich. 

I often tweak recipes because I just can’t help myself, so here were some of the changes I made: 
>Added in about a cup of chopped mushrooms just as the onion/garlic combo was getting nice and soft, added in a glut of olive oil. Salted the entire mixture; toasted the risotto for about 3 minutes, added in the wine, but increased to almost 1/2 cup and decreased the chicken stock by 1/4 cup. 
>Once the release was done, there was a bit of excess moisture on the top. Stirred it in and set the pot to sauté and stirred for 2 minutes, then turned off and added the cheese. 
>Added cracked black pepper and finished with truffle salt i had on hand.

In the past few weeks I’ve tried to make an edible risotto and failed 2 times. Once on the stove and once in my instant pot. Third time’s the charm!  This came out excellent. The consistency was perfect and the flavor was delicious. I actually cut the recipe in half because there’s only two if us in the house, but I cooked it for the same amount of time.  Thanks so much this one is a keeper!

This was my first time ever making risotto, and it came out perfectly, can’t wait to put my own twists on it in the future!

I've made this a few times now and love it! I've subbed the wine for fresh lemon juice because that's what I had and it turned out great. Also I don't always add the parm to keep it lower calorie.

What did I do wrong?  I followed the directions to a tee, only I used shallot instead of onion.  After 5 minutes and quick release, my risotto was still soup.  The chicken stock I used was very thick, so I'm thinking that was the problem.  I put it back on for another 5 minutes on high pressure and let it natural release, and it was done, but more mushy than creamy.  Since there are so many other great reviews, I'm thinking it was totally user error.

Follows as close as possible... Used Vermouth (didn't want to make a special trip), added shredded chicken (leftovers) and peas. 
The addition of wine, and using warm stock made a big difference over previous attempts! My new go-to!

Risotto is the ultimate comfort food and this one is quick to make with a few helpful cheat ingredients to get you a quick creamy dish with minimal effort.

Cheat&#8217;s creamy bacon, basil and roasted tomato risotto

ready-to-cook diced onion

pack smoked bacon lardons

Riso Gallo 3 Grains: Italian Rice, Spelt and Barley (from Tesco and Waitrose) or risotto rice

milliliters white wine

chicken stock,

cherry tomatoes on the vine

tbsp mascarpone

Preheat the oven to 200°C/fan180°C/gas 6.

Heat 1 tbsp olive oil in a sauté pan, add the onion and fry over a low heat for 2-3 minutes until softened. Add the bacon and fry until golden. Add the rice, stir to toast the grains, turn up the heat to medium, then add the wine and bubble for a couple of minutes.

Gradually add the hot chicken stock, a ladleful at a time, and stir continuously until all of the stock has been absorbed and the rice is al dente – about 20 minutes.

Meanwhile, place the tomatoes in a roasting tin, drizzle with a little olive oil, season with salt and pepper and roast for 5-6 minutes until softened slightly. Remove from the oven and keep warm.

Stir the mascarpone and chopped basil into the risotto, divide between 2 plates, top with the roasted tomatoes and garnish with basil leaves.

Making risotto in the Instant Pot is the easiest and quickest way to make it, eliminating the need to watch and stir it the entire time.

Instant Pot Risotto with Prosciutto, Peas, and Herbs 

Prosciutto ((preferably Prosciutto di Parma))

olive oil ((preferably extra virgin))

shallots ((about 3 small))

garlic

rosemary

salt

Arborio rice

green petite peas (thawed)

Parmesan cheese ((preferably Parmigano Reggiano))

Heat the broth in a small pot over medium heat until hot.

Reduce heat to maintain temperature without allowing broth to come to a boil.

Set Instant Pot or similar multi cooker to sauté function at high.

Lay prosciutto in to bottom of the pan and cook until brown and crispy, 2 minutes on each side.  Remove to a plate and set aside.

Reduce the heat setting to medium, add the olive oil, shallot and garlic and cook, stirring until softened, about 2 minutes.

Add rosemary, salt, and pepper, stirring for 30 seconds. Stir in rice, allowing the grain to become coated with the fat, and cook 1 more minute.

Add the wine and stir to insure any browned bits are lifted from the bottom of the pan.

Add the hot broth and cover the Instant Pot with the lid and close the vent closed (sealing position). Set to pressure cook function at high for 6 minutes. Quick release the pressure (venting), open the lid.

Set Instant Pot function to sauté at medium.

Add the peas and continually stir for 2 minutes until the remaining liquid is absorbed, the peas are heated through and the rice is creamy.

