Use the palm of your hand to carefully separate the heads of garlic. Using a sharp small knife, trim the ends of each garlic clove and then peel each clove, leaving it intact.

Place the peeled garlic cloves in a small saucepan (2 quarts or larger), cover with the olive oil, and place over very low heat on the stove. As the oil begins to warm, you will slowly see small bubbles form–they will gradually get larger until the oil is simmering slowly.

Continue to cook the garlic in the oil...

Continue to cook the garlic in the oil over very low heat, stirring carefully every few minutes, for 12 to 18 minutes (this will depend on your garlic clove size, adjust time as necessary), or until the garlic cloves are tender and nearly cooked through, yet still retain their shape and are not yet caramelized. Use a long sharp knife to pierce the cloves, they should meet little to no resistance once they are finished cooking.

Remove from the heat, and allow to cool...

Remove from the heat, and allow to cool completely (stir every few minutes) before transferring the garlic and oil carefully to a large glass jar or other airtight container. Add fresh herbs to the oil, if using. Store refrigerated for up to 2 to 3 weeks.

Use this preserved garlic in everything from mashed potatoes to soups and stews, salads and sandwiches. And use the oil in cooking and dressings too.

Remove from water, dry on kitchen paper and set aside to cool

Sterilise small jars and fill with the garlic and add the oil and the spices

Seal the jars and store in a dark place for 2 months before using

The garlic will be crisp for 3 months then soften

Sous Vide Garlic Confit Recipe

garlic,

Set sous vide machine to 88C/190F.

Add all ingredients into a 4 ounce canning jar. Gently submerge the entire jar in the bath using rubber tongs, and set a timer for 1 and a half hour.

Preparation

Remove jar from bath using tongs and transfer to an ice bath for 10 minutes. Once chilled, remove garlic from oil and place on a paper lined plate. Pat the cloves dry using paper towel and lightly coat them in salt to taste. Consume immediately or store them in an airtight container in the refrigerator.

Finishing

Slow cooked garlic in olive oil with spices. Serve the garlic cloves on bread or use the garlic and oil in recipes.

Slow Cooker Garlic Confit

Garlic Confit - A simple and delicious culinary technique that leaves you with the most savory garlic and beautifully infused olive oil!

Place rendered chicken fat or olive oil into small saucepan.

Let simmer, covered, approx. 1 hour or until garlic becomes browned.

Store for later to use in any of your favorite recipes, like Garlic Hummus!

Making it again! Best tasting garlic. Did mine in the oven. I use the leftover oil to make croutons.

Oven Roasted Garlic Confit

8-10 garlic bulbs

salt and pepper, to taste (optional)

Preheat your oven to 275 degrees Fahrenheit. Cut and remove the top third of the garlic bulbs.

Place the garlic in a casserole pan or glass ovenproof dish and add the olive oil to it.  Pour enough olive oil on top of the garlic so that all the bulbs are covered. Add the sprigs of thyme between the garlic bulbs.

Bake in the oven for 1 hour and 15 minutes. Let cool for 15 minutes.

Squeeze out the garlic from the cloves into a small bowl.  Store both the oil and the garlic in an airtight container in refrigerator for up to two weeks.

Focaccia is the perfect bread recipe for beginners as it requires no kneading or no prior bread making skills. It’s super easy to make, absolutely delicious and will always impress and please a crowd. Everyone needs a focaccia recipe in their life but especially this one as it incorporates my famous garlic confit.

Wild Garlic & Rosemary Focaccia

Rich Glen Wild Garlic Olive Oil

sachet yeast

tsp honey or maple syrup

all purpose white flour (740 grams)

2.5 tsp flakey sea salt (+ extra for sprinkling)

rosemary leaves

Preheat the oven to 120 degrees Celsius. 

Peel the garlic by breaking the cloves away and placing them into a heatproof bowl. Submerge in boiling hot water for 5 minutes and drain. The skin will become loose and easy to peel away. 

Place the garlic cloves, thyme and rosemary into an ovenproof dish and fully submerge in olive oil. It&#39;s important the garlic is fully submerged in the olive oil so it does not burn. Bake for 2 hours or until the garlic has browned in colour. 

Allow to cool and store in an airtight container or jar with the garlic cloves fully submerged in the olive oil for up to several weeks in the fridge.

Wild Garlic Confit

In a medium bowl, mix together the lukewarm water, yeast and honey with a whisk and leave to sit for 5 minutes or until the yeast has foamed. This will indicate that your yeast is active. 

In a large bowl, combine the flour and salt and whisk together. Add the yeast mixture to the bowl and bring the dough together with your hands or a spatula until a shaggy and sticky dough forms.

Coat a large mixing bowl with 4 tablespoons of the garlic confit olive oil and transfer the dough to the bowl. Coat the dough in the olive oil. Cover the bowl with plastic wrap and place into the fridge. Leave the dough to rise for a minimum of 6 hours but ideally for 24 hours. The dough will double in size and look bubbly. 

Take the dough out of the fridge and fold it over itself in quarters. Gather up each edge of the dough with your hands and fold it over itself while turning the bowl. The dough will deflate while you shape it into a neat ball. 

Coat a deep rectangular baking dish (I use a pan that is 34cm x 23cm x 5cm) with 2 tablespoons of the garlic confit olive oil and transfer the dough ball to the baking dish. Using your fingers, stretch the dough out slightly into a rough rectangular shape. There is no need to stretch the dough out to the edges of the pan as the dough will rise and spread. Cover the pan with a tea towel and leave the dough to rise in a warm area of your house for 3 - 4 hours. If your dough is uncovered there is risk of too much air getting into the dough and creating a dry and crusty layer on top.

