Coconut Maple Granola with Mixed Nuts and Dried Fruit

Preheat the oven to 300 degrees F and line 2 sheet trays with parchment paper.

In a large bowl, combine the oats, almonds, coconut, pecans, pistachios, maple syrup, coconut oil and brown sugar. Divide between the lined sheet trays.

Bake the granola for 1 hour, stirring every 15 minutes. Remove the granola to a large mixing bowl and allow to cool slightly, about 5 minutes. Add the dried apricots, dried cherries and golden raisins and stir to combine. Allow to cool completely, then store in an airtight container for up to two weeks.

By toasting a bit of prepared granola with butter, we were able to keep this dish light and healthy while still providing a delicious crunchy topping for sweet spiced apples.

Skillet Granola-Apple Crisp

unsalted butter

store-bought oat granola,

all-purpose flour

sugar

apples,

pumpkin pie spice

lemon juice

Melt the butter in a medium nonreactive and ovenproof skillet over medium heat. Add the granola, 1 tablespoon of the flour and 1 tablespoon sugar and toss until the sugar is dissolved and the granola is well coated. Transfer to a bowl. (Reserve the skillet.)

Pour the apples into the skillet; toss with the pumpkin pie spice, lemon juice and remaining 1/4 cup sugar. Cook, stirring occasionally, until the apples are juicy and slightly softened, 5 to 7 minutes. Stir in the remaining 1 tablespoon flour. Scatter the reserved granola mixture evenly over the top and transfer the skillet to the oven. Bake until the crisp is bubbling and the apples are tender, 35 to 40 minutes. Serve warm.

I made this with Chateau La Granola Hazelnut Cherry, and it was so, so good. Great recipe.

We have made this several times and it is delicious.

This tasted good, but the topping didn't brown or combine, it fell apart as soon as it came out of the skillet.

DELICIOUS! I used Granny Smith apples and Great Grains cereal for the granola, and it turned out great! I will DEFINITELY be making it again.

I made this for Sunday Breakfast with vanilla yogurt. Really yummy. My kids loved it.

I used a fat free blueberry cranola from Trader Joes and it was yummy! Although I cooked it longer I never saw the apples bubble but I finally took it out and it was still great.

Delicious
Really tasty and easy to make.

Baked Brie Topped with Savory Granola and Apples

paprika

cayenne pepper

extra-virgin olive oil

Kosher salt

raw cashews

raw pepitas

walnuts

fresh rosemary, chopped

Brie

Honeycrisp apple, thinly sliced

cranberries

Crackers and crostini,

Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Arrange the racks of the oven so that you can use two.

Whisk together the paprika, cayenne, 1/4 cup oil, 2 tablespoons syrup and a pinch of salt in a medium bowl. In another medium bowl, combine the oats, cashews, pepitas, walnuts and rosemary. Add the oil mixture to the oat mixture and stir to combine. Spread evenly in one layer on one of the lined baking sheets. Bake, stirring halfway through, until golden brown and crispy, 25 to 30 minutes. Meanwhile, add the Brie to the other lined baking sheet and bake for 15 minutes.

Heat the remaining tablespoon oil in a small nonstick skillet over medium-high heat. Add the apples to the skillet and cook, stirring occasionally, until the apples start to soften and brown, about 3 minutes. Add the remaining 2 tablespoons maple syrup and 2 tablespoons water, then stir, reduce the heat to low and cover until ready to use. Season with salt.

Remove the granola from the oven and stir in the dried fruit. Reserve 1 cup of the granola. Let the rest cool completely, then transfer to an airtight container (save this for another use).

Transfer the Brie to a serving platter and top with the warm apples. Sprinkle on the cup of savory granola. Serve warm with crackers and crostini.

Homemade granola with that toasted, baked deliciousness—it's just so perfect and comforting. I make mine all in the one saucepan, then keep a batch in an airtight container. It's great with plant-based milk or a dollop of coconut yogurt. At the moment my go-to is a heaped spoon of chia pudding, the granola, a spoonful of my lime coconut yogurt and a sprinkle of minted berries. Happiness in a bowl. Feel free to experiment by swapping out the raw nuts, seeds and dried fruit for what you have available.

