easy vegan meals

Whether you&#39;re new to plant-based eating or just want a quick weekday meal, there&#39;s no need to overcomplicate. Vegan meals don&#39;t need to involve hours of prep work or strange ingredients to be delicious and filling. Here are the directions for making one of my favorite easy vegan meals: Spaghetti &amp; Vegan &quot;Meat&quot; Sauce.

Lazy Vegan Recipes

spaghetti

marinara sauce

water

TVP crumbles

Bring a large pot of salted water to a boil. When the water starts to boil, drop your pasta and cook to al dente according to the package directions.

Add the marinara sauce, water, and TVP  to a medium pot, simmer over low heat until the pasta is done.

When the pasta is finished cooking, drain and serve toppped with the vegan &quot;meat sauce&quot; and vegan parmesan.

This Creamy Garlic Mushroom Pasta is done in just 30 minutes, making it the perfect weeknight pasta dinner!

Vegan Creamy Garlic Mushroom Pasta

lb box of spaghetti (linguine, pappardelle,

coconut oil

red onion (88 grams)

garlic (minced)

lb cremini, baby Bella

parsley

sea salt

black pepper

(383 grams full fat coconut milk)

Cook pasta according to package directions to al dente. Reserve ¼ cup of the pasta water.

In a pan over medium high heat, heat the coconut oil. Add the onion, stir and let cook until translucent, about 5 minutes. Add in the garlic and reduce to medium heat.

The garlic should sizzle when it hits the pan. Sauté the garlic for about 1 minute.

Add the mushrooms, parsley, sea salt and black pepper, stirring together. Cook, stirring, for about 3-5 minutes on one side without moving the mushrooms; this will allow it to caramelize a bit and produce a beautiful golden colour, then turn the mushrooms over and let brown on the other side for another 3-5 minutes.

Add in the reserved pasta water. Add in the cooked pasta, and stir/twirl everything together to combine. Add in the coconut milk, stir again and reduce heat to low. Let the coconut milk simmer for 5 minutes.

Remove from heat, top with vegan parmesan and chopped parsley, and serve and enjoy!

Creamy Garlic Mushroom Pasta

This jerk tofu recipe is authentic, easy to make, and packed with big, bold flavors! You’ll love it as part of your meal prep routine or as a weeknight dinner.

Jamaican Jerk Tofu

block extra firm tofu

veggie broth

bbq seasoning

cornstarch

bbq sauce

wet jerk seasoning

Press your tofu for 30 mins. Tear into uneven pieces. Add to a bowl and pour over your vegetable broth, bbq seasoning and your poultry seasoning. Mix everything together and let it marinate for about 30 mins, until everything is soaked up.

Add cornstarch and stir everything together again. Start with 1 tbsp, add the extra ½ if you need more to coat it all!

In a pan over medium high heat, add 2 teaspoons oil. Once hot, add in all your tofu. Crisp it up on each side until golden brown, about 4 to 8 minutes.

Remove and (you can add this directly into the pan too) add to a bowl or leave in your pan (I just rinse out the same one it was marinating in). Add your bbq sauce and your jerk seasoning. Please note that this is hot, add 1 teaspoon at a time to see if you can manage it. Stir everything together and let it sit for like 3 minutes to absorb. Serve with Rice and Peas and enjoy!

The vegan version of creamy tomato pasta recipe that took the internet by storm

Marry Me Pasta

oz whole wheat linguine

olive oil (optional)

onion

cherry tomatoes

Italian seasoning

tsp red chili flakes

salt

¼ tsp black pepper

yeast

tomato paste

vegetable broth

coconut milk

vegan cheese (shredded, optional)

pasta water

basil

Cook pasta according to package directions, reserving at least 1/2 cup of pasta water before draining.

Add the onion to a pan with 1 to 2 tablespoons of olive oil or water, until translucent, approximately 2 minutes.

Add the garlic, spices and tomato paste, and stir until fragrant, approximately 2 minutes. Add the cherry tomatoes and vegetable broth. Cover, and allow to cook for 3 minutes, until the tomatoes have bursted. 

Add the coconut milk and vegan cheese if using. Stir until a creamy sauce is formed. 

Add cooked pasta and fresh basil. Stir until the pasta is coated in the sauce, and add the reserved pasta water if needed. Serve immediately.

Vegan Taquitos

roma tomato (diced)

jalapeno (diced)

corn

block extra firm tofu (grated)

oz black beans

vegan yogurt (unsweetened)

lime juiced

salsa

corn tortillas

tbsp chili powder

tbsp cumin

paprika

garlic powder

green goddess dressing (optional)

yogurt (unsweetened)

pico de gallo

Preheat the oven to 425F.

Add the onion and garlic to a pan over medium heat, with a tablespoon of olive oil, if desired. Saute until the onion is translucent, approximately 3 minutes. 

Add the tomato, jalapeño, corn, grated tofu and black beans to the pan, along with the spices. Saute until fragrant, approximately 5 minutes.

Add in the vegan yogurt, lime juice, and salsa, and mix until everything is combined. 

Divide the filling into the centre of the mini tortillas, then roll into your “taquitos”. 

Transfer to a casserole dish, and bake for 12 to 15 minutes, until browned. Serve with vegan goddess dressing, vegan yogurt for drizzling, and pico de gallo optional. 

Your usual Mediterranean salad just got an upgrade! This Mediterranean Gnocchi dish is both filling and nutritious and has a delicious dressing to go with it. This gnocchi dish makes the perfect lunch, dinner, or meal to bring to a group gathering and is totally dairy-free and vegan!

Mediterranean Gnocchi

oz gnocchi

olive oil

zucchini

red onion

red bell pepper

14 oz can brown lentils rinsed and drained

vegan feta

kalamata olives

tomatoes

tbsp red wine vinegar

tbsp hummus

Salt + pepper

In a pan, saute minced garlic, zucchini, red onion, garlic, red bell pepper in olive oil until tender.

While veggies cook, pan fry gnocchi in a pan until golden brown (I use Trader Joe's cauliflower gnocchi).

Whisk dressing ingredients in a bowl.

Assemble everything in a bowl including cooked gnocchi, lentils, sautéed veggies, feta, olives, sun dried tomatoes, and the dressing.

Gently toss and combine. Enjoy!

Store in the fridge for 2-3 days.
