Place all the garlic butter ingredients in a bowl and season well. Mash with a fork until well combined, shape into two sausages using cling film to help you shape it, then tightly wrap and chill or freeze until really firm. Can be made up to 3 days in advance. When firm, slice each into 8 even pieces.

Lay a chicken breast on a chopping board and use a sharp knife to make a deep pocket inside the breast. The easiest way is to push the point of a knife into the fat end, keep going halfway into the fillet. Be careful not to cut all the way through or the butter will leak out when cooking. Repeat with the remaining breasts. Push 2 discs of butter inside each chicken breast, press to flatten and re-seal with your hands. Set aside.

Mix the breadcrumbs and Parmesan on one plate, and tip the eggs onto another. On a third plate, mix the flour with paprika and some salt. Dip each breast in the flour, then the egg and finally the breadcrumbs, repeating so each Kiev has a double coating (this will make them extra crisp and help to keep the butter inside). Chill for at least 1 hr before cooking, or freeze now – see tips, below.

To cook, heat oven to 180C/160C fan/ gas 4. Heat the oil in a large frying pan over a medium-high heat. Fry the Kievs for 2-3 mins each side until golden – you may need to do this in batches. Transfer to a baking tray and cook for 20-25 mins until cooked through.

Serve a platter of warm dough balls with plenty of garlic butter. This easy recipe makes a great sharing-style starter for family and friends

Warm 175ml water in a saucepan until steaming, then add the butter and set aside to cool until warm but not hot. Mix the flour, yeast, sugar and 1 tsp salt in a large bowl or tabletop mixer. Add the cooled water and mix to make a soft dough. Knead for 10 mins by hand, or for 5 mins in a mixer, until the dough feels bouncy and smooth. Return to a clean, oiled bowl and cover with oiled cling film. Leave somewhere warm to rise for 1½-2 hrs, or until doubled in size.

Oil a baking sheet. Knock the air out of the dough and knead again for several mins. Take a small piece of dough (about the size of a walnut) and roll it into a ball. Place the ball on the baking sheet and repeat with the remaining dough, spacing the dough balls about ½ cm apart. Cover and leave to rise for 30 mins. Meanwhile, to make the garlic butter, melt the butter in a pan, then stir in the garlic. Season.

Heat oven to 180C/160C fan/gas 4. The dough balls should be almost touching by now. Bake for 25-30 mins until cooked through. Brush with some of the garlic butter and leave to cool for 5 mins. Serve with the remaining garlic butter and a selection of crudités and cured meat, if you like.

Roasted Garlic Butter Ribeye Steaks

Ribeye

Avocado oil (as a binder)

Start off by adding two bulbs peeled garlic in olive oil and placed in the oven at 325 degrees for 25 minutes.

While the garlic is roasting, season the steaks with honey garlic seasoning and let sit at room temperature.

Get a block of unsalted butter in a bowl (make sure it is softened) and begin adding 6-8 roasted cloves of garlic, rosemary, thyme, shallots, Mexican chili powder, black pepper and salt. Mix this together and place to the side.

Set the grill up for direct grilling and sear the steaks for 60-90 seconds per side. After they form a nice crust, remove them to the indirect zone and set the vents for low and slow cooking. Let the steaks finish off on the indirect side.

When the steaks reach an internal temperature of 118-120 degrees F internally, add a tablespoon of the butter to each steak. Remove the steaks when they reach 127-128 degrees F.

Let rest for 8-10 minutes and then slice for serving!

Preheat the oven to 360°F/180°C.

Cut about a third of the garlic top off, leaving the cloves exposed. Peel off some of the outer skin. Place each garlic head onto a sheet of tin foil.

Drizzle with olive oil. Season with salt, pepper, and sweet paprika. Wrap in the foil and place onto a baking tray.

Roast for about 30 minutes or until soft inside. When ready, take it out from the oven and let it cool completely.

In a food processor (or a bowl) combine roasted garlic with butter and pulse several times until smooth.

Wrap it in a plastic foil and roll it into a sausage. Place in the fridge to chill.

Refrigerate for up to five days, or freeze up to three months.