Homemade Granola

olive oil

raw Brazil nuts, roughly chopped (or raw nuts of your choice)

raw pumpkin seeds (or raw seeds of your choice)

cinnamon

Preheat your oven to 325 degrees F (160 degrees C).

Line a large sheet pan or two smaller ones with parchment paper.

Take a medium-large saucepan and on a medium heat, add the maple syrup and olive oil. Heat through, stirring to combine.

Add the oats, nuts, seeds and cinnamon to the syrup mixture and stir well with a wooden spoon to coat all of the dry ingredients.

Evenly spread the granola out onto the prepared sheet pan and place in the oven to bake for 30 minutes, checking and stirring around every 10 minutes to allow all the mix to toast evenly.

Once golden and roasted, take the granola out. While it is still warm, stir in the dried cranberries and raisins and toss together. The mixture will crisp up more as it cools.

Once cool, store in an airtight container.

This basic granola recipe is pretty perfect as is, but feel free to swap out ingredients to customize it to your taste (see Cook's Notes below for sample substitutions).

Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.

In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.

Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.

Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

Yum. Better than store bought granola. The vanilla combines well with cinnamon, honey and brown sugar. I added it to Greek yogurt.

Nice basic recipe which you can add different flavor profiles to

This is the first time I made Granola and OMG....this is out of the world delicious. I substituted maple syrup for the honey (to make it low fodmap), used already sliced almonds and didn't add any fruit. I also used Fleur de Sel salt from France which I think made an important impact on the final result. So glad I chose this recipe....it's a keeper!!!

Made this after seeing it on The Kitchen made by Jeff. So delicious, I will never buy granola again!

This is so good I have to hide it after I make it or the first person who comes along and sees it eats it all!

The very best granola recipe I have found.

I do add way more nuts and seeds than it calls for and quite a bit more dried fruit also.

This is a big hit with all my friends and family.

Thank you!

Easy and delicious! I substituted sunflower seeds and worked out well! Highly recommended.

With Jeff Mauro's recipe for basic granola, the variations are endless.

Jeff Mauro's Basic Granola

Granola Bars

sunflower

sliced almonds, approximately 1 cup

wheat germ, approximately 1/2 cup

honey,

dark brown sugar, approximately 1/4 cup packed

vanilla extract

fruit,

Butter a 9 by 9-inch glass baking dish and set aside. Preheat the oven to 350 degrees F.

Spread the oats, sunflower seeds, almonds, and wheat germ onto a half-sheet pan. Place in the oven and toast for 15 minutes, stirring occasionally.

In the meantime, combine the honey, brown sugar, butter, extract and salt in a medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved.

Once the oat mixture is done, remove it from the oven and reduce the heat to 300 degrees F. Immediately add the oat mixture to the liquid mixture, add the dried fruit, and stir to combine. Turn mixture out into the prepared baking dish and press down, evenly distributing the mixture in the dish and place in the oven to bake for 25 minutes. Remove from the oven and allow to cool completely. Cut into squares and store in an airtight container for up to a week.

I followed the recipe exactly but my bars for some reason just came out horrible they tasted burnt and disgusting.

I followed the recipe by weight measure. The only thing different I did was put it in a 7x11 inch glass dish. The mixture cooled rock solid. I can't get it out of the pan. Any ideas on what went wrong?

I made these for the first time and they are delicious! I will definitely make these again and experiment with different fruit and nut combinations!!

Love these! I have made his other granola recipe for years - also delicious - https://www.foodnetwork.com/recipes/alton-brown/granola-recipe-1939521 Works great on yogurt or just loose. The bars are great. If you are a fan, you KNOW that weight is the way to go!!! Please stop posting in here that the measurements are wrong. If you doubt it, get out your kitchen scale. Eight ounces of liquid is different from 8 ounces of oatmeal, flour, etc. They are dense - don't eat too many!!! Follow the recipe!!! I grab one in the morning before the gym.

