Grandma's Goulash

onions (chopped)

beef

garlic (minced)

tomato based pasta sauce (approx. 26 oz.)

14.5 oz cans diced tomatoes, undrained

(6 oz tomato paste)

Italian seasoning

bay leaves

water

green bell pepper (optional)

salt & black pepper

macaroni noodles (uncooked)

cheddar cheese

Cook ground beef, onion and garlic over medium high heat until no pink remains. Drain any fat.

Add pasta sauce, diced tomatoes, tomato paste, water, seasonings, bay leaves and green pepper. Simmer covered for 15 minutes.

Add in the in the macaroni and continue to simmer, covered, stirring occasionally until pasta is tender (about 20 minutes).

Remove &amp; discard bay leaves. Top with cheese and replace the lid. Let sit about 5 minutes or until melted.

Use your Instant Pot to make amazing and tender Hungarian Goulash, or Porkolt, in no time! It&#x27;s simple, delicious, and better yet, it&#x27;s authentic!

Hungarian Goulash

pork

Bell Peppers (of your choice, diced)

Garlic (minced)

Canned Tomatoes

Sweet Hungarian Paprika (DO NOT USE smoked Spanish paprika)

Chicken Stock

Cornstarch (dissolved)

Sour cream

Tarhonya

Chicken Broth

Butter

Sprinkle meat chunks with salt and pepper to taste.

Turn your Instant Pot or pressure cooker to Sauté wait until hot, then add cooking oil.

Brown the meat â€“ leave it alone for a few minutes to get a nice color.

Remove to a bowl when nicely browned, and add the onion and bell pepper to your pressure cooker. Cook for about 5 minutes.

Add garlic and sauté til fragrant (30 sec or so)

Add remaining salt, tomatoes, stock/broth and paprika, and add the meat along with any juices. Stir well

Cancel the saute. Seal the lid

Push the meat/stew button and adjust time to 25 minutes.

Allow it to release pressure naturally for 10 minutes, and then release any remaining pressure.

Cancel the keep-warm function and turn on Sauté

Mix the cornstarch with a little water, and add this to the stew. Bring to a brief boil to thicken

Serve over starch of your choice with a big dollop of sour cream. Traditionally it would be Tarhonya but you can also use potatoes or rice.

For Porkolt

Sauté tarhonya in butter until deeply toasted. Some of the nuggets should be pretty dark brown.

Heat the broth in a separate pot or the microwave until boiling.

Pour hot broth over the tarhonya.

Cover and simmer on low for 20 min until tender.

Season to taste.

Crock Pot Goulash

This easy, one-pot American Goulash (aka Beefaroni) is the epitome of comfort food and a meal the entire family will love! It starts with a flavorful homemade meat sauce, then macaroni noodles cooked in the sauce, and finished with a sprinkle of cheese.

American Goulash (Beefaroni)

olive oil

onion (, finely diced)

garlic (, minced)

lb beef

salt and pepper

parsley

basil

EACH garlic powder, and paprika

tsp EACH dried oregano and, chili powder

red pepper flakes

tomato sauce

sugar

low-sodium beef broth (, divided)

elbow noodles ((8 oz), uncooked)

Heat a large skillet with sides, over medium heat. Add oil. Once hot, add onion and saute for several minutes into tender and translucent. Add garlic and cook for 30 seconds.

Push onion to the side and add ground beef and season well with salt and pepper. Cook until browned, crumbling it into very small pieces as it cooks. Add all dry spices and cook for 1-2 minutes.

Stir in the tomato paste, tomato sauce, sugar, Worcestershire and 1 ½ cups beef broth. Simmer on low for 15-20 minutes. Taste and add additional seasonings, if needed.

Add additional 3/4 cup broth and uncooked pasta. Cook until pasta is tender. Stir in freshly grated cheese and allow to melt. Serve immediately.