Turn off heat and stir in the cheese.

Serve rice with pieces of the crispy prosciutto.

Shrimp Scampi Risotto

In a large deep-sided skillet or pot over medium heat, melt 1 tablespoon butter. Add onion and cook until soft, 5 to 6 minutes, then add 1 clove garlic and cook until fragrant, 1 to 2 minutes more. Add rice and stir until combined, then season with salt.

In batches, begin adding broth, 1/2 cup at a time, making sure broth is fully absorbed before adding the next batch. Once broth is done, add 1 cup wine and simmer, stirring occasionally until fully absorbed.

Meanwhile, cook shrimp: In a large skillet over medium heat, melt remaining butter. Add remaining garlic, lemon juice, parsley, and red pepper flakes and stir, 2 minutes, then add shrimp and season with salt. Cook shrimp until pink, 3 to 4 minutes, then add remaining 1/2 cup wine. Bring to a simmer, then add shrimp mixture and Parmesan to risotto and stir until combined and creamy.

First time ever cooking a risotto! I was mostly happy with the outcome. - 2 stars for sometimes vague instructions or unreasonable measurements (1 tbl butter for 1 whole large onion+??) that I amended during the process.  I also kept the stock hot in a pot as mentioned in other reviews/understood from every cooking  show I’ve seen. 

The end result was commendable creaminess, but it came at the price of well done shrimp. Next time I’ll remove the shrimp from the pan before adding the wine and add them in to the risotto at the very end. It took more minutes than I expected for that final liquid addition to absorb.

Nice variation on traditional risotto. Loved the addition of red pepper and lemon.
I also needed more oil for the saute but I added olive oil instead of increasing the butter.
I also add the wine before the broth to ensure the alcohol is evaporated.
And I will be reducing the red pepper even more! To 1/4 teaspoon. Whew! Spicy!!!

I don't know what went wrong but it turned out horribly - this is way too much liquid for one cup of rice.  It ended up like soup.  I would use 2 1/2 cups of broth max and 1/2 a cup of wine and then add more as needed.  Truly disappointing.

We've made this recipe several times, the only modification being that we use 1.5 lbs of shrimp. It's fabulous and one our favorite risotto recipes. We have it as main course with thick slice sauteed mushrooms and steamed asparagus spears or broccoli florets. Now I'm hungry!! : - )

My husband and I followed the directions to a tee and this turned out perfect!!!  We absolutely loved it and will definitely be making it again!!!!  The shrimp and rice were perfect and the sauce was amazing!!!

This came out EXCELLENT!   I did only use 1 large lemon for the juice and that was the perfect amount, as well as we used a 1/2 cup of grated Parmesan cheese, as the texture was already pretty thick.  Also, we used cilantro instead of parsley and it was the perfect combination.

Absolutely fantastic.  This side dish quickly becomes the centerpiece of the meal.  The perfect recipe.

We made it and went right off the recipe no tweeks, and it turned out amazing. First time making risotto and we seemed to have hurried it so texture was a little off. Slow down while prepping the rice . other wise very tasty.

This has way too much lemon juice, ours was bitter and sour. If we made it again, we’d use the juice of half a lemon instead of two. We did learn that baking soda reverses the acidity of lemon. Otherwise, this wasn’t bad. We added peas.

Lb Mixed Wild Mushrooms

½ Cup Freshly grated Parmesan (plus more to taste)

Cup Brown Arborio Rice

7-8 Cups Vegetable Stock (heated)

Stalks Celery (chopped)

Medium Sweet Onion (diced)

Garlic Cloves (minced)

½ Tsp Dried Thyme

Tbsp Olive Oil (divided)

Kosher salt and ground pepper, to taste

Cut off both the ends of butternut squash and peel with a vegetable peeler. Scoop the seeds out of the middle cavity with a spoon. Cut each section in half, then dice it into cubes.

Bring 1 inch of water to boil in a large saucepan or wok and add in a bamboo steamer. Add squash into the steamer, cover, and steam for about 12-15 minutes, or until fork-tender. Place the squash into a bowl and set aside. (see notes)

Heat 2 tablespoons of olive oil in a large pan, over medium-high heat. Add mushrooms and sauté until nicely golden brown. Season with some salt and pepper, remove from the heat and set aside.

Using the same pan, heat the remaining 1 tablespoon of oil over medium heat. Add celery, onions and dried thyme, and sauté for about 2 to 3 minutes. Stir in garlic and sauté until fragrant.

Add the rice and cook stirring constantly for about 1 minute. Immediately stir in 2 cups of chicken stock and cook, stirring frequently until liquid is reduced.