The first time I made these exactly as directed and they were absolutely yummy! Not they are my ‘go to’ fast breakfast or afternoon treat. I love how versatile they are by mixing different fruits & nuts. I love them with pineapple and coconut, or with blueberries. Next variation may be to add chocolate chips. I use shelled sunflower seeds and tend to add a bit more fruit than the recipe calls for. I’ll never go back to store bought.

I think 8 ounces is 1 cup. 2 Cups of oats would be 16 ounces,
Right??

I was wondering about sunflower seeds with the shell on. Don’t think that’s good for you

Tasty and chewy.
Made it a few times now, varying the types of fruits and nuts, even subbed molasses for honey a couple times.

I found using 2 loaf pans works better for me. makes the bars a bit thicker, and seems chewier. Also I can really press it in to the pans by placing one on top of the other (wax paper over the mixture while pressing)
Good Eats Granola Bars: How can anything be so healthy and taste so great?

Good Eats Granola Bars Recipe

honey

apricots

figs

roasted, unsalted cashews

Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour onto a 13 by 18 by 1-inch sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 45 minutes.

Remove the granola from the oven and allow to cool, stirring occasionally. Add the apricots, figs, cherries, cranberries, and cashews. Store the cooled granola in an airtight container.

350 degrees is WAY too hot! I followed these instructions exactly and now I have a flat pan full of burnt oats. Disappointed!

I believe that the key, as some have mentioned, is to stir frequently. My oven has a tendency to underbake items but I still had to keep an eye on it. I stirred every 15 minutes for the first 30, then every 5-7 after til it reached a nice golden brown, up to 45 minutes. I added a variety of dried fruits that I had on hand as well as a mixture of salted and unsalted mixed nuts. It came out delicious!

After the first burnt batch, I adjusted the temp and the time. 45 minutes is way too long. Second batch is good but maybe too much oil.

Ina makes a hearty batch of sweet and crispy Homemade Granola.

Ina's Homemade Granola

Mom's Homemade Granola

Nonstick cooking spray

Mixed berries,

yogurt

Line a 9-inch square baking sheet with foil, allowing the foil to extend over the sides. Spray with nonstick cooking spray.

Mix the oats, cranberries, almonds, cinnamon and salt in a medium bowl.

Combine the butter, sugar and honey in a medium saucepan over medium heat, stirring until the butter melts and the mixture begins to boil. Add the vanilla and stir. Remove from the heat.

Pour the butter over the oats, mixing until well coated. Transfer to the prepared pan and, using a spatula, press the oats evenly into the pan.

Bake until the top is crisp and golden brown, 15 to 20 minutes. Transfer to a rack and cool. Using the foil as aid, lift out of the pan and place on a work surface. Crumble into pieces. Serve with berries, plain yogurt and drizzle with additional honey.

Great Recipe! 😁👍 I played around with the ingredients a bit, LOL! I didn’t have the cranberry’s or nuts so I used some Goji berries and I cut up some guara almonds with olive oil and sea salt from tj’s!! It came out DELISH!! 🤪😁🥳👍👍!!!! My kids and I almost ate up the whole thing before it even got in the oven!! (Especially my youngest!!) 🤣🤣!! I would definitely recommend trying out this recipe, it is great for kids lunches and could be a yummy breakfast with milk or yogurt or a yummy desert sprinkeld on a banana custard or vanilla ice cream, or even as a sneaky snack to have with evening wine when the kids are asleep😁😁🍷 loved this overall!! Cheers!

I used cannabutter n sorghum instead of brown sugar, added sesame seeds and drizzled dark chocolate

Had to decrease the temp after 8 mins. If your edges are thin, it will burn so keep an eye and adjust your temp. Other than that. Came out wonderful. Will use a tad less sugar as i prefer less sweeten granola.

I try to keep this made; great by itself of layered in a Blueberry Yogurt Parfait; #Delish Thx Marcella ♥️✅‼️

Great recipe--just what I was looking for. As did others, I played around with it a bit. Used a little more oatmeal, and used Ground Pecans instead of the almonds. And replaced the honey with maple syrup. Then, based on my other granola recipes, I baked at 300, for about 30 minutes, stirring every 10 minutes. Added the cranberries at the end, also. DELICIOUS! I would probably add a few drops of Mapleine next time around to beef up the maple flavor. Thanks for the recipe!

