The perfect recipe for beer braised, fork tender pork carnitas. This recipe is so delicious you won&#039;t want to put anything else in your tacos.

Instant Pot Beer Braised Pork Carnitas

pork shoulder (boneless, skinless)

pork

250 ml beer (you can also use orange juice if you'd like)

tbsp cumin (ground)

coriander seed (ground)

oregano

bay leaves

garlic (peeled)

chili

salt

olive oil

lime (juiced)

Preparing the Instant Pot

Dice all the meat into 2cm/1inch pieces and place in the instant pot.

Mix the spices

Mix all the ingredients except the lime juice and mix with the meat in the instant pot.

Pressurize

Close the lid and set the time to high pressure for 27 minutes.

De-pressurize

When the timer beeps let the instant pot naturally de-pressurize for 10 minutes. Manually let out the rest

Strain

Strain the meat from the liquid, saving the liquid.

Get a frying pan hot over medium heat and add the olive oil. Fry the meat in batches until nicely browned. Always be careful when adding wet ingredients to hot oil as it will splatter a bit.

Add the braising liquid

Add all the fried meat back in the pan and add the saved braising liquid.  Cook over medium heat until most of the liquid is evaporated. Season with lime juice and salt and pepper to taste.

Serve in your favourite taco with your favourite sides! Enjoy!

In a wok or heavy-bottomed skillet, heat the oil over high heat until shimmering.

Add the chopped pork skin and cook until crisp, about 2-3 minutes. Remove from the pan.

Add the garlic to the pan and cook until slightly browned, but not burnt, about 2 minutes.

Add the onion and sauté for 2 minutes, until translucent.

Add the celery and carrot, and sauté for 2 minutes more, until tender.

Add the lechon, longanisa, and soy sauce, and sauté for 2-3 minutes, until liquid is fully absorbed.

Add the noodles and lechon drippings, and cook until the liquid has been absorbed, 2-3 minutes. Season with the salt, pepper, and lemon juice. Remove the pan from the heat.

Serve the pancit lechon in bowls, garnished with the crumbled pork skin, chicharrón, and chives.

Fried Pork Strips With Sweet and Spicy Dipping Sauce

extra fine yellow cornmeal

all-purpose flour

Place 3/4-inch of oil into a 10-inch frying pan. Heat to 360° F when ready to fry.

Combine the flour mixture for dredging: add flour, cornmeal, salt, pepper, onion powder, garlic powder, and sugar in a large zip lock bag. 

Make the egg wash: whisk egg, milk, 1/8 teaspoon salt, and 1/8 teaspoon pepper in a small bowl.

Place pork strips into a mixing bowl. Add egg wash. Mix to thoroughly combine.

Working in small batch at a time, remove pork strips, shaking off liquid. Place into the bag of the flour/cornmeal mixture. Close bag and shake to coat thoroughly.

Scoop pork into a spider or small sieve. Shake and tap of excess flour mixture back into the bag. Do not skip this step. It creates texture on the flour and makes it fry up nice and crispy.

Drop the pork into the preheated oil. Fry for 2 to 3 minutes or until golden brown. Do not overcook. It will dry out the pork. Transfer to a wire rack to cool. 

Continue coating and frying the pork in small batches.

To make the dipping sauce: combine all ingredients until smooth.

Serve and enjoy!

Country Fried Pork Bacon Gravy

buttermilk

g all-purpose flour

0.5 tsp black pepper

paprika

60 ml vegetable oil

bacon, chopped

g unsalted butter

360 ml whole milk

Marinate Pork Chops

Place pork chops in a shallow dish and pour over the buttermilk. Allow to marinate for 30 minutes at room temperature.

Prepare Dredge Mixture

In a separate shallow dish, combine the flour, salt, black pepper, paprika, garlic powder, and onion powder.

Heat Oil

Pour vegetable oil into a large skillet and heat over medium temperature until it shimmers.

Dredge and Fry Pork Chops

Remove pork chops from the buttermilk, dredge each in the seasoned flour, shaking off excess. Fry in the hot oil for 4 to 5 minutes per side until golden brown and fully cooked. Transfer to a plate lined with paper towels.

Cook Bacon

In a clean skillet, cook chopped bacon over medium heat until crisp. Transfer bacon to a paper towel-lined plate, reserving rendered fat in the pan.

Prepare Gravy Base

Add butter to the bacon fat in the skillet and allow to melt. Stir in flour and cook for 1 minute, stirring constantly.

Finish Bacon Gravy

Gradually whisk in the milk until smooth. Season with salt and pepper. Simmer for several minutes until thickened, then stir in crispy bacon.

Serve

Ladle warm bacon gravy over fried pork chops before serving.
