This Greek Chicken Pasta Tastes Like Summer!

Warm Greek Pasta - an easy, delicious recipe for greek pasta that is perfect for a crowd or an easy weeknight dinner! Easily gluten-free!

Warm Greek Pasta

fettuccine

Roma tomatoes, diced

kalamata olives (use more if you want)

shallot, chopped

olive oil

salt

While water is coming to a boil and then while noodles are cooking, prep the remaining ingredients.

Add fettuccine noodles and cook al dente.

Taste and add additional salt, as needed.

If stored over night in fridge or if noodles dry out at all, simply add an additional Tablespoon or so of olive oil.

I made the warm Greek pasta tonight. It was so good. Reminded me of my vacation to Greece last year. Only thing missing was the ouzo. This will become a meal staple for me.

Mediterranean One Pot Pasta

linguine,

vegetable broth

red onion, diced

green olives

black olives

grape tomatoes

(15 artichoke hearts

Add linguine, broth, onion, olives, tomatoes, artichoke hearts and garlic along with a couple large pinches of salt and a large pinch of pepper. Stir to combine.

Simmer, uncovered, over medium low heat for 10-12 minutes or until pasta is al dente and most of the liquid has been absorbed.

Stir in fresh dill and feta. The feta will begin to melt and mix with the remaining pasta water, coating the noodles in a light sauce.

Garnish with fresh dill and a bit more feta and serve!

Fast easy and everyone loved it!  Great meal to serv my vegetarian family. I did add a little more seasoning but that is just my taste.

It's been so hot here I decided to do a riff of your recipe. I made the spaghetti noodles in just boiling water. While those were cooking I chopped up everything else and combined in a bowl. I even added some sundried tomatoes and a few capers. When noodles were done I rinsed them in cold water and dressed with a bit of olive oil to prevent sticking. I let them cool a bit then added the other ingredients and put the whole.thing in the fridge. We grilled up a nice piece of wild salmon and served it with the cold pasta salad. This was delicious and refreshing on a hot day.

This was phenomenal!!! Super easy and amazing flavors. I paired it with grilled salmon seasoned with avocado oil, lemon pepper, harissa, and oregano. The dill in the pasta was (in my opinion) not a traditional Mediterranean flavor, but it was different and SO GOOD!!! Also, dill pairs amazingly with salmon so this whole dinner was 🔥🔥🔥. Spanakopita Pasta is bursting with yummy Greek flavors- spinach, feta, lemon, + dill are the stars of this easy 20 minute recipe, made with eggs like carbonara!

Spanakopita Pasta (Spinach and Feta Pasta)

spaghetti (or any other pasta shape, regular

butter (divided)

green onions

spinach (or fresh- see notes)

eggs

feta cheese (crumbled)

dill (and/or other herbs,

juice and zest of one lemon ()

kosher salt

olive oil and extra herbs (for serving, optional)

Cook pasta according to directions in heavily salted water until one minute BEFORE it&#039;s al dente.

Meanwhile, melt two tablespoons of the butter in a large deep skillet or pot.

Add the three sliced green onions (white and green parts) and sauté over medium heat in the melted butter until softened (about 1 minute)

Add the frozen spinach to the skillet with the onions. Sauté until completely defrosted and most of the liquid has completely evaporated (about 3 minutes)

Meanwhile, in a small bowl, mix together the chopped fresh dill or other herbs (1/4 cup), the eggs (2), lemon zest, about half of the crumbled feta, and 1/4 teaspoon black pepper.

When the pasta has finished cooking to almost al dente, reserve 2 cups of the cooking water and add the pasta to the skillet with the spinach.

Continuing to cook over medium heat, add the feta, egg, and dill mixture to the skillet, as well as 1/2 cup of the pasta water. Stir to coat, and continue stirring, until the egg has cooked and covered every part of the pasta. If the sauce seems too thick or the pasta seems too dry, add it more pasta water 1/4 cup at a time (you&#039;ll probably need about 1 cup pasta water total). The pasta will finish cooking in this liquid and the sauce will thicken up- this will likely take about 3-5 minutes.

When the sauce has thickened and the pasta has completely finished cooking, turn off the heat and stir in the remaining two tablespoons of butter and the lemon juice until butter has melted. Top with remaining crumbled feta, extra fresh dill, olive oil, and season to taste.

Greek Pasta with Honey Glazed Feta

olive oil (for cooking)

oz pasta (I used tagliatelle)

shallots (or 1/2 of a red onion) (diced)

garlic (crushed)

kalamata olives (green olives are fine too)

artichokes

oz cherry or baby plum tomatoes (halved)

vegetable stock

heavy (double) cream

lemon (zested)

herbs

oz block of feta

tbsp honey

olive oil (for drizzling)

Preheat the oven to 180C / 360F. Ensure that all of your pasta ingredients are gathered and measured before you get the feta cooking - this ensures that the feta is ready around the same time as the pasta and neither sits out for too long.

Prepare the feta. Cut once widthways and again lengthways to make four slices. Place these in a lightly oiled baking tray and drizzle with the olive oil and honey. Add salt and pepper to taste and then place in the oven for 20 minutes. We&#39;ll use this 20 minutes to prepare the pasta.

In a large saute pan, heat a glug of the oil that you drained off the artichokes (or just use olive oil if your artichokes weren&#39;t stored in oil). Add the red onion and cook until slightly softened, then add the garlic and cook for a few more moments until fragrant.

Add the olives and the artichokes to the pan, saute for another minute to get them warmed through.

Add the vegetable stock to the pan. Bring to a simmer.

Add the cream and stir until it&#39;s mixed through and warmed, but don&#39;t allow it to boil (we don&#39;t want the cream to split)

Add the lemon zest and cherry tomatoes to the pan, then cover and allow the sauce to sit while you cook the pasta. The sauce will feel a little runny, but don&#39;t worry - once we add the pasta it will thicken up.

Prepare the pasta according to package instructions, then drain and add to the pan with the sauce. Add the herbs. Toss through until the pasta is well incorporated into the sauce.

Remove the feta from the oven. It should be golden on top, and browned around the sides. Use a spatula to carefully remove each slice and use it to top the pasta.

Squeeze lemon juice over the pasta and serve.

Salt and pepper (to taste)

Fill a large stockpot with water and bring to a boil over HIGH heat. Salt the water with about a tablespoon of salt. Add pasta and cook until just al dente (according to package instructions).

Drain pasta and toss with a light drizzle of olive oil. Set aside to cool slightly.

While pasta is cooling, chop tomatoes, cucumber, and red onion. Set aside in a large mixing bowl and add capers to the bowl.

Add dressing ingredients, except for olive oil, to a bowl and whisk to combine. While whisking, slowly pour in the olive oil, and continue whisking until completely combined. Taste and adjust salt and pepper accordingly.

Add the cooked pasta and crumbled feta cheese to the large bowl with the vegetables. Pour dressing over the top and toss to combine.

Cover bowl with plastic wrap and refrigerate for several hours, up to 2 days.

Serve cold or at room temperature, and enjoy!

Yes,  I made this wonderful salad and it was just delicious! I took it to the Hollywood Bowl in L.A. to a "Sound of Music", sing-a-long that was packed (Holds 17,000+ people)...Sounded Hokey, but it was so much fun and we all brought food! People Loved it! It made a lot and I brought some home and it was even better the day after! Absolutely delicious, and really pretty! I hadn't had to bring something to a "potluck" for years, but this was a big hit!
