Our original contribution to the no-knead bread revolution: substitute live sourdough starter for instant yeast to create the ultimate no knead artisan bread loaf.

Artisan Sourdough No-Knead Bread

(~2 cups) whole wheat flour

(~2 cups) white high protein bread flour

(~1 ½ tsp. salt)

(2 cups minus 2 Tbs water)

(¼ cup) sourdough starter

This is my favorite rye bread recipe of all time… so far. I could have just as easily called it Swedish Rye Bread or Aroma Therapy Bread for that matter (takes the coveted baking bread smell to another level). Covers both sourdough and instant yeast versions.

Artisan Sourdough Rye Bread

Water: 400 grams, 1 2/3 cups

Sourdough Starter: 70 grams, 1/3 cup (omit if making the instant yeast version)

Instant Yeast: 1 tsp (omit if making sourdough leavened version)

Whole Rye Flour: 245 grams, heaping 1 3/4 cups

Bread Flour: 245 grams, heaping 1 3/4 cups

Molasses: 44 grams, 2 Tbs

Fennel Seed: 8 grams, 1 Tbs

Anise Seed: 2 grams, 1 tsp

Caraway Seed: 3 grams, 1 tsp

Salt: 12 grams, 1 3/4 tsp

Orange

This bread has a slight sweetness, delicious served fresh from the oven or toasted. If two loaves seem like too much, slice and freeze for future toasting!

Whole-wheat Sunflower Seed and Honey Bread

360 g (about 1 ½ cups) warm Water

g (about 2 ½ teaspoons) Active dried yeast

g (about 2 ½ tablespoons) All purpose flour

550 g (about 4 ¼ cups) Whole wheat flour

70 g (about 3 ⅜ tablespoons) Honey

45 g (about 3 ¼ tablespoons) Canola oil

g (about 1 ¼ teaspoons) Sea salt

70 g (about ½ cup) Sunflower seeds

Unsalted butter

Butternut Ravioli with Light and Creamy Spinach Mushroom Sauce

servings (200 grams) butternut squash-filled ravioli (such as Rising Moon)

4-5 oz cremini mushrooms, sliced

tsp fresh chopped rosemary (from ~1 sprig)

thyme leaves (from ~4 sprigs)

If you have ever eaten a Caprese salad and wished that you could linger with it longer, that there were more tomatoes to spear with your fork, or more milky slices of cheese on the plate, then this is the dish for you. Best at the height of tomato season, it embellishes on the classic Caprese, taking its five simple elements &mdash; mozzarella, tomatoes, basil, salt and olive oil &mdash; and adding roasted peppers, caperberries (or capers), olive and prosciutto.           Caprese Antipasto        

ripe bell peppers, 1 red and 1 yellow if possible

Quick and easy one sheet pan chicken and vegetables, perfect for the whole family and suitable for every age. 

One sheet pan chicken and vegetables

chicken

asparagus

potatoes, pealed

carrots, pealed

oregano

salt and pepper

yogurt

tbsp yellow mustard

lemon, juice and zest

turmeric

paprika

garlic powder

Preheat the oven at 375F (190.56 degrees Celsius)

In a sheet tray, mix the marinade's ingredients

Add the chicken and massage to make sure that you cover it with the marinade

Let seat covered on your fridge while you prepare the rest of the dish or ideally overnight

Cut the potatoes, asparagus and carrots in bite size pieces and place in the sheet pan

Drizzle with olive oil, oregano and pepper and give them a toss

Add 1 cup of water on the pan and place in the oven

Cook for 50 min, making sure that you check often and turn the chicken half way through

The last 2 min, broil it on high for extra crispness

French Onion Mac and Cheese

For the French Onion Mac and Cheese

½ stick (4 tablespoons) butter

sweet onions, thinly sliced (about 8 cups)

beef, chicken or vegetable stock, if needed

Here's a hack I performed on a recipe for an appetizer portion of skewered chunked chicken thighs that the great live-fire cooks and cookbook writers Chris Schlesinger and John Willoughby wrote many years ago, and that I have slowly altered into a main-course grilled dinner. The skinless chicken browns nicely over a medium flame, and the sugary soy basting sauce lacquers it beautifully in the final few minutes of cooking. It's terrific with rice, or as a topping for a salad of sturdy greens. You may wish to double the recipe for Sriracha-roasted cashews. Try these Lazy Enchiladas and you might never roll another enchilada again. This recipe is the perfect easy weeknight meal.

