Sauteed Mushrooms are an amazing side dish or make a great topping for steaks or burgers!  The key to the deep rich flavor is to allow the mushrooms to caramelize.

Sauteed Mushrooms with Garlic

lb white or brown mushrooms (or cremini or portobello)

soy sauce

olive oil

butter

white wine (optional)

thyme

garlic (minced)

chives

Clean mushrooms by gently wiping with a paper towel or using a mushroom brush. Slice into thick slices (about 1/2").

Add butter and oil to a pan and heat over medium high heat.

Quickly toss the mushrooms &amp; soy sauce (do not do this ahead of time, this will remove too much moisture from the mushrooms)

Add the mushrooms to the pan and toss with olive oil mixture.&nbsp;Do not stir allow to cook about 4-5 minutes without disturbing to brown on one side.

Add white wine if using and allow to evaporate. Add garlic and thyme (if using).&nbsp;Continue cooking an additional 3-4 minutes stirring occasionally until cooked.

Season with salt &amp; pepper to taste.

Fried Oyster Mushrooms

spelt flour

water (more

onion powder

garlic powder

sea salt

vegetable oil (more or less for frying)

oyster mushrooms (found in Asian stores, about a pound)

parsley (optional)

Grab your cast iron or&nbsp;FryDaddy Electric Deep Fryer&nbsp;(or whatever type of deep fryer you are using) and pour in oil.&nbsp; (DO NOT PLUG UP YET)

Take your oyster mushrooms out the package and place in a colander. Pull apart to desired size and rinse well.&nbsp;

Start making your wet batter. Place 1 cup of spelt flour in a large mixing bowl along with garlic powder, onion powder, and sea salt. Add in water and mixed. Batter should be the right consistency to coat mushrooms; not to thick and not to runny. Set aside.

Grab a bowl 1 cup of spelt flour, garlic powder, and onion powder and mix until fully combined. Set aside. NOTE: You could use a large Ziploc bag for this to easily add your mushrooms and shake to get an even coat of the dry batter on the mushrooms.

Next coat each oyster mushroom in the wet batter ONCE and place it in the the bowl and evenly coat with the dry batter ONCE. Do that for all pieces.&nbsp;&nbsp;NOTE: Using a Ziploc bag simply close the bag and shake vigorous  until all mushroom are fully coated in dry batter.&nbsp; DO NOT GO BACK IN FORTH BETWEEN THE WET AND DRY BATTER TO PREVENT OVER BREADING IT WILL NOT TASTE WELL!

Plug up your Fry Daddy Electric Deep Fryer and allow oil to get hot. (Or if using a cast iron heat oil in your iron until hot). Carefully place mushrooms in oil allowing mushrooms to fry for about 2 to 3 minutes until evenly browned. With your fry basket remove done mushrooms from oil and place on plate cover with a paper towel. Sprinkle with additional sea salt and dried parsley (opt) NOTE: Make sure your oil is hot and DO NOT overcrowd your mushrooms in the deep fryer or cast iron. If you need, divide mushrooms in half to cook a handful at a time.&nbsp;

Serve with your favorite dipping sauces, on top of a salad, or along with your favorite sides for dinner!

These fried mushrooms are coated in a light and crispy seasoned beer batter, then deep fried to golden brown perfection. The ultimate party snack that&#x27;s always a huge hit!

Fried Mushrooms

mushrooms

all purpose flour (divided use)

beer

salt

black pepper

parsley (chopped)

Heat 3 inches of oil in a deep pot to 375 degrees F.

Coat the mushrooms in 1/2 cup flour, shaking off any excess.

In a medium bowl, mix together the remaining cup of flour, beer, salt, pepper, garlic powder and onion powder.

Coat each mushroom in batter, letting the excess batter drip back into the bowl.

Fry 4-5 mushrooms at a time until golden brown, about 7 minutes.

Repeat the process with the remaining mushrooms.

Sprinkle with parsley, then serve immediately.

Buttermilk Fried Mushrooms

oyster mushrooms (125 g)

buttermilk (240 mL, see notes for vegan substitute)

all-purpose flour (200 g)

tsp each salt, pepper, garlic powder, onion powder, smoked paprika, cumin

Tbsp oil* (15 mL)

Marinate: Preheat air fryer to 375 degrees F (190 C). Clean mushrooms then toss together with buttermilk in a large bowl. Let marinate for 15 minutes.

Breading: In a large bowl combine flour and spices. Spoon mushrooms out of the buttermilk (save the buttermilk). Dip each mushroom in the flour mixture, shake off excess flour, dip once more in the buttermilk, then once more in the flour (in short: wet &gt; dry &gt; wet &gt; dry).

Cook: Grease the bottom of your air fry pan well, then place mushrooms in a single layer, leaving space between mushrooms. Cook for 5 minutes, then roughly brush all sides with a little oil to promote browning. Continue cooking 5 to 10 more minutes, until golden brown and crispy.

"Fried Chicken" Made With Oyster Mushrooms!