Preheat the oven to 200 degrees celsius. Once the dough has risen, use your fingers to indent or dimple the dough. Scatter the garlic confit cloves and rosemary over the dough. Drizzle the dough with 2 tablespoons of the garlic confit olive oil. This will help the crust of the dough get golden and crispy when baking. Finish off with a sprinkling of flakey sea salt. Bake for 20 - 30 minutes or until the dough has developed a golden crust on top. 

Let the bread slightly cool before removing it from the baking tray. Place onto a wire rack. 

Slice the bread and enjoy on its own or dipped into the garlic confit olive oil with some balsamic vinegar.

This Confit Garlic recipe is going to be your new staple condiment! Confit Garlic is slow-cooked garlic cloves that are soft &amp; savory. It goes so well on toast, with pasta, or even on proteins!

Confit Garlic (Stovetop, Oven, &amp; Instant Pot)

Extra Virgin Olive Oil

Peel about 30-40 cloves of garlic, making sure to keep the cloves whole as much as possible. 

Measure 1 1/4 - 2 cups extra virgin olive oil. 

Add all of the garlic cloves and olive oil to the Instant Pot. 

Set the Pot to the &#039;slow cook&#039; function on the lowest setting. 

Cover with a regular lid, not the Instant Pot lid. 

Slow cook for about 1 hour and 30-40 minutes, or until garlic is soft and can be easily pierced with a fork.

Instant Pot Method

To a small or medium sized pot, add all of the garlic cloves and the olive oil. 

Next, turn the stove on to low heat. 

Cook on low for about 1 hour, or until garlic is soft and can be easily pierced with a fork. 

Stovetop Method

Add all of the garlic cloves and olive oil to a small casserole dish or other oven-safe vessel. 

Heat the oven to 200ºF. 

Cook for about 2 hours, or until garlic is soft and can be easily pierced with a fork.

Oven Method

Once the garlic is soft, remove it from its heat source. 

Either add the garlic and the oil to a glass jar and refrigerate or strain out the oil. If you strain the oil, I recommend keeping the oil in a glass container and using it as a cooking oil. 

I also recommend blending the cloves (without the oil) in the food processor and keeping the garlic paste so it is easier to use. 

Remaining Instructions:

Hi Gina! To can low/non-acid foods you have to use a pressure CANNER. (**not  cooker, canner is lower pressure**)
That said *wink* I have successfully canned broth &amp; pasta sauce the hot water bath method. It just takes longer-like 2 or 3 hours. I ate said foods 6-12 months later with no ill effects.

Peel the garlic and use a knife to cut the brown root off each peeled garlic clove; then place them in a medium saucepan. Then pour oil over the garlic; enough to cover it.

Turn the heat up to medium-low. You want it to reach the point where there are small bubbles in the oil, but not so much that it’s technically boiling. Continue cooking garlic slowly in the oil for roughly 45 minutes. Not only will the oil be garlic-infused, but your house will also be too. It’s a wonderful and intense aroma.

Once the garlic is done, turn off the heat but allow the pan to sit on the burner until it’s completely cooled. Next, place the confit in a jar and refrigerate. 

Store the confit in the fridge in its oil. It will keep up to 2 months if stored properly. Add this roasted garlic to your favorite dishes, and you won’t have to worry about storing it because it will be gone much sooner than that.

An indulgent garlic bread made with chilli olive oil garlic confit and a homemade garlic confit butter.

Spicy Garlic Confit Butter Focaccia

Rich Glen Fiery Chili Olive Oil

birds eye chillies (halved)

100 g salted butter (at room temperature)

bird eye chillies (optional)

parsley

tsp flakey sea salt

lukewarm water (2 cups cold water and 1/2 cup boiling hot water)

sachet dry yeast (7 grams)

white all purpose flour

tbsp Rich Glen Extra Virgin Olive Oil (+ 2 tablespoons garlic confit oil)

garlic butter

tsp chili flakes

g parmeson cheese (grated)

Place the garlic cloves and chilies into an ovenproof dish and fully submerge in olive oil. It&#39;s important the garlic is fully submerged in the olive oil so it does not burn. Bake for 2 hours or until the garlic has slightly browned in colour. 

Allow to cool and store in an airtight container or jar for up to several weeks in the fridge.

Chili Oil Garlic Confit

Place all ingredients into a food processor and blend until smooth and all ingredients are well combined. 

Spicy Garlic Confit Butter

Coat a deep rectangular baking dish (I use a pan that is 34cm x 23cm x 5cm) with 2 tablespoons of the garlic confit olive oil and transfer the dough ball to the baking dish. Using your fingers, stretch the dough out slightly into a rough rectangular shape. There is no need to stretch the dough out to the edges of the pan as the dough will rise and spread. Cover the pan with a tea towel and leave the dough to rise in a warm area of your house for 3 - 4 hours. If your dough is uncovered there is risk of too much air getting into the dough and creating a dry and crusty layer on top.

Preheat the oven to 180 degrees celsius. Once the dough has risen, drizzle 1 tablespoon of garlic confit olive oil over the top and then use your fingers to indent or dimple the dough. Scatter the garlic confit butter over the focaccia, ensuring it’s at room temperature, and spread it all over with a brush. Place the garlic confit cloves into the dimples of the dough and sprinkle chili flakes and pinch of salt all over. Finish off by sprinkling the parmesan cheese over the top. Drizzle the dough with 1 tablespoon of the garlic confit olive oil to prevent the butter from burning. This will also help the crust of the dough get golden and crispy when baking. Bake for 20 - 30 minutes or until the dough has developed a golden crust on top. 

Slice the bread and enjoy on its own or as a side to pasta.
