Mini sandwiches are a great snack not only for kids lunchboxes, but they are also perfect for brunch, party, baby shower or picnic.

Mini Sandwiches

Cream Cheese, softened

Slices of Bread, see note 2

Cheddar Cheese, see note 3

Slices of Deli Ham, see note 4

Baby Lettuce Leaves, see note 5

In a bowl, mix cream cheese and mustard...

In a bowl, mix cream cheese and mustard until smooth.

Place 3 slices of bread on your worktop....

Place 3 slices of bread on your worktop. Spread each with a thin layer of the cream cheese mixture (you should use about ½ of it).

Now, take 2 slices of cheddar and place...

Now, take 2 slices of cheddar and place these on top of one slice. Add 1 or 2 slices of ham (see note 4) and top this with lettuce. Cover with second slice of bread and top this again with cheese (I only use 1 slice here), ham, lettuce and last slice of bread (spread side facing down). Press down slightly. Repeat the same with other 3 slices.

Cut each sandwich in half. Stick 6 toothpicks...

Cut each sandwich in half. Stick 6 toothpicks into each half and cut around them. You will get 6 mini sandwiches out of 1 half = 12 mini sandwiches out of 1 sandwich (check the process pictures for better understanding). Sticking the toothpicks in before cutting keeps the fillings from moving and makes it easier to cut the tiny sandwiches.

Transfer them onto a serving tray and enjoy!

Egg Salad Tea Sandwiches

Boil eggs.Eggs and water go into a saucepan or pot. Water should be an inch above the eggs.On high heat, bring water to a full boil then turn off the heat. With the pot covered, let it sit for 12 minutes. 

Peel eggs.Peel eggs under running cold water.

Chop eggs.Give the hard boiled eggs a good chop. Not too fine that they&#039;ll turn into mush when you mix it with mayo and not too rough that they&#039;ll look too messy.

Combine chopped eggs, mustard, mayo, and salt in a bowl.You can prepare this a day  or two ahead and store in the refrigerator in a sealed container. 

Cut bread into circles.Use a round cookie cutter that&#039;ll cut two circles out of one slice of bread. Avoid cutting the crust.

Assemble the tea sandwiches.From the bottom up: Bread, a tablespoon of egg salad, bread, and a sprig of parsley. Put a cocktail fork through the tea sandwich and use it to hold the parsley in place.

Afternoon Tea Sandwiches (Cucumber, Egg and Cress, Smoked Salmon)

½ an English (hothouse/seedless) cucumber

white sandwich bread

(5 ½ ounces) cream cheese, (at room temperature)

red onion

capers, (drained and finely chopped)

lemon juice

whole wheat (wholemeal) sandwich bread or pumpernickel bread

(7 ounces) sliced smoked salmon ((preferably Scottish style))

Peel and thinly slice the cucumber using a mandoline or sharp knife. You’ll need 36 slices. Place cucumber slices on a paper towel, lightly salt the cucumber, and top with another paper towel. Let stand for about 20 minutes to allow excess moisture from the cucumbers to be absorbed.

In a small bowl combine soft butter, herbs, and lemon zest until smooth.

Spread a thin layer of lemon herb butter on all 8 slices of bread. Top 4 slices of buttered bread with 9 cucumber slices each in even rows. Top with the remaining slices of bread, buttered side down.

Use a serrated knife to cut off the crusts and then cut the sandwiches into 4 squares/quarters, 3 rectangles/fingers, or diagonally into 2 triangles/halves.

Cucumber Tea Sandwiches:

Mix/mash together the egg, mayonnaise, mustard or curry powder if using, and salt and pepper. Divide the mixture over 4 slices of buttered bread. Top with cress and the 4 remaining slices of bread, buttered side down.

Egg and Cress Tea Sandwiches:

Combine the soft cream cheese with the onion, capers, and lemon juice and zest until smooth. Spread a thin layer of the onion-caper cream cheese on all 8 slices of bread. Top 4 slices of bread with sliced salmon, then cover with the remaining slices of bread, cream cheese side down.

Crack Chicken Pinwheels

(8-oz) package cream cheese, (softened)

1½ Tbsp ranch mix

cheddar cheese

Tbsp milk

bacon

chicken

tortillas ((10-inch))

Mix softened cream cheese with the ranch powder, cheddar cheese, 1 Tbsp milk, bacon and chicken until well combined. Add more milk if desired.

Spread about  1/4 cup of chicken mixture evenly on each tortilla.

Roll the tortilla up gently, yet tightly to make sure it holds together and keeps its shape.

Refrigerate for about 30 minutes to firm up the softened cheese. Cut off ends of tortilla roll and cut into 1-inch slices.

Fill these yummy sandwiches with whatever feels right – prosciutto, grilled eggplant and mozzarella, or smoked salmon, rocket and melting Gruyère. If you don’t feel like firing up the grill, they cook well in a dry frypan.

Make chive butter by mixing chopped chives and butter. Set aside.

Slice cucumber. Blot cucumber slices with paper towels.The cucumber needs to be cut into two different thicknesses. Use a mandoline slicer to cut cucumber into 2 sizes. 4 slices at 1/8&quot; and 4 slices at the thinnest setting so that it&#039;s paper thin. After slicing the cucumbers, place them flat on paper towels and blot to make sure they&#039;re dry.

Find a round cookie cutter that&#039;s the same size as the sliced cucumber.

Cut circles out of the bread using the cookie cutter.Avoid cutting the crust. Cut 8 bread circles.

Assemble tea sandwiches.Spread a thin layer of chive butter on the top side of the bread, add a slice of the 1/8&quot; cucumber, then top with a piece of bread that buttered on the side that faces the cucumber. Next, loosely fold the thin cucumber slice in half and skewer it in place with a cocktail fork.

whole wheat sandwich bread (or eg rye, granary)

salmon

white sandwich bread (or other kind, to taste)

Peel the skin from the piece of cucumber and slice as thinly as possible. A mandolin or wide vegetable peeler is most effective for this. It&#39;s often safest to simply peel a section from the cucumber then slice it while still attached to the rest of the cucumber so that you have something to hold while slicing (and keep fingers safe!)

Put a thin layer of butter on both slices of bread then arrange a layer or two of cucumber over one slice. Try to make the cucumber layer as even as possible and right to the edges.

Top with the other slice of bread, trim off the crusts keeping the edges parallel  as you do so. Cut into either 3 - 4 thin fingers or four triangles.

For cucumber sandwich

Spread both slices of bread with a thin, even layer of bream cheese. Top one of them with a slices of smoked salmon in an even layer, going close to the edge.

For smoked salmon sandwich

Spread one slice of bread with butter and the other with a thin layer of mustard (if you like, you can also butter it underneath as well).

Make a layer of roast beef on top of one of the slices of bread, going right to the edges and without gaps.