Love this granola! I found this recipe when looking for granola made with butter instead of oil. I've been making granola for years and this is by far the best our family has had. I followed other reviewers suggestions and lowered the oven temp to 325 and cooked it for 25-30 mns, stirring once in between. I put mine on a stone baking sheet so didn't use foil or spray. I also used coconut sugar instead of brown sugar and it turned out great. I love adding unsweetened coconut along with the almonds and if I put in raisins or cranberries I put it in when the granola is done- but that's just personal preference. The granola was gone in a day so I recommend making a lot more if you have a family. We are sold on this crispy and sweet granola. I'm making more now!

coconut chips

canola oil

Honey

blueberries,

strawberries,

plain Greek yogurt

Arrange the racks in the center of the oven and preheat the oven to 325 degrees F.

Toss the oats, coconut chips, apricots and pecans in a large bowl. Whisk together the brown sugar, canola oil, maple syrup, vanilla, and 1/4 teaspoon salt in a second bowl and drizzle over the oat mixture. Stir well so everything is evenly coated. Use your hands to toss and make sure every piece of oat is covered.

Spread the mixture in an even layer on a rimmed baking sheet. Bake until golden and brown, 15 minutes, rotating the baking sheet tray halfway through baking and stirring the granola with a spoon so it will cook evenly. Remove from the oven and add to a large bowl so it will stop cooking. Let cool before serving.

Serve over a bowl of Quick Fix Honey Yogurt and top with berries.

Combine the yogurt, honey, and cinnamon in a bowl.

Have used this with variations many times. Like it because the liquids can be mixed with sugar and I microwave them to dissolve the sugar before pouring it on the oats. I use golden raisins after baking and do not use apricots as they are hard to buy chopped. Sometimes use cranberries and sunflower seeds. You can vary to your preferences. I only bake the oats and coconut as my nuts are usually already roasted.
Great recipe! I tweaked mine to make it personal, but the fact that it can be personalized is part of what makes it so awesome! Thanks Neely's!

My daughter and I made this just the other day & it's delicious! I changed a few of the ingredients...I used olive oil, honey, walnuts & raisins, overall we love it w/the yogurt recipe, as cereal or a simple snack. So easy, definitely will be making this again...thank you Neely family!

Yum. We ate with yogurt, ice cream and oatmeal. The kids love it as a snack too. Definitely a keeper. I used honey instead of maple syrup. Super easy, fast and quick and GOOD!

Yum, love the vanilla addition. Just used plain oats, chopped up almonds and went light on the brown sugar, oil and syrup. Like making granola in 20 minutes as opposed to Altons 1.5 hours in the oven...

AHHH-mazing and easy! Used raisins instead of apricots, walnuts in lieu of pecans (it's what we had on hand:. VERY YUMMY! Thank you for this great recipe!

This recipe was a huge hit with the whole family and so easy to make! No need to search for the perfect granola recipe anymore.

Love this recipe! It's soooo easy to make and my kids love it! I did try something different and alternated honey for the maple syrup and it took the flavors to a whole new level!!

Finally, a granola recipe that resulted in great granola. I use it on yogurt and as a snack. I've made it several times. It's a keeper!

I love this recipe, it is also good for a snack. Thank you Neelys, you are the best!!

rolled oats

water

butter

In a large mixing bowl, combine oats, raisins, almonds, and dried cranberries, walnuts, salt and honey. Stir until well incorporated.

In a small sacue pot add sugar and water and simmer until slight caramel color comes to the liquid. Add butter in small pieces and sitr well with a wire wisk. When butter is well incorporated pour caramel sauce over oats. Stir well and spread over a sheet pan and allow to cool.

lots of flavors but lots of time to cook

Good mix of ingredients and good flavor, but needed toasted. I baked for an hour at 200 degrees, stirring midway.
Strafford, NH

I'm so glad I tried this recipe. Now I can make granola bars without the preservatives for my active family.
I made a few substitutions, adding coconut, and using pistachios instead of walnuts. An easy recipe to fashion after your own tastes... THANKS, TYLER!

