What do you wish you could master most with gluten-free recipes?

this was great!  I've been making regular pasta for a year or so and since we had a celiac diagnosis in my home, I gave it up. This was my first try back and it was a great first try.  Mine was very dry and crumbly the first pass through, even through the 2nd and 3rd pass through.  DON'T GIVE UP.  I kept folding and putting it back through the machine and finally got to the right consistency and thinness and they were great.

I made this yesterday. I left them in small sheets and rolled ricotta and spinach filling into manicotti for Valentines Dinner. Came out wonderful the pasta melts in your mouth. I used half of the sheets to make potstickers today. The pasta can be used for egg roll wrappers, wonton, and noodles. Thanks so much for this recipe. I will use it often.

Ive used many different recipes over the past 15 years to make gluten free pasta but this one really was the best.  The dough was really easy to work with and I was able to make ravioli that could easily pass for gluten full !! Thank you for sharing!!

Unfortunately this did not even work. The flour just crumbled, felt like I was making sand rather than dough. Not sure if it is the type of flour I used but it just smeared on my table when I tried to roll it. Waste of expensive flour.

Was by far the easiest I’ve made so far... though I couldn't make very thin noodles without my pasta attachment shredding it. I made thick noodles, they were fantastic!

This turned out really awesome.  I used Cup4cup flour. I had to use extra flour to prevent sticking at all steps.  Once I cut them to fettuccine, I gently tossed the noodles in flour until they seemed evenly coated and put them in a bowl and covered until all noodles were ready, then dumped them in salty boiling water for 2.5 mins then drained and coated with a garlic butter sauce.  Really really delicious with a good texture and bite.

I'd recommend this recipe to anyone else.  Just need to be a little familiar with how to roll out pasta with a pasta machine.  I treated it almost like regular pasta but it falls apart a little more so you just have to be a little more gentle and keep it well floured. As soon as it starts to get a little tacky, dust with more flour.

This is the worst recipe.. the amount of flour I had to use after what the initial recipe calls for there should be more flour added to the recipe. If this was the first time I made fresh pasta I’d never do it again because I wouldn’t know what to do to fix this issue. I’d like to see someone make this in a half hour.. once it’s done it taste good but I’ll look into another recipe next time

The only changes I make is to add some uncooked oatmeal to the chicken mix to make it less gooey and easier to roll.  I also bake the meatballs to cut down on the fat.

My son doesn't really like zucchini, but is a pasta fiend! So I saw this recipe and wanted to try zoodles and went out and bought an inexpensive spiralizer ($16.99 at Ollie's) I made this, told my son that they were zucchini noodles, and he tried it. He liked it so well, he even went back for seconds! WINNER WINNER!! Thanks :)

I tried this last night and it was a hit!!  I am a mother of eight with three grandchildren and this is a keeper.

DELISH!!! Family loved it, it was guick and easy to make! Meatballs were perfect! I will be making this again! The only setback is the recipe says it makes 4 servings, but for the 3 of us is was just barely enough for 1 serving each, so i will double.up the next time I make it.

lb beef (grounded)

spaghetti sauce

water (3/4 of the spaghetti sauce jar)

Italian seasoning

Press &quot;saute&quot; and cook the ground beef for a few minutes until brown.

Add the spaghetti sauce and the water.

Add the pasta and gently move around so it won&#039;t stick.

Cook on high pressure for 4 minutes.

When cooking time ends, do a quick pressure release.

Open the lid and serve with tomato sauce and cheese.

Zucchini Pasta with Creamy Avocado Pesto

avocado (ripe)

garlic

basil leaves

lemon juice (15 mL)

Tbsp extra virgin olive oil (30 mL)

Water

Salt and pepper

Sauce: In a food processor, blend avocado, garlic, basil leaves and lemon juice until smooth, then mix in extra virgin olive oil.&nbsp;Add water, 1 Tbsp at a time, until sauce reaches a fluid yet thick consistency. Season with salt and pepper, to taste.

Zucchini Noodles: Saute zoodles with a splash of olive oil over medium/high heat until slightly soft and bright green, 3 to 5 minutes. Drain excess water.

Serve: Toss zoodles with sauce and top with parmesan cheese (you may not need all of the sauce).