Repeat using all the stock, and cook until rice is tender and cooked through. Meanwhile, in a blender, add steamed butternut squash cubes and 1/2 cup of Parmesan; Puree until smooth and creamy.

Pour the pureed mixture into the hot rice and mix well to combine. Add half of the sautéed mushrooms stir well and adjust the flavors according to your taste.

Transfer the Risotto into serving plates, top with the remaining mushrooms and sprinkle with parmesan. Serve immediately and enjoy!

Easy Garlic Shrimp Risotto

olive oil (divided)

lb medium raw shrimp

smoked paprika

Italian seasoning

salt black pepper (to taste)

Heat 1 tablespoon of oil in a large skillet over medium heat. Add the shrimp in a single layer and sprinkle with the seasonings. Cook undisturbed for 2 minutes, then flip and continue to cook until pink and fully opaque, around 1-2 minutes more. Set aside on a plate.

Heat the remaining oil in the same skillet. Sautee the onion and garlic for 3-4 minutes over medium heat.

Add the rice and cook, stirring constantly, for 1 minutes.

Pour over two cupfuls of broth. Cook over medium heat, stirring frequently, until most of the liquid has beed absorbed.

Once the liquid is reduced, repeat the cooking process, by adding a cup of broth at a time.

Once all the broth has been used, the rice should be plump and creamy. Remove from heat and stir in the parmesan and parsley.

Serve the risotto topped with cooked shrimp.

Easy Risotto Recipe

Place the stock in a medium-sized pot over high heat. Bring it to a simmer and then lower the heat so that it stays warm. Add the salt to the pot, 1 teaspoon at a time. You want it to taste just a little saltier than you&#39;d like.

Saute onion

Place the olive oil and butter in a large pot over medium heat. Add the onion and cook, stirring frequently, until it is soft and just starting to brown, about 5-7 minutes. Add the garlic and cook for 1 minute more.

Add rice

Add the arborio rice to the pot and stir it for 1 minute.  Add the wine to the pot and stir until it has been mostly absorbed.

Stir risotto

Add a ladle full of the hot broth to the pot and stir well. Continue stirring occasionally until it has been mostly absorbed, about 1-2 minutes. Continue adding the broth, 1 ladle at a time waiting until most of the broth has been absorbed by the rice before you add more. Stir the rice a few times between each addition of broth. The risotto is cooked when the rice is soft but not mushy .. think al dente pasta. This step takes about 20 minutes.

Finish

When the risotto is soft remove the pot from the heat and stir in the parmesan cheese and then season to taste with sea salt and fresh ground pepper.

This spring pea risotto is light and creamy with lots of fresh herbs and parmesan cheese! It&#39;s easy to make and comes together in 30 minutes!

Spring Pea Risotto

peas

shallot (diced)

vegetable stock (substitute chicken stock

parmesan cheese (shredded)

lemon zest

lemon juice

fresh mint (substitute other fresh herbs like basil)

The first step is to blanch the fresh peas so that they stay crisp and bright green. Bring a large pot of salted water to a rolling boil. Fill a large bowl with ice and cover with with water. Set aside.

Drop the peas into the boiling water and blanch for 1-2 minutes.

Remove the peas and immediately immerse in the ice bath for about 20 seconds. Drain and set aside. Note: Do NOT leave the peas in the water as they will get soggy.

In a medium pot, heat your vegetable stock over medium heat until simmering (you can also use a microwave if you&#39;re lazy like me). Remove from the heat and set aside.

In a large skillet or stockpot, melt the butter over medium heat and sauté the shallots, and garlic for about 5 minutes or until soft and fragrant. 

Add in the rice and toast, stirring frequently, for about 2 minutes. Then add in the white wine to de-glaze the pan and make sure to scrape up any browned bits on the bottom of the pot.

Add in ½ cup of the warmed vegetable stock and the fresh thyme, and stir the risotto until completely absorbed, then add in another ½ cup and repeat. Continue to add in the stock ½ cup at a time until it&#39;s all absorbed and the rice is fully cooked. 

Stir in the parmesan, blanched peas, and lemon juice. Then taste and add salt and pepper if needed. 

Garnish the spring pea risotto with fresh herbs and lemon zest and enjoy! I also love to add some fresh spring peas and microgreens too!

Creamy and comforting, this risotto is baked to perfection with tender butternut squash, aromatic herbs, and grated parmesan cheese. Serve as a main dish or a side for a cozy and satisfying meal.
