This Cheesy Green Chile Cornbread takes everyday cornbread to the next level with sharp Cheddar cheese, and roasted green chiles!

Cheesy Green Chile Cornbread

oil ((mild flavored

white cornmeal (fine ground)

butter (melted)

sour cream

baking powder

salt

milk

kernel corn (frozen, fresh or canned)

extra sharp cheese (grated)

green chiles (lightly drained)

Put two tablespoons of cooking oil in a 10-inch cast iron skillet. Put the skillet in the oven and turn the oven on to preheat to 400.

Add all ingredients to a large mixing bowl. Stir together until thoroughly combined.

When oven has reached 400 degrees, carefully remove the pan from the oven and quickly pour the cornbread mixture into the hot oil. Return the pan immediately to the oven.

Bake for 30 minutes or until the top is golden brown.

Slow-Cooker Black-Eyed Peas

Place peas in large saucepan. Add enough water to cover by 3 inches. Bring to boil; simmer on medium-low heat 2 min. Remove from heat. Let stand, covered, 1 hour.

Cook and stir carrots, onions and bacon in skillet on medium heat 8 min. or until onions are crisp-tender. Meanwhile, bring broth, tomatoes and water to boil in saucepan.

Drain peas; place in slow cooker. Add cooked vegetables, broth mixture, ham and cumin; stir. Cover with lid; cook on LOW 5 to 6 hours (or on HIGH 2-1/2 to 3 hours).

Stir in greens. Cook, covered, 30 min. or just until greens are tender. Serve with rice.

Preheat oven to 375º.

Fry bacon in skillet until crisp.

Drain on paper towels.

Break bacon up into small pieces.

Set aside.

Meanwhile, pour the bacon drippings from frying the bacon into a cast iron skillet or 9x13” baking dish.

Mix cornbread per the directions on the box.

Combine cornbread mix, egg, half-and-half (or milk) and melted butter and stir to combine.

Add all the other ingredients and stir again to combine.

Pour cornbread batter into cast iron skillet with bacon drippings.

Bake at 375º for 30 minutes or until a toothpick inserted in center comes out clean.

White rice is combined with lots of shredded cheese, sour cream and diced green chilies in this Tex-Mex side dish the whole family will love.

Cheesy Green Chili Rice

Monterrey Jack or pepper jack cheese

Preheat oven to 350 degrees. In a large bowl, combine rice and remaining ingredients, reserving 1 cup of the cheddar cheese for topping.

Transfer the rice mixture to a greased 2 quart baking dish. Cover and bake for 25-30 minutes or until heated through. Remove from oven and sprinkle with the reserved cup of cheddar cheese.

Place under the broiler for about 2 minutes, or until cheese is melted and bubbly. Garnish with additional chopped cilantro, if desired.