Healthy Mac and Cheese {One Pot - 15 Minutes}

whole wheat elbow macaroni (uncooked)

broth

milk

garlic powder

mustard (condiment)

salt

black pepper (to taste)

marble or cheddar cheese (shredded)

Parmesan cheese (shredded)

In a medium pot, add broth, milk, butter, garlic powder, mustard, salt, ground black pepper and bring to a boil.

Add elbow macaroni and cook for 8-10 minutes, stirring every few minutes to prevent sticking. Cook until al dente or desired firmness and adding more milk or broth if you wish.

Turn off heat. Add marble cheese and Parmesan cheese in portions and stir between each until melted. That's it.

Serve immediately as mac and cheese tastes best fresh. Saucy, creamy and so comforting!

Top with your favorite hot sauce, everything bagel, Montreal steak spice, paprika, nutmeg, soy sauce and even honey. Or with leftover chopped bacon. I like to bake mine at 425 degrees F for 20 minutes. Way less mess.

Simple homemade red lentil pasta with just 3 ingredients and a simple process - a delicious, high-protein, high fiber, gluten-free pasta. Plus, this recipe can be made egg-free, for delicious vegan lentil pasta!

How To Make Red Lentil Pasta

oz red lentil flour (more

eggs (or flax eggs)

Pour the lentil flour out onto a clean, dry surface. Create a well in the center and add the eggs (or flax eggs) and olive oil.

Mix/knead until you achieve a homogeneous dough. Be careful when dealing with the dough as it will be more fragile than pasta containing gluten.

Form the dough into a ball and set aside for 10-15 minutes. This will make it easier to manage and cut.If you find that the dough is a little too crumbly then you can add some water. Add one tablespoon at a time, until it forms a dough.

Step 1: Prepare the red lentil pasta dough

Once rested, divide the dough into smaller more manageable pieces. I usually cut it into 4-5 pieces.

Roll each piece of dough into thin sheets and cut into your desired shape. I.e., pappardelle or thinner noodles, bows, etc. You can also use a pasta machine to create noodles, or a pasta press for shapes such as macaroni or penne, etc.Note: You can also use the pasta machine to roll out the dough. Begin by rolling it out with a rolling pin to fit through the widest setting of the pasta machine. Then feed it through the machine a few times, making it thinner until you achieve the correct thickness.

To cut into tagliatelle/pappardelle by hand, simply take your rolled out dough (the length that you&#039;d like your pasta noodles to be). Liberally flour it, and then roll it up. Use a sharp knife to then cut the dough into noodles as thin/wide as you&#039;d like.

Step 2: Shape/Chop your homemade pasta

Once you&#039;ve cut the pasta shapes, make sure to sprinkle them with more flour (I use lentil flour) so they don&#039;t stick together.You can then cook the pasta immediately, store it in the fridge or freezer, or even dry the pasta (more on this in the storage section below).To cook the pasta, place it in a large pot of salted boiling water and cook for 5-6 minutes, stirring every 20-30 seconds to make sure the pasta doesn&#039;t stick together. Then serve with your choice of sauce.

Step 3: Store or cook the lentil pasta

Store the fresh pasta in an airtight container in the fridge for 1-2 days, or freeze it for between 2-3 months.The pasta can also be dried - either at room temperature or with a dehydrator. There is debate around the shelf life of dried egg pasta, due to the risk of salmonella. To err on the side of caution, I keep my dried pasta in an airtight container in a cool location and use it within a month. You can also freeze the dried pasta for between 5-6 months.

To dry the pasta: You can use pasta drying racks, a dehumidifier, or lay the pasta out on a large tray in a well-ventilated area.If you&#039;re making any type of noodle, then you can begin to dry them flat for 1-2 hours. Then, while the pasta is firm but still pliable, form it into loose nests of around a portion each.Depending on the climate and humidity, the drying time will vary. If you live in a very humid area, I probably wouldn&#039;t attempt to dry the pasta.

How To Make Ahead &amp; Store

This Keto Mushroom Pasta recipe boasts a creamy garlic infused sauce with chunks of mushrooms and notes of thyme. Sautéed sliced garlic adds crunch and additional garlic goodness. We created this keto-friendly pasta recipe with hearts of palm pasta. Using this pasta keeps the recipe low carb, gluten-free, and diabetic-friendly.

