This is a very good vegie burger. Some beans are whizzed together and some left whole, so you get a lovely texture. For a vegan option, just leave out the feta and yoghurt, says Jamie.

500 g Waxy potatoes, halved

Tbsp Creme fraiche

tsp Wholegrain mustard

Boil the potatoes in lightly salted water until tender, drain.

Whisk together the crème fraiche, mustard, juice and zest.

Add the gherkins, capers and onion then fold through the herbs.

rashers smoked streaky bacon, cooked until crisp

Lay each chicken breast between 2 pieces of clingfilm and bash with a rolling pin until 2cm thick.

Add to a bowl with the buttermilk, cover and chill for at least 2 hours but preferably overnight.

Mix the flour, oregano, paprika, cayenne pepper, garlic powder and some seasoning on a large plate.

Remove the chicken pieces from the buttermilk and dredge in the seasoned flour, shaking off any excess.

Fill a large pan no more than a third full with vegetable oil and heat to 175C or until a piece of bread browns in 40 seconds.

Cook the chicken, in batches, for 4-5 minutes turning half way, until deep golden brown.

Drain on kitchen paper and keep warm while you fry the rest.

Spread a dollop of chipotle mayo across one bun half and a dollop of guacamole on the other.

Pile up the sandwich with lettuce, streaky bacon, gherkins and chicken and press together.

Bottled Gherkins

salt (not iodised)

white vinegar

Pickling spice ((about 1 teaspoon per jar))

dill ((a couple of sprigs per jar))

Wash, pat dry and trim the gherkins at both ends, then place them in a large clean bowl, sprinkle on the salt and store in a cool place until the salt has liquidized (a few hours)

When you are ready to go, bring to the boil the water and vinegar.

Rinse the gherkins with boiling water, drain and then rinse again. Put the gherkins into hot jars that have been sterilized and add pickling spice and fresh dill.

Fill the jars almost to the top with the water/vinegar liquid and run a knife around inside the jar to get rid of any air bubbles. Top up the jar with liquid until it is just overflowing and using a cloth (as the jars will be very hot) tightly screw on the lids.

Wipe down the jars and leave to cool on the bench.

Gherkins will be ready in around three weeks. Put the jar in the fridge for a few hours to cool before eating.

Velvety duck liver parfait

duck or chicken liver

pack butter

shallots

garlic

brandy

tomato purée

butter

Cut away and discard any large sinews from the livers, then set the livers aside. Heat about a third of the butter in a large frying pan, then gently fry the shallots and garlic for 3-4 mins unti l soft. Turn up the heat, add the livers, then fry until just browned on all sides. Add the brandy and port, boil down as quickly as possible – if the sauce catches light for an instant, then all the better. Remove the pan from the heat and leave to cool completely.

Season the livers generously, then tip the contents of the pan into a food processor with the tomato purée and remaining butter, and blitz until smooth. Push the mixture through a fine sieve into a bowl, taste for seasoning, then tip into a serving dish, banging the dish down on the tabletop to smooth out the surface. Place in the fridge to set.

Once the mixture has set, make the topping. Gently melt the butter in a small pan or in a bowl in the microwave, then leave for a min to settle and separate. Pour the yellow butter that has risen to the top into another bowl and discard the milky liquid. Leave the yellow butter to cool slightly, then mix in the thyme and peppercorns. Pour the mixture over the parfait and leave to set in the fridge. Serve with plenty of toast, sliced gherkins and chutney. Will keep for 2 days in the fridge.

Smoked fish pate with gherkins and dill

150 g Smoked fish, bones removed (Main)

g Cream cheese

½ Lemons, zest and juice

Tbsp Dill, chopped,

Place the fish, cream cheese, lemon and dill into a food processor. Whizz until well combined but still a little chunky.

Season with salt and pepper. Serve on Huntley & Palmers Wholegrain Rice Crackers with a dill sprig, baby gherkin and a squeeze of lemon.

<p><span id="docs-internal-guid-5fb5e638-7fff-80be-d67a-36ee0188c7d7">A less common adaptation of the traditional steak tartare recipe includes slightly searing the ground beef patty on both sides before serving it with french fries and caper berries. Unlike classic steak tartare, tartare aller-retour is seasoned with pickled gherkins, lemon juice, Dijon mustard, and Tabasco sauce. </span></p>

A rustic terrine with French toasts makes an excellent starter for a special meal and it costs very little to make

Country terrine with black pepper & thyme

streaky pork rashers

thyme

tsp black peppercorns

chicken livers thawed

tbsp red or white wine (optional)

rashers smoked streaky bacon

Heat oven to 180C/fan 160C/gas 4 and butter a 1kg loaf tin. Roughly chop 3 of the pork rashers and mix with the thyme and peppercorns. Set aside. Put the remaining pork rashers into a food processor with two-thirds of the chicken livers, the wine (if using) and 1 tsp salt, then blend to make a smooth pâté.

Spoon half the pâté into the loaf tin, then top with the chopped pork mixture and remaining livers. Spoon the rest of the pâté mixture over the livers, then lay the 5 smoked bacon rashers lengthwise over the top.

Cover the loaf tin with foil and put in a roasting tin. Pour cold water into the roasting tin until it is half-filled, then bake for 1½ hrs until the terrine is set. When the terrine is cool, put another loaf tin on top and weigh it down (with cans from your storecupboard) to compress it. Leave overnight in the fridge. Can be made and chilled up to 2 days ahead.

To serve, turn the terrine out of the tin and carefully cut into slices with a sharp knife. Serve with the French toasts (recipe below) and cocktail gherkins or chutney.
