Chicken sausage, bell peppers, onions and mushrooms simmered in a marinara sauce then baked in the casserole with whole wheat macaroni topped with mozzarella.

Chicken Sausage and Peppers Macaroni Casserole

chicken sausage (casings removed)

olive oil

onion

red pepper (chopped)

yellow pepper (chopped)

garlic

mushrooms

marinara sauce (I used my own homemade)

water

Italian seasoning or dried thyme

tsp kosher salt

oz mozzarella cheese

oz uncooked DeLallo whole wheat

Preheat oven to 350°F.

In a large deep non-stick skillet, brown the sausage over high heat until cooked through, seasoning with a pinch of salt and breaking it up into smaller pieces as it cooks. Set aside on a dish.

Add olive oil to the skillet, reduce heat to medium and add the onions,

garlic and peppers; sauté until the vegetables soft, about 6 to 7

minutes.

Return the sausage to the skillet along with the remaining ingredients except for the pasta and cheese.

Bring to a boil and then lower heat to medium-low and simmer for 10 minutes, until the vegetables are soft.

Spoon just enough of the sausage/vegetable mixture to cover the bottom of a 9x13 pan.

Cover with uncooked pasta. Spoon remaining sauce mixture evenly over the top and sprinkle with cheese.

Cover with foil and bake 50-55 minutes. Remove from oven and let stand, covered, for 15 minutes.

Divide into 8 servings.

Salted Butter

sml Onion (sliced)

Garlic Powder

Oregano

Smoked Paprika

Mustard Powder

Salt

White Pepper (ground)

Mushrooms (sliced)

Cream Cheese

Heavy Cream

Baby Spinach

Rotisserie Chicken (shredded (600 grams/21 ounces of meat))

Cheddar Cheese (shredded)

Fresh Oregano (finely chopped, to serve)

Preheat your oven to 200C/390F.

Place a large saucepan over high heat. Add the butter and onion and saute for 3 minutes.

Add the herbs, spices, and salt, and pepper and mix well. Saute for another 2 minutes before adding the mushrooms, mix well.

Cook the mushrooms until they have softened.

Add the cream cheese and heavy cream and heat until the cream cheese has melted.

Bring to a simmer then mix through the spinach, once it has wilted, add the shredded chicken, and mix well.

Pour the mixture into a casserole dish, smooth out, and top with the cheddar cheese.

Bake for 20-25 minutes, until the cheese is golden brown.

Spoon into bowls and top with freshly chopped oregano. Enjoy!

Easy Keto Chicken Bake Recipe with Cheese & Spinach

This delicious Keto Chicken &amp; Bacon Casserole is loaded with cheesy goodness. It’s perfect for dinner and easy on the budget.

Keto Chicken Cheese &amp; Bacon Casserole - Easy Ground Chicken Recipe

Olive Oil

Garlic (crushed)

Onion (diced)

Chicken

Bacon

Fresh Oregano (roughly chopped)

Eggs

Sour Cream

Pepper (ground)

Preheat the oven to 180C/355F.

Place a large nonstick frying pan over high heat and add the oil, garlic, onion, and half the salt. Saute until translucent.

Add the ground chicken and brown. Remove from the heat and stir through the bacon, and oregano.

Pour the mixture into a casserole dish and sprinkle over the cheddar cheese.

In a bowl, add the eggs, sour cream, cream, remaining salt, and pepper, whisk together.

Pour over the chicken mixture.

Bake for 20-30 minutes until golden brown.

Serve with a side of Garlic Green Beans.

½ Red Pepper (seeded and diced)

Raw Cauliflower Rice

Black Olives (sliced)

Cilantro (chopped)

Preheat your oven to 175C/350F.

In a large mixing bowl, add the enchilada sauce, sour cream, garlic powder, onion powder, salt, and pepper. Whisk together.

Add the shredded chicken and peppers, reserving 1 tablespoon for garnish, and mix well.

Add the cauliflower rice to the base of your casserole dish and spread evenly.

Spoon over the chicken mixture and smooth out.

Sprinkle over the cheddar cheese.

Bake for 25-30 minutes, until the cheese is golden brown.

Serve sprinkled with the reserved peppers, olives, and cilantro. Enjoy!

We love a good casserole﻿ and this chicken enchilada casserole recipe certainly doesn't disappoint. The tortillas hold all the delicious filling together so perfectly and makes this one crowd pleasing dish.

We used shredded chicken from the crockpot and a green enchilada sauce. 👌 Delicious and is true to the 10 servings.

Made this last night.  Big hit! I left out the beans and corn as my husband is on a low carb diet.  I used two orange peppers, a large onion and four chopped tomatoes.  I also used low carb flour tortillas and light sharp cheddar cheese.   It was a terrific use of leftover chicken.  Since it was for just the two of us, I only made two layers but stuck to the quantities for the filling.  We added avocado and greek yogurt upon serving.  Will be making this again! Delicious!

I think I messed up (presentation anyway), but it tastes delish...!

Made this for the family and didn’t have enough soft tortillas so used hard shell corn tortillas for bottom layer and I pre-fried the soft tortillas a bit. The tortillas were nice and firm and not soggy. Def worth the extra step. Couldn’t even tell I used hard shell on the bottom. Everyone liked it except I would have added more seasoning...maybe taco. But definitely a keeper!

My family did not like this recipe. The corn made it too sweet and the beans didn't belong.

Turned out really good and easy to make! Fed my entire family of 5 with leftovers :)

This recipe is so delicious and versatile! I like big, bold flavor, so I doubled the chilies and the garlic. This made perfect use of my leftover rotisserie chicken! My only note to others trying this is to remember to salt your chicken mixture to taste before you build your casserole :)

I used leftover thanksgiving smoked Turkey instead of chicken.

I made this as part of this week’s meal prep. I cut the recipe in half, though, because I’m feeding just myself and knew 10 servings would be way too many. 

This is a very good casserole!  I’m going to play with it and see what changes I can come up with but I think it’s a great base recipe. 

I’ll probably make this again next week but meatless. I think with added liquid, perhaps stewed tomatoes or Rotel and vegetable broth, it would make an excellent soup.

dijon mustard

Place a saucepan of water over high heat and boil the broccoli florets until al dente. Drain well and add to a large mixing bowl along with the shredded chicken.

In a small saucepan, add the cream cheese, cream, almond milk, mustard, garlic, salt and pepper and place over low heat. Whisk until the sauce is smooth.

Pour the warm sauce into the broccoli and chicken mixture, add the basil, and mix well.

Pour the mixture into a casserole dish and top with the shredded cheese.

Bake in the oven for 20-30 minutes, until warmed through and the cheese has browned.

Serve immediately.
