Frozen s&#039;mores are a refreshing frozen treat made with a combination of chocolate pudding, whipped topping, cream cheese, and marshmallow fluff layered between graham crackers!

Line

Line a 9×13-inch baking dish with parchment paper, leaving extra parchment hanging over, so you can easily pull them out.

Whisk

In a medium bowl, whisk together the pudding mix, milk, and 1/2 cup Cool Whip until smooth and creamy.

Spread

Lay half of the graham crackers evenly in the bottom of the baking dish. Spread pudding mix into an even layer over the top and chill.

In a medium bowl, beat together the cream cheese and marshmallow creme until smooth. Fold in remaining 2 cups Cool Whip and a pinch of salt.

Freeze

Spread cream cheese mixture evenly over the chocolate layer. Place remaining graham crackers over the top. Cover with foil. Freeze 6 hours, or until firm enough to cut through.

Slice

Pick up the overhanging parchment to remove the frozen filling. Place on a cutting board, using the graham crackers as a guide, slice the layers into 12 squares. Trim away any excess of the frozen filling.

Serve

Enjoy while softened or store in the freezer in a zip top bag. If frozen, allow sandwiches to soften at room temperature 15 minutes before eating.

Easy vegan smores recipe that only requires 4 ingredients and a sheet pan. YOur kids are going to love it!

graham crackers

chocolate chips (melted)

cocowhip or coconut whipped cream (1 package)

vanilla protein powder (plant-based)

On a sheet pan or freezable container, lay down 4 of the graham cracker sheets side by side. 

Spread melted chocolate over the top of the graham crackers.

Next, open your package of coco whip, and mix it with the vanilla protein powder until combined.

Spread that over the graham crackers covered in chocolate until evenly dispersed. Top the graham crackers with the other four sheets to create “sandwiches”.

Place in the freezer for 2 to 4 hours. They will still be slightly soft on the inside, like a marshmallow. Freeze overnight for an ice cream like consistency.

tsp coconut oil (*to help thin the chocolate chips)

vanilla extract & good pinch sea salt

Prepare the Protein Filling: Add the protein to your tub of whipped topping, along with the peanut butter, if using. Mix well until no lumps remain and it&#39;s smooth, thick, and creamy.

Assemble the S&#39;mores: Lay half of the graham crackers flat on a parchment-lined square baking pan. Scoop a generous amount of the protein filling onto the crackers and spread evenly. You can use the whole tub, half, 3/4 - however much you want! I like a thick layer. Leave leftovers in the freezer or fridge to use for your next batch.

Dip in Dark Chocolate: In a small bowl, melt the chocolate. Use the double-boiler method or simply heat in the microwave in 30 second increments mixing between each, until smooth. Pour this over the whipped topping layer, gently spreading it out. Place the remaining graham crackers over top and just slightly and gently press them down to stick.

Freeze: Freeze the assembled s’mores for at least 3-4 hours or until firm. The longer they freeze, the more the whipped topping layer will firm up!

Spread the marshmallow mixture over the chocolate pudding layer.

Top with the remaining graham cracker halves.

Cover with foil and freeze for at least 6 hours or until firm.

Use the parchment paper to lift the dessert out of the dish. Cut into 12 squares and serve chilled.
