Chicken Fajitas

chicken breasts (sliced)

olive oil

lime juice

sugar

salt

cumin

garlic (minced)

water

smoked paprika

onion powder

chili powder

yellow onion (thinly sliced)

bell peppers or

cilantro

tortillas, guacamole, sour cream, cheese, salsa etc

Place the 1/4 cup olive oil, lime juice, sugar, salt, cumin, garlic, water, smoked paprika, onion powder and chili powder in a gallon sized resealable bag or large bowl.

Whisk until thoroughly combined.

Add the chicken, onions and peppers to the marinade. Chill for at least 1 hour, or up to 8 hours.

For the chicken

Heat 2 teaspoons of olive oil in a large pan over medium heat.

Add the chicken and pepper mixture. Cook for 6-8 minutes, stirring occasionally, until chicken is cooked through and vegetables are tender.

Season with salt to taste if desired.

Sprinkle cilantro over the fajitas, then serve with tortillas and toppings of your choice.

Crock Pot Steak Fajitas

Cut flank steak into 6 equal portions and place in your slow cooker. 

Add onions and peppers to the slow cooker.

Pour in the tomato salsa and add beef broth.

Add fajita seasoning and mix everything together.

Cover and cook on HIGH for 4 to 5 hours or on LOW for 6 to 8 hours.

Transfer meat to a cutting board; using two forks, shred the beef.

Stir beef back into the slow cooker.

Serve hot with flour tortillas.

Easy Chicken Fajitas Recipe

Combine Spices

Combine salt, black pepper, smoked paprika, garlic powder and chili powder together in a bowl, set aside.

Season Chicken

Cut chicken into strips. Coat the chicken with the seasoning.

Cook Chicken

Preheat your skillet with oil to medium high. Add the chicken and cook until it&#039;s fully cooked, about 3-5 minutes. Remove from the pan and set aside.

Cook Veggies

Julienne bell peppers and cut onions into half rings. Add 1 tbsp of oil and cook all the veggies until they are slightly golden.

Serve

Add chicken back to the pan. Toss everything together. Drizzle lime juice over chicken and vegetables. Serve and enjoy!

Tofu Fajitas Recipe

(14 oz/400 grams) block extra-firm tofu, pressed*

medium bell peppers, sliced ((we like

tbsp olive oil, for cooking ((or another neutral oil))

tsp mild chili powder

½ tsp pink salt

olive oil ((or another neutral oil))

Cut tofu into strips 1-inch strips. To a bowl, add all of the ingredients for the marinade- cumin, smoked paprika, chili powder, garlic powder, salt, black pepper, lime juice, 2 tablespoons olive oil, and water. Mix until a paste has formed.

Add the tofu strips one by one into the marinade and coat all sides. It&#39;s easier to use your fingers. Let the tofu marinate in the bowl for 30 minutes if time allows.

Heat 1/2 tbsp olive oil in a cast-iron skillet or a large frying pan. Once hot, add the tofu and cook over medium heat for 3-4 minutes on each side, until golden brown. You may need to do this in two bathes. Once ready, remove from the pan and set aside.

To the same skillet, heat 1/2 tbsp olive oil and add the peppers and onion, and season with a pinch of salt and black pepper to taste. If there is any leftover marinade from the tofu, add it as well. Stir and cook the veggies for 6-7 minutes, until soft but still crunchy.

Add the tofu to the vegetables and gently mix. Remove from the heat, top with fresh chopped cilantro or parsley, and more lime juice if desired. Serve warm with flour tortillas or with cooked rice!
