Our tasty Southwestern Ranch Salad is a Healthy Living recipe. Black beans, corn and a kick of cilantro make it a winner in the flavor department too.

Southwestern Ranch Salad

salad greens

(15.5 oz.) GOYA® Black Beans, rinsed

pkg. (15.25 oz.) GOYA® Whole Kernel Corn, thawed, drained

red pepper, chopped

tomatoes, chopped (about 2 cups)

KRAFT 2% Milk Shredded Cheddar Cheese

KRAFT Classic Ranch Dressing

Tbsp. chopped fresh cilantro

Divide salad greens among 4 dinner plates.

Top with beans, corn, peppers, tomatoes and cheese.

Drizzle with dressing; sprinkle with cilantro.

Prepare several basic meal prep salads for quick and easy lunches. Add whatever toppings suit your fancy on a given day and you&#x27;re good to go!

Basic Meal Prep Salad

head romaine lettuce

carrots

oz shredded purple cabbage

onion

red bell pepper (sliced)

Chop the lettuce into bite sized pieces. Place in a salad spinner. Spray with vinegar, rinse with water. Spin dry.

Divide the lettuce among four meal prep containers

Divide the carrots, cabbage, green onions, and peppers among the containers. There may be leftover vegetables, depending on your tastes.

Seal the lids and store the salads in the fridge for up to 4 days. Add additional toppings and dressing as desired.

Grilled Flank Steak Summer Salad Cilantro Lime Vinaigrette

extra virgin olive oil

garlic (finely diced)

Teaspoon kosher salt

Teaspoon black pepper

cilantro

lime

juice of 1 lime

oz flank steak

salt and pepper

avocado

purple onion (diced)

sugar snap peas

cherry tomatoes (halved)

asparagus

yellow pepper (diced)

romaine lettuce

Combine Vinaigrette ingredients in food process and blend for 20-30 seconds.

Taste and make any necessary adjustments per your specific taste.

Place in refrigerator.

Season flank steak with salt and pepper.

Grill your steak on high heat for approx. 2 minutes per side and then move to a cool side and cover the grill.

Let steak continue cooking until it reaches your preferred doneness.

Remove from grill and let rest.

Add lettuce, asparagus, tomatoes, peas, onion, yellow pepper and avocado to your salad bowls.

Cut your steak into strips and place on salad.

Cover with your desired amount of vinaigrette.

This Cobb Salad recipe is the perfect entree salad recipe. It’s also a great way to use up leftover Easter ham and hard-boiled eggs.

romaine lettuce (washed, dried, and chopped)

watercress (washed, dried, and stems removed)

chives (sliced thin)

bacon (about 8 pieces, cooked and crumbled)

Add all of the dressing ingredients in a food processor and process until smooth, scraping down sides as necessary.

FOR THE DRESSING:

In a large bowl, combine the chopped romaine and chives. Give it a quick toss and spread it out on a platter.

Layer all the topping and serve with the dressing.

FOR THE SALAD:

Brown meat with onions in large nonstick skillet on medium-high heat; drain.

Add seasoning mix and water; mix well. Bring to boil. Simmer on medium-low heat 3 min.

A little grilled corn and gorgonzola steak salad is the perfect way to end a beautiful summer full of moments and memories. The flavor will knock your socks off!!

Grilled Corn and Gorgonzola Steak Salad

Best Steak Marinade

Skirt Steak

Ears Yellow Sweet Corn (Boiled for 5-7 minutes)

Zucchini (sliced and quartered)

Cups Spring Mix

Cup Arugula

Endive Heads (Core Removed and roughly chopped)

Cups Petit Medley Grape Tomatoes (about 8-10 ounce container, tomatoes halved)

Stalk Green Onions (Sliced)

Shallot (Thinly Sliced)

Tablespoons Basil (Minced)

Tablespoons Parsley (Minced)

Clove Garlic (Minced)

Lemon

Crack of Black Pepper

Ounces Gorgonzola Cheese

Cup Balsamic Vinegar

Cup Olive Oil

Dijon Mustard

Salt and Pepper

In a large ziplock bag, add the marinade ingredients. Seal the bag and squish to combine the ingredients. Add the steak and marinate according to recipe instructions.

Grill the Steak according to the recipe, set aside to rest for 5-10 minutes before slicing.

Meanwhile, heat a gas burner or grill to high heat. Dry off the corn and char on each side. Set aside until cool enough to touch and remove all corn kernels to a bowl.

Set a pan over the burner and heat over medium high heat. Add a drizzle of olive oil and add the zucchini once hot. Sprinkle with salt and pepper and char each side for about 2 minutes per side or until char marks appear. Set aside.

In a large bowl, add the greens, endive, veggies, herbs and lemon zest. Add a pinch of salt and squeeze of the lemon if desired. Toss together. If desired, add some of the dressing and toss again or allow your guests to completely dress themselves.

On a platter, arrange the greens and veggies. Top with sliced steak and sprinkle with cheese. Serve with remaining dressing.

In a mason jar, add all dressing ingredients, add a lid and shake to combine.

For the Dressing

Very good!  Used feta cheese not blue gorgonzola, and we used lite italian dressing.  Good way to use some fresh basil and cilantro from your garden.  Don't leave out the herbs, great addition!

Chopped Tex-Mex Ground Beef Taco Salad is one of the absolute musts for a good family dinner. Especially so that kids can learn to cook!

Cup Dressing (Ranch)

Tomatillo

Squeeze Lime Juice

Tablespoons Taco Seasoning

Cilantro Leaves

Pound Ground Beef

Tablespoon Taco Seasoning

Cup Water

Head Lettuce (Romaine, chopped)

Can Beans (Black, drained)

Bell Peppers (Green, diced)

Jalapeno (Diced)

Tomatoes (Chopped)

Onion (Red, diced)

Cup Corn (Roasted, (we buy this frozen))

Handful Cilantro Leaves (Chopped)

(Chopped)

Cup Cheese (Cubed, Colby Jack, Monterey Jack or Pepperjack)

Cups Chips (Crushed)

In a blender, add the ranch, tomatillo, lime juice, seasoning and cilantro, blend until smooth and set aside in the fridge. 

For The Dressing

In a skillet over medium heat, add the Ground Beef and begin to cook. Once browned a little, break it up into crumbles using a meat chopper or wooden spoon. Cook until almost completely done, about 8 minutes. 

Drain all grease and place back on the stove with the taco seasoning and water. Stir and cook until slightly thickened and all meat is covered. Remove from heat and set aside. 

For The Taco Beef

In a bowl add all of the salad ingredients including the chips. Add the beef and dress to taste.