Lazy Enchiladas

lbs. lean ground beef (96/4)

Red Enchilada Sauce

green chilies

(112 g) Mexican Cheese, Shredded

Super Soft Mission Flour Tortillas

Tbsp. cumin

smoked paprika

chili powder

In a pan over medium brown ground beef and break into small pieces. Mix all seasonings in a small bowl and add water. Mix together to create a paste. Once the beef is almost cooked through, add the seasoning paste to the beef and mix well to combine. Add green chilies and simmer everything together for a few minutes while you prep to layer your enchiladas.

Spray a 9 x 13 baking dish with non stick spray. Add a thin layer of enchilada sauce to the bottom to help the tortillas avoid sticking to the pan.

Layer enchiladas. 2 tortillas across the enchilada sauce, half the ground beef spread evenly over the tortillas, half the remaining enchilada sauce, half the cheese. Repeat.

Once you have used all the ingredients in two layers. Add the dish to the oven and bake for 25 minutes until bubbly with slightly crispy edges. Cut through the tortillas and serve.

Gooi die 1 liter gekookte water in 'n emmertjie / glasbottel met 'n inhoud van 2 liter of meer. Laat koel dit vir 20 min af.

Gooi die sout, suiker en koeksoda by die water.

Strooi die meel bo-op die water en maak dan 'n gaatjie in die middel van die meel.

Maak jou emmertjie / bottel dig toe en vou hom lekker warm toe met komberse.

Net voor jy gaan slaap die aand (ongeveer 10 uur) moet jy die mengsel omroer - die mengsel voel soos stywe pap, nie te styf, nie te slap.

Strooi nog 'n bietjie meel bo-op.

Maak nou als lekker warm toe met komberse, vir meer hitte kan jy dit als binne in 'n koelboks bêre. (Hier het my ma somtyds 'n warmwatersak ook bygesit)

Insuursel(Hierdie proses begin jy so 3 nm die dag voordat jy wil bak)

Gooi jou meel, sout, insuursel en lou water (Gooi die water bietjies, bietjies by soos nodig) in 'n lekker groot skottel en begin knieJou suurdeeg is reg as hy lekker borrels het regdeur. Indien dit nie borrel nie, het jy moontlik die suurdeeg verslaap. Dan gooi jy nog bietjie meel en lekker warm water by - hy sal vinnig weer aktief raak!)

Knie totdat dit 'n lekker deeg maak (ongeveer 20 minute), verdeel die deeg tussen jou panne en laat die panne weer vol rys op 'n lekker warm plek. (Kan 1.5 tot 2 ure wees - selfs langer op 'n koel dag!)

Druk jou brode in die oond en bak vir ongeveer 1 uur by 180°Cgrade of tot die brode mooi bruin is en hol klink as jy teen dit klop.

Smeer lekker vet bo-op die brode die oomblik as dit uit die oond kom, dit maak die kors lekker sag en glansend.

Die Brood(Jy kan so rondom 6/7 uur die volgende oggend jou brode begin knie)

Cook the ground pork in a pan or skillet over medium heat, drain fat and return to pan.

Add in the tomato paste, all seasonings, garlic and the corn starch, mix well.

Stir in the broth and milk and then add the pasta, bring to a boil then reduce heat, cover with lid and let simmer for 9-12 minutes, stirring a couple of times..

Remove from heat and mix in the shredded cheese, cover again for a few minutes to let cheese melt and the sauce thicken.

Makes 6 heaping 1 cup servings.. *Note- you can swap out the ground beef for turkey/chicken to lower points on blue/purple
