Pico de gallo is simple to make and easy to love.  This recipe uses a variety of measurements (including weight and volume) to make consistent batches, as well as annotations and variations.

Pico de Gallo

450 g tomatoes ((3 cups) seeded and finely diced)

g white onion ((1/2 cup) finely diced)

serrano pepper ((about 10 g) very finely diced)

g cilantro ((1/4 cup moderately packed) chopped)

Combine all of the ingredients and let stand for 5-10 minutes to allow the flavours to mix.  If necessary, adjust the salt and lime juice to taste.

Serve alone with tortilla chips, or as a side to accompany Mexican dishes like tacos (honestly, you could put it on anything).

Fresh Salsa Recipe

Blend.

Combine the jalapenos and garlic in the bowl of a food processor and process until finely chopped (scraping down the sides of the bowl as necessary.) Add the rest of the ingredients and process in one-second pulses until the salsa is at your desired consistency (about 3-5 pulses). DO NOT PUREE!

Store.

Can be served immediately, but best after chilled for 2 hours for flavors to blend. Store in airtight container in refrigerator for up to two weeks.

Place tomatoes in mesh strainer over medium bowl. Sprinkle with salt, tossing gently to mix. Let stand 30 minutes. Meanwhile, mix remaining ingredients in large bowl. Set aside.

Place 1 1/2 cups of the tomatoes in food processor. Pulse just until smooth. Add pureed tomatoes to bowl with remaining ingredients. Add remaining tomatoes, stirring to mix well.

Serve immediately or store in airtight container in refrigerator up to 1 week. Test Kitchen Tip: For a sweet or spicy twist, stir in 1 cup chopped fresh mango, peach or pineapple, or 1/4 cup chopped fresh jalapeño.