Try this vegan take on the classic English breakfast that boasts vegan sausages with hash browns, mushrooms, tomatoes, scrambled tofu and baked beans

Vegan fry-up

potato,

peanut butter

cherry tomatoes

sunflower oil

maple syrup

¼ tsp smoked paprika

Portobello mushroom, sliced

pack silken tofu

yeast

turmeric

garlic, crushed

vegan sausages (we used Dee’s leek & onion)

x 200 grams can baked beans

Cook the potato whole in a large pan of water, boil for 10 mins then drain and allow to cool. Peel the skin away then coarsely grate. Mix with the peanut butter and season well. Set aside in the fridge until needed.

Heat oven to 200C/180C fan/gas 6. Put the cherry tomatoes onto a baking tray, drizzle with 2 tsp sunflower oil, season and bake for 30 mins or until the skins have blistered and start to char. Cook the beans and sausages following the instructions on the pack so they're ready to serve at the same time as the scrambled tofu.

Meanwhile, mix the maple syrup, soy sauce and ¼ tsp smoked paprika together in a large bowl, add the sliced mushroom and toss to coat in the mixture. Leave to stand while you pour 2 tsp sunflower oil into a non-stick frying pan and bring it up to a medium high heat. Fry the mushroom until just starting to turn golden but not charred. Scoop onto a plate and keep warm until serving.

Put 1 tbsp oil into the frying pan and add spoonfuls of the potato mixture – you should get about 4. Fry for 3-4 mins each side then drain onto kitchen paper.

Crumble the tofu into your frying pan and sprinkle over the remaining ingredients and a good pinch of salt and pepper. If the pan looks a little dry add a splash more oil. Fry for 3-4 mins or until the tofu is broken into pieces, well coated in the seasoning and hot through.

Divide everything between 2 plates and serve with a hot mug of tea made using soy milk.

Crispy crumbed air fried mushrooms is a delicious vegetarian snack or appetizer served with sour cream dipping sauce.

Crumbed Air Fried Mushrooms

flour

eggs (beaten)

panko breadcrumbs

oregano

salt and black pepper

sour cream

lemon juice

salt and black pepper (to taste)

Season the flour with a pinch of salt and pepper and place in a shallow bowl.

Beat the eggs into a second shallow bowl.

In a third bowl, combine the panko breadcrumbs with the garlic powder and oregano and season with salt and pepper.

Coat the mushrooms first in seasoned flour, then in beaten egg and finally in bread crumbs.

Place the crumbed mushrooms in a single layer in the air fryer then drizzle with olive oil. Place the basket in the air fryer.

Cook at 200ºC/390ºF for 10 minutes then turn over and cook for another 3-5 minutes until the mushrooms are crisp and golden. 

To make the dipping sauce, stir together the sour cream, chopped chives, garlic powder and lemon juice then season to taste with salt and pepper.

Serve the mushrooms with the dipping sauce.

Logan's Roadhouse Fried Mushrooms

vegetable oil (for frying)

fresh white button mushrooms

all-purpose flour

buttermilk

water

Pour oil into a large saucepan or deep fryer to a depth of  3 to 4 inches.  Heat the oil to 350 degrees.

Gently clean the mushrooms with a damp paper towel.  If these stems are very large (greater than 3/4 inch), trim off the stem, as they may be woody.   If the mushrooms are small, there is no need to trim off the stem. 

Combine the flour with the salt and pepper in a bowl. Stir to combine the flour mixture.

Combine buttermilk and water in another bowl

Dredge the mushrooms in the seasoned flour, shaking off the excess, and then dip them in the buttermilk.

Dredge them in the flour again. Knock off the excess flour.

Lower the mushrooms gently into the hot oil, cook them until they are golden brown. It will take about 2 to 3 minutes for the mushrooms to cook. Drain on a wire rack. Serve with your favorite sauce.

Read my comment below.  We had same issue (years ago on other things), but I explain how to fix it below.  Hope that helps you, because this is a DAMNED GREAT recipe.  Better than the restaurants -- if you ask me.

Stephanie ... These were so delicious.  I can't believe we can make them at home -- just as good as going to a restaurant.  We will never buy these again.  However, here are some changes that I'd suggest you try and (then) maybe apply to your own recipe.

Cathy made these yesterday, and they were fabulous.  But, a few changes needed to be made:
	• Eat with Marie's creamy ranch dressing. 
	• Reduce salt and pepper to 1/2 tsp … maybe even less.
	• Early on, remove all the stems for the mushrooms.
	• If mushrooms really big, cut in half.
	• With smaller mushrooms, just keep them whole.
	• Don't cut them too small, or they will not be juicy.  They will be hard to chew and leathery.
	• Don't overcook them or over-brown them, because they won't be that juicy.
	• Aim for cooking them to be "Light Brown" -- about 2 minutes.
	• But randomize the mushrooms so that sometimes they're big and sometimes they are a little smaller.

Hope that helps to improve your recipe; or, that's what we like.  And, the amount of salt is not determined yet.  But, we are going to reduce it down.  It's pretty salty to us.

I made this but didn't get the batter to stick all over the mushrooms. They tasted superb though, used baby bellas and removed stems. So good like near perfect except the batter