Classic Baked Goulash

beef turkey

onion, chopped up small

garlic cloves,

elbow macaroni noodles,

Marinara sauce

mozzarella cheese, shredded

Pre heat the oven to 350 degrees F.

Add 2 Tablespoons olive oil to a pan on the stovetop over high heat.

Add the onions and garlic, cook until tender, about 5 minutes.

Add the ground beef/turkey, cook until browned, breaking it up into small pieces. Drain off fat if necessary.

Add the marinara sauce, salt, pepper, oregano, and crushed red pepper flakes to the meat. Bring to a boil and then simmer for 10 minutes.

While to sauce simmers, cook the pasta in a separate pot until al dente. Drain and set aside.

In a 9x13 casserole dish add the meat sauce mixture and noodles and mix together.

Top with the mozzarella cheese and bread crumbs.

Bake for 20-30 minutes.

Bring a 5.5qt Dutch Oven to medium-high heat. Add butter or olive oil, swirl to coat the pan.

 Add garlic and onion. Move around pan until the garlic is fragrant and the onion has softened slightly, approx. 2-3 minutes.

Add ground beef and move around pan until it is cooked through. Drain excess grease, leaving about a tablespoon or so. Add salt and pepper. Stir to combine. 

Add whole tomatoes, tomato paste, tomato sauce, kidney beans, worcestershire, Italian seasoning and bay leaf. Use knife to cut the whole tomatoes into quarters. Stir to combine. Cover and let simmer 10-30 minutes. Taste and add additional salt, as-needed.

Meanwhile, cook elbow macaroni al dente according to package instructions (see Notes).

Add some noodles to a bowl and top with the ground beef mixture, stir and then add your favorite toppings.

Ready in just 30 minutes and makes a big batch that’s perfect for potlucks, picnics, game days, or to have planned leftovers on hand. This classic American goulash recipe is always a family favorite! 

beef (~85 to 95% lean)

ground sausage* (or another ground protein if desired)

elbow macaroni (or another small shaped pasta)

small white or yellow onion (diced small)

green pepper

garlic (finely minced)

marinara or tomato sauce

beef broth (I use reduced sodium)

soy sauce (I use reduced sodium)

salt (or as desired)

To a very large deep-sided pot or Dutch oven, add the ground beef, ground sausage or whatever combination of proteins you&#x27;re using, and cook over medium-high heat, stirring and crumbling the proteins as the cook to ensure cooking. If necessary or desired, drain off any fat. I don&#x27;t drain it even if I have some because the fat will prevent the pasta from sticking. Tip -  Begin cooking the pasta while the proteins are cooking.

While the proteins are browning, cook the pasta in a separate pot according to package directions. Drain and set aside until step 6.

To the Dutch oven with the browned proteins, add the onions, green peppers, and cook for about 3 to 5 minutes, or until beginning to soften; stir frequently.

Add the garlic and cook for 1 minute or until fragrant; stir constantly.

Add the diced tomatoes, marinara, beef broth, soy sauce, Worcestershire sauce, Italian seasoning, salt, pepper, stir to combine, and simmer uncovered for 10 minutes.

Add the cooked pasta and stir to combine.

Optionally garish with parsley and serve. Leftover goulash will keep airtight in the fridge for up to 5 days or in the freezer for up to 4 months. It reheats very well in the microwave.

Step 1

Preheat oven to 180°C/160°C fan-forced. Heat 1 tbsp of the oil in a large, heavy-based, flameproof casserole dish over medium-high heat. Cook beef, in batches, for 5 to 6 minutes or until browned. Transfer to a bowl.

Step 2

Heat remaining 1 tbsp oil in dish. Add onion, garlic, mushrooms and capsicum. Cook, stirring, for 5 minutes or until onion has softened. Return beef to dish. Add flour and paprika. Cook, stirring, for 1 minute. Add bay leaves.

Step 3

Stir in stock and tomato. Cover dish. Bring to the boil. Transfer to oven. Bake for 2 hours or until beef is tender.