Keto Mushroom Pasta

avocado oil

mushrooms (sliced)

red onion (diced)

thyme leaves

white wine vinegar

heavy whipping cream

gruyere cheese (finely shredded)

parsley (chopped)

sea salt (to taste)

pepper (to taste)

thyme ((optional--for garnish))

Place palm pasta in a colander, rinse with cool water and allow to drain. Set aside.

In a large skillet, heat avocado oil over medium heat. When hot, add sliced garlic. Cook, while stirring, until slightly brown. Transfer to a plate using a slotted spoon or spatula. Set aside.

Add mushrooms and red onion to the skillet. Cook over medium heat until edges are brown and vegetables are tender.

Stir in the dried thyme, red pepper flakes, and crushed clove of garlic. Cook until fragrant, about one minute.

Add the white wine vinegar to the pan. Cook, scraping up browned bits, until vinegar consistency becomes slightly syrupy. Stir in heavy whipping cream and cheese. Bring to a simmer, stirring constantly, until mixture is smooth and slightly thickened.

Stir in noodles and simmer a few minutes to heat through. Taste and add salt and pepper to taste, if desired. (I used about ½ teaspoon salt and ¼ teaspoon pepper.) Stir in fresh parsey leaves.

Serve pasta with browned garlic and fresh thyme leaves sprinkled on top.

This keto pasta tastes identical to regular pasta, but it has just over 3 NET CARBS per serving! And all you need to make these keto noodles is just 2 or 3 ingredients. Plus, along with being low carb pasta, it is also gluten free!

Keto Pasta Made With Just 3 Ingredients

(112 grams) full fat shredded mozzarella cheese

¼ teaspoon xanthan gum (optional)

Add mozzarella cheese and xanthan gum to a large bowl and mix. Microwave for about a minute until the cheese melts.

Quickly mix the cheese with a spatula into a ball.

Add the egg yolk to the bowl (make sure cheese is warm, not hot before doing this) and use one hand to fold the cheese into itself and a spatula with the other hand to help combine until pasta dough is uniformly yellow in color.

Get out two pieces of parchment paper and sandwich the dough ball between them. Roll out until it's about 1/8 inch thick.

Spray a pizza cutter with baking spray and cut dough into pasta noodle strands.

Put the pasta on a baking sheet and refrigerate overnight or for at least 8 hours.

Separate the strands from one another after refrigerating.

Add warm water to a large pot and boil on your stovetop. Once water is boiling, add pasta to it and cook for just 1 minute.

Wash pasta under water that is not too warm, not too cold, and shake off any excess water that is on it.

These are amazing. I was careful and followed your directions to a “T.”  The pasta turned out perfectly the first time made. No egg or cheese taste flavor bled through the “noodle” or the sauce. This 30 minute tomato orzo with balsamic broccolini is hearty, simple to make, and loaded with flavour from shallots, garlic, thyme, capers, and fresh tomatoes. Made almost entirely on the stovetop with quick cooking orzo pasta, this is a perfectly cozy weeknight vegan main.

30 Minute Tomato Orzo with Balsamic Broccolini

olive oil, divided

broccolini, tough ends trimmed

balsamic vinegar

sea salt and ground black pepper,

shallot, finely diced ((about ¾ cup diced shallot))

capers, minced

yeast

cherry tomatoes, halved

Preheat your oven to 425°F. If your broccolini stems are thick, cut them down the middle lengthwise. Transfer all trimmed broccolini to a baking sheet and toss with 1 tablespoon of olive oil, the balsamic vinegar, salt, and pepper. Spread the broccolini out into a single layer and roast for about 10-15 minutes, or until tender.

Start on the tomato orzo. In a deep skillet or braiser-style pot over medium heat, add the remaining olive oil. Add the shallot to the skillet and sauté until very soft and translucent, about 5 minutes. Add the thyme, capers, garlic, nutritional yeast, and chili flakes to the skillet and stir. Sauté until very fragrant, about 2 minutes.

Add the cherry tomatoes to the skillet and stir. Sauté until they start releasing juice and softening (you can speed this up by pressing down on them a bit with your stirring spoon), about 5 minutes. Season with salt and pepper. Add the orzo and stir.
