A traditional British dessert made with oats, cream and flavoured with orange.

Flummery

tbsp oats

water

ml orange juice

tbsp caster sugar

150 ml double cream (heavy)

75 ml double cream

tbsp whiskey

tbsp honey

Soak

Measure the oats into a measuring jug and top up with water to the 500ml or 18 fl oz mark. Leave for 48 hours for the mixture to steep.

Strain

Place a sieve over a saucepan and strain the oat water into it.

Boil

Juice the oranges and the juice to the saucepan with the sugar. Bring the mixture to the boil over a medium heat and simmer for about 10 to 15 minutes until the mixture is thick.

Let the custard cool for 5 minutes and then stir in the cream.

Chill

Divide between 4 glasses and chill for an hour until set.

Pour

Whip

Whip the cream until it just holds its shape then place in a piping bag fitted with a large star nozzle.

Pipe

Pipe the cream onto the middle of the flummery.

Flummery Recipe 

x 85 g packet Aeroplane Original Raspberry Flavour Jelly

(250 mL) boiling water

x 375 mL evaporated milk, chilled

raspberries

yoghurt

mint leaves

Combine Aeroplane Original Raspberry Jelly crystals and boiling water in a medium bowl. Stir until fully dissolved. Cover and refrigerate until the consistency of a thick syrup (Approximately 1-2 hours).

Using an electric mixer, beat evaporated milk with slightly set jelly on high speed for approximately 5 minutes or until doubled in volume. Should be thick and glossy.

Spoon into 8 individual serving bowls, cover and refrigerate for a further 2 hours or until set firm. Serve with a dollop of yoghurt, fresh raspberries and mint leaves.

Soak the oatmeal in 450ml/15 floz cold water for 48 hours then drain and discard the oatmeal retaining the liquid

Pour the liquid into a pan and add the orange juice and sugar

Bring to a boil stirring continuously till thick this can take from 15 minutes depending on the starchiness of the oatmeal used. If it doesn&#039;t thicken to your liking add cornflour dissolved in a tiny amount of water to thicken.

Remove from heat and allow to cool

Stir in the double cream and pour into 6 small serving glasses

Chill in fridge for 30 mins

Mix whisky with honey and add a teaspoon to each glass

Whip the cream and top each glass and sprinkle with orange zest

Mix the jelly with 250ml boiling water until it has dissolved. Pour into a bowl and leave to cool.

Stir through the evaporated milk and pour into an approximately 20cm trifle bowl. Cover and put in the fridge to set overnight. To serve, top with cream, if you like.