Carla
New Port Richey, FL

Maybe I did something wrong but it was wet and mushy over an hour later, and seemed like it needed to be cooked - which is not in the recipe. I put it in the oven for an hour and that really helped.

Mom's Coconut Granola

Line a 9-inch square baking sheet with foil, allowing the foil to extend over the sides of the pan. Spray with nonstick cooking spray.

Mix the oats, almonds, coconut, cranberries, cinnamon and salt in a medium bowl until combined.

Combine butter, honey and sugar in a medium saucepan over medium heat, stirring until the butter melts and the mixture begins to boil. Remove the pan from heat and stir in the vanilla.

Pour the butter mixture over the dry ingredients, stirring with a rubber spatula until well coated. Transfer the oat mixture to the prepared pan, and using the spatula, press the oats evenly into pan.

Bake until the top is golden brown, 20 to 25 minutes. Transfer to a rack to cool. Using the foil, lift the granola out of pan and place it on work surface. Crumble the granola into pieces and store in an airtight container for up to 1 week.

Delicious, but mine burnt in just a few minutes. There is no way that this was cooked at 400 degrees for 20 minutes. The temperature and cook time should be adjusted here. I had to remake mine.

We've made this at least 6 or 7 times! It's delicious and only lasts a few days as my husband and daughter devour it. They put it on everything--oatmeal, cereal, fruit and more! I agree that the temp is too high for our oven (we burned one batch). I cook it at about 375 and check it every 5 minutes. It's usually done in about 15-18 minutes. Try it! Thanks, Marcella!

I used 1/2 tsp. vanilla and 1/2 tsp. almond extract. I also subbed dried cherries for the craisins. The almond extracted compliments the coconut and cherry flavors. WARNING: I burnt mine by cooking it at 400 degrees for 20 minutes...I've looked at other granola recipes and some recommend cooking at 300 degrees for 20-25 minutes. I also read to take it out when it's just golden brown, even if still looks a bit wet. ENJOY!

Sounds like a quick easy snack and doesn't make a huge amount.

Marcela shares her mom's easy-to-make and healthy homemade coconut granola.

Mom's Best Coconut Granola

Coconut Sour-Cherry Granola

organic rolled oats

unsweetened coconut flakes

unsalted pistachios

unsalted pepitas (hulled green pumpkin seeds)

sour cherries

Preheat the oven to 300 degrees F. Line 2 rimmed baking sheets with parchment paper. Toss the oats, coconut, pistachios, pepitas and salt in a large bowl. Warm the brown sugar, maple syrup and olive oil in a small saucepan over low heat, stirring, until the sugar dissolves. Fold the sugar mixture into the oat mixture to evenly coat.

Spread the granola on the prepared baking sheets and bake, stirring often, until dry and lightly golden, 20 to 25 minutes. Remove from the oven and toss with the dried sour cherries. Let cool to room temperature. Store in an airtight container for up to 1 week or freeze for up to 1 month.

So yummy. I used slivered almonds instead of pistachios and salted pepita so I reduced the added salt. Definitely a home run. Feel free to adjust I only had sugared coconut and used that as well went easier in brown sugar.

We love this granola. I do cut the salt to 1 teaspoon. And, I add whatever dried fruit I have. Sometimes whole almonds. Sometimes raw cocao nibs. Different combination each time I make it. Very versatile!

This would have been a GREAT recipe but good god, the salt! This was the first time that I ever made granola and so I wanted to follow it as written, but it felt like it should have had a tsp of salt (or less rather than a TBSB. I love the way the maple syrup and olive oil work together, but next time it will be with much less salt.

This is the second granola recipe I tried....super!! Customized to what I had on hand...sunflower seeds and flaxseeds instead of pumpkin seeds, chopped pecans and sliced almonds instead of pistachios, and a combination of sour cherries, dried blueberries, and dried cranberries. I cut back to 1 tsp. of salt, and added 1 tsp. vanilla and about 1/2 tsp. ground cinnamon. Now my only dilemma.....share this or keep it all to myself?? Sharing it for sure!!!
